We a total of 4 cocktails, some on the safer side some on the riskier side and they were all so composed and well balanced. We went for the more spirit forward ones and the spirits stood out while maintaining an excellent level of funkiness or playfulness. How they did it, idk but I'll be coming back. Sushi: Get! Liberty is quickly becoming one of my favorite neighborhood spots. It's quite popular, with limited seating, so I would recommend this as a solo spot or date spot unless you happen to get lucky with your timing. I did come with a group of six once and manage to get seated within ten minutes, so, your mileage may vary. Here's how I would describe Liberty: hey have impressively good sushi for being a cocktail bar, and impressively good cocktails for being a sushi bar. Turns out, they just do both really well, and you kind of can't miss. Their classic cocktails, like their old fashioneds and whiskey sours are very solid. But don't just stick to those and miss out on their original creations, like the Daphne (perfect for martini lovers who want just a little more funk) and the Rhude-barb (just writing about it is making me want to get one right now). I truly have to give my props to the cocktail program here. Their sushi may not be "classic", but it's good and fun and very satisfying. Favorites include the firecracker roll and the crunchy scallop roll. The fishface is a nice one, too. I'd consider two rolls enough for a meal for one person, unless you're coming during happy hour in which case the rolls are definitely smaller. You should, by the way, come for happy hour, during which the Karuta roll is a lovely snack -- and vegetarian friendly, too. For being a pretty cool and popular spot, Liberty is refreshingly unpretentious, and everyone who works here is incredibly friendly and welcoming. Hidden gem alert! The sushi is incredible here. The cost is so reasonable. This dive bar is amazing for so many reasons, (check out the bathroom.) I came here with my dad and my partner. I was here last almost 12 years ago and still remember the drink. The lovely bartender worked hard to find the ingredients and recreated it for me. We had a great time, and will be back!! read more

Went here for a drink that turned into 3 drinks and a sushi after a long day. The drinks are just amazing refreshing and well make plus the server also the bartender is a just friendly and funny and simply wonderful person. Just love her...the place is small but felt relax upon sitting down and all the worrying and stresses just melted away. As for food wise, they have sushi, it's just aok but great, not that bad, just aok...but go well with drinks for sure. Will definitely be back, especially for the great services. read more

When I lived here 15 years ago, I gave this 2 stars. Then iguess i forgot my review bc i came back. It's improved. A lot. First, the drinks. Honestly outstanding, as good as I've had anywhere else in Seattle at a much friendlier price point than other Cap Hill cocktail specialists. One thing that's different is that they've started to really use house infusions and syrups more strongly. They also have bent the menu more towards savory and weird flavors. Sushi remains pretty good. Not cheap at $15-20 per roll, but I enjoyed most of mine and the salmon in my Nigiri set was outstanding. I do want to emphasize "not cheap", I walked out with a 3 figure tab, though I did have 3 drinks and 3 rolls, I.e. I was not shy. It's a lot cheaper during happy hour of course. I do think my prior advice about "sit at the bar" is valid, I got good advice from the people who designed the current menu and I think that steered me to better drinks. read more

We went hear and really wanted to let them shoot their shot with good cocktails. We love great cocktails and a server recommended coming here for amaros and innovative drinks. For 3 people, we tried 3 different cocktails as well as one shrub drink. All of them were entirely undrinkable, candidly 2/10 or less. We got an aged Black Manhattan that was...maybe a 4-5/10. But they claimed it to be aged and it had zero of those flavors. All of them were priced were like high-end cocktails. We also got the Miso Old-Fashioned. Completely undrinkable. There was a seaweed garnish and we really wanted to look it, but it was so yucky and briney. This is so emblematic of dining you often find in Seattle; lots of cool recipes, interesting ingredients, but TERRIBLE execution. read more

