Been coming here more frequently because my friend from Singapore just couldn't get enough of it. Liberty is a bar. And it serves sushi. But it's a bar. But it also does sushi. Who thought of this? And why is the sushi so good? How does this make any sense? I don't know, but it's here and it's good. Service is very friendly, but I got to say, this place isn't very much made to have dinner in really. It's more bar than restaurant with the vibe and aesthetics. But my friends and I still dine here and not really drink as much as we eat. I mean drinks aren't bad here, we just like to eat more. But yeah, tables aren't really meant to be dining with a group. This is definitely more of a place to chill with friends to grab a few drinks and have maybe one or two items of food. Not a whole dinner group like I did with my friends. Table was way too full. Somehow we made it work surprisingly. So yeah, sushi was good. I didn't really get a drink myself this time, but I'm pretty sure alcohol still works just fine.

Absolutely delicious food and drinks! Service was fast and super friendly. Had the yellowtail nigiri and fish face roll, both delicious. Would have loved to see some tempura rolls also

Food - the sushi was really good! The drinks were also tasty too. I would definitely come back for the sushi and the vegetarian selection was very good. We had the kendo, California, and Seattle rolls and liked them a lot. Very fresh and tasty! Service - the service was very kind and speedy. They also had helpful suggestions and thoughtful responses to our questions about menu options. Ambiance - it's a small and quirky bar. It was cozy and later in the evening they turned the lights down and it had a nice atmosphere. Definitely great for dates or small gatherings of friends.

I had been wanting to try this place for so long. It looked like a dive bar in capitol hill. But I was disappointed. The place has good vibe but the food and drinks were terrible and not worth the price. We ordered sushi on the menu and it was staler than QFC sushi. We ordered some drinks and they all were same taste. Yes the service was great and pretty fast. And definitely they have ample amount of seating even on Saturday evening.

A friend brought me here to belatedly celebrate my birthday. It was a weeknight and we made it in time for happy hour (M-F til 5; weekend from 3-5). I had a Lady Buzz (Vodka, lemon juice, honey, muddled basil, sparkling wine) which was really refreshing on what was a rather warm afternoon. It felt like just the thing after our little walk up from the light rail station. I also had the Carlos Enrique (Tequila, mango purée, lemon juice, honey, house-made jalapeño tincture) which had some nice heat to it. The bar is cozy and is set up to accommodate groups on their leather sofas or dates at their more intimate two-tops. It does not feel like a place you would order sushi from, but they have really great rolls that are fresh and delicious. I had the Karuta roll (Shiitake, Asparagus, Onion mix, and Fried Garlic) and the daily special which I believe was tuna, jalapeno, and cabbage. I'd gladly order either of these again. Our servers were both really nice and gave good recommendations, both for their own menu and for other places to check out in the area. Looking forward to returning.

Came here on a Friday night! Cozy spot in Capitol Hill serving lovely craft cocktails and sushi. The sushi bar is perched at the end of the cocktail bar - such a pleasant surprise being able to order sushi with my socktails! Drinks: -Carlos Enrique ($15): subbed tequila with mezcal, this was STRONG but got better as it diluted -Seasonal Paloma: Nice, light, fruity summer drink Sushi: -Sonic Boom Scallops ($10): Small but delicious and fresh -Rainbow ($16): So goooood! Loved the variety of fish on top Bartenders were all very friendly :) They will Pretty much make you any drink you want!

Chef's Choice: pick a price range. This roll has spicy tuna tartare, toro, yuzu aioli, ikura, jalapeno.

Capitol Hill, Seattle. June 2022 A comfortable neighborhood type of bar. It's steps from a green tree filled neighborhood on Capitol Hill, across the street from a Walgreen's. During the day it leans towards coffee w free wifi and a work from home atmosphere that changes as happy hour approaches. As evening comes on Liberty hits its stride as a craft cocktail bar with sushi and sashimi as food options. You can see the depth of hard spirits by looking at the bar back-wall. The house cocktail list is well put together and the bartenders can easily custom craft something based on your likes. The bar, close to where the sushi is put together, is your best bet if you're new to this place. The bartender will have a clear idea of what direction you want to go and you can ask the chef personally for sushi or sashimi recommendations. The fish and shellfish are limited but if you give him free reign you might be pleasantly surprised. Liberty is a nice co-op business driven by the interests of the employees who directly benefit from making you happy. It was a little hard to find but worth the effort to come here.