Liberty blew my mind from start to finish. It's very cozy and the staff always has great energy, adding to the experience. When the drink I ordered hit the table I was awestruck by the presentation and even more impressed by the taste. The drinks are well worth the cost and are balanced. Been coming here more frequently because my friend from Singapore just couldn't get enough of it. Liberty is a bar. And it serves sushi. But it's a bar. But it also does sushi. Who thought of this? And why is the sushi so good? How does this make any sense? I don't know, but it's here and it's good. Service is very friendly, but I got to say, this place isn't very much made to have dinner in really. It's more bar than restaurant with the vibe and aesthetics. But my friends and I still dine here and not really drink as much as we eat. I mean drinks aren't bad here, we just like to eat more. But yeah, tables aren't really meant to be dining with a group. This is definitely more of a place to chill with friends to grab a few drinks and have maybe one or two items of food. Not a whole dinner group like I did with my friends. Table was way too full. I'd give it 3.5 but rounding up to 4. The name doesn't suggest it, but this is actually an upscale American sushi restaurant/cocktail bar. It's decent, but not cheap. The rolls are around $15 and are quite small - I could probably have eaten 5 rolls by myself, maybe more. The flavors were good and everything was presented nicely, but I didn't think it was so special to be worth how expensive it was. Drinkwise, I think people mostly come here for the cocktails, although they do have some beer and wine as well. A friend brought me here to belatedly celebrate my birthday. It was a weeknight and we made it in time for happy hour (M-F til 5; weekend from 3-5). I had a Lady Buzz (Vodka, lemon juice, honey, muddled basil, sparkling wine) which was really refreshing on what was a rather warm afternoon. It felt like just the thing after our little walk up from the light rail station. I also had the Carlos Enrique (Tequila, mango purée, lemon juice, honey, house-made jalapeño tincture) which had some nice heat to it. The bar is cozy and is set up to accommodate groups on their leather sofas or dates at their more intimate two-tops. It does not feel like a place you would order sushi from, but they have really great rolls that are fresh and delicious. I had the Karuta roll (Shiitake, Asparagus, Onion mix, and Fried Garlic) and the daily special which I believe was tuna, jalapeno, and cabbage. I'd gladly order either of these again. Our servers were both really nice and gave good recommendations, both for their own menu and for other places to check out in the area. Looking forward to returning. read more

As evening comes on Liberty hits its stride as a craft cocktail bar with sushi and sashimi as food options. You can see the depth of hard spirits by looking at the bar back-wall. The house cocktail list is well put together and the bartenders can easily custom craft something based on your likes. The bar, close to where the sushi is put together, is your best bet if you're new to this place. The bartender will have a clear idea of what direction you want to go and you can ask the chef personally for sushi or sashimi recommendations. The fish and shellfish are limited but if you give him free reign you might be pleasantly surprised. Liberty is a nice co-op business driven by the interests of the employees who directly benefit from making you happy. It was a little hard to find but worth the effort to come here. read more

Let me tell you, Liberty is the best of Seattle. This is a great spot to check out if you're visiting from out of town. Liberty is a cozy cocktail bar serving up unique sushi rolls in what would appear to be a dank and dreary dive (oh-so-Seattle). There's a variety of seating options: large booths by the windows big enough for a group, intimate high tops for two, or several seats at the rail, where you can chat with the friendly bartenders and watch them prepare one of their taaasty cocktails. The Torri roll was delicious. The Liberty roll was light and refreshing... one of the more unique sushi rolls I've had. Decent happy hour. It has been 12 years since my last review. 10 years ago I held my 50th birthday party here in the back room and the staff was excellent. They prepared a big bowl of punch for my guests, let us bring in a cake without an up charge and of course served up sushi. During the pandemic, we came by for a few drinks - - take away - - and still just as good. Last night we went and we're fortunate to have just missed the big rush. But we had excellent drinks and a bit of sushi that was fine. I tried to move away from my standard black walnut old-fashioned, but couldn't resist and it did not fail to deliver. The couches at the front may not be for everyone but they are certainly conducive to a small gathering of friends. Service can be slow, but it is friendly and fast where it counts (cleanup, setting the table, water, and prompt delivery of drinks after preparation). After all these years, I realized they call "inari zushi" "inari nigiri" here. and here I was thinking I was ordering off the menu and complicating things. But it is my favorite thing for drinking, and needless to say, they get better as the night goes on. read more

Strong, but tasted off? Might be the cheap vodka.