Let me tell you, Liberty is the best of Seattle. This is a great spot to check out if you're visiting from out of town. Liberty is a cozy cocktail bar serving up unique sushi rolls in what would appear to be a dank and dreary dive (oh-so-Seattle). There's a variety of seating options: large booths by the windows big enough for a group, intimate high tops for two, or several seats at the rail, where you can chat with the friendly bartenders and watch them prepare one of their taaasty cocktails. The Torri roll was delicious. The Liberty roll was light and refreshing... one of the more unique sushi rolls I've had. Decent happy hour. They have simple rolls but splurge on the sushi and get something fun. You won't regret it.

Great sushi, drinks and dog friendly too! Oh and the Ube Thurman cocktail was as delectable as it was pretty. The Ube is in the foam. Ambience is gritty posh and the music can be appreciated by anyone. Perfect for 1st date or 151st date.

I could hear the table next to us ordered the exact same appetizer as we did 10-15 mins after we did and a new server who must had just clocked in brings them the order literally within 2-3 mins later and the male commented, "oh that was fast" and I thought to myself they got our order. Another 10-15 mins go by and I had to ask "do you know how long our order will take to which she seemed to get annoyed. It could have my energy because by that time I was annoyed. I'm not sure what happened to our original server but he must have gotten off. About 5-10 mins goes by and here it comes. That confirmed the table next to us got our order because of how long it took. They never apologized for their mistake. Doing all that time they never came back to see if we would like another drink. I had to flag someone down. The clincher was we got our bill and there was 22% service charge. That was on me because if I would have seen it I might not have gone. I'm not a fan of automatically charging a service charge. I'm a great tipper but it must be earned. By than I was really annoyed and thought to have a conversation with the manager but let it go. I would not go back. The craft cocktails are spendy but I had no problem with that because they're creative and they earned it by being creative. But the energy and the environment wasn't like the other speak easy bars I visited. It was boring and to top it off the service charge of 22% and the service that came with it sealed it for me. When the city reopened in 2021, I was eating here almost every day; partly because of convenience, but mainly because the food and service never miss. I've hosted everything here: birthday celebrations, after-work hangs, and dinners with friends and colleagues. Every single time, it's a hit. People walk in, fall in love with the vibe, and walk out talking about the food. The consistency is unreal. They even order food to go. The flavors? Roquette was a surprisingly small space with a wonderful vibe serving up "destination" bar-worthy cocktails. It reminded me of some of the neighborhood gem cocktail bars that I'd frequented on the East Coast. I grabbed a seat at the bar. Roquette's lineup of cocktails were varied in flavor profile using a wide range of spirits. They also served non-alcoholic offerings which looked equally intriguing as their boozy selections. I started off with the 99 Problems ($28), which, unfortunately, I forgot to note what was in the drink. It was boozy, clever, inventive, and most importantly delicious. My second drink was the Imperium Old Fashioned ($24) made with Westland Whiskey "Roquette" Barrel, Clement Cask Strength Rhum, Old Delicious Apple Brandy, Pineapple, and Spice. It was an excellent, boozy, balanced update to the classic Old Fashioned. Although I went with drinks off their menu, I have no doubt that any of their skilled bar professionals could've crafted me a wonderful cocktail if I had simply requested a classic or something on the fly based on my choice of spirit and desired flavor profile. Yes, the prices on the two drinks I ordered were pretty steep, but they were comparable to prices I've paid in Las Vegas. Plus, I don't have a problem with paying a premium for a well-made cocktail made with premium ingredients in a comfortable, welcoming setting (the drunken guy next to me who tried to engage with me in a political discussion excluded). Bottom-line: Roquette was a revelation. It served up two of the best cocktails that I've had this year. I can't recommend it enough and it'll be at the top of my list of places to hit the next time I'm in town.
