This is a cold dish and would have been more enjoyable if the pears had been peeled. The bread they serve with the starter was wonderful. For mains (Plats), we ordered: More wine - again, I didn't make notes on these but they were great! Me: Cordon bleu de volaille, comté & jambon Prince de Paris avec Épinards 30,00€. This was very good & different than any other chicken cordon bleu I have had. I highly recommend this. My husband: Daube de boeuf à la Provençale avec Purée de pommes de terre. Thus was EXCELLENT! The beef was so tender- melted in your mouth. There wasn't any bit of gristle, etc. the sauce was delicious and just the right proportion for the potato puree and meat. I've been wanting to return but can't get another early reservation They have 2 dinner seatings: 7/7:30 & 10:00/10:45. I just can't eat at 10:45. Habile is a lovely restaurant, casual but quite upscale, serving possibly the richest fare I've ever consumed. One of us loved it, declaring it his favorite meal of our entire vacation. Over wine two of us shared "Hard Boiled Eggs with Mayonnaise, 2024 World Championship Finalist" (€10). Not one to pass up an almost-award-winning offering, I indulged in 2 of the 3 egg halves presented. As somewhat of a deviled egg maven myself, I prefer them cut with mustard rather than doubling down on mayo; these were good, though decadent beyond belief. And then we indulged further. "Pork and Duck Foie Gras 'Pâté en Croûte', Hazelnut crust, onion condiment" (€22), was a gorgeous mosaic of ingredients inside a golden crust. Quite fabulous and mostly gobbled up by my better half who was now on a roll. He declared his entree, "Lasagna with Endives and Ham, 'Jambon de Paris', and nutmeg Bechamel" (€26) the best lasagna he'd ever had. I took a bite and thought it time for a cholesterol check. My trout (€32) was served with candied shallots and Jerusalem artichoke puree. It was a gorgeous plate of food which I had to push away when half-finished. With all that came before I simply had no more capacity. Despite a meal that sounds like I'd dined with royalty, Habile is a vey modern, serene, quiet and cool place. The tartare however was great -steak, cut and not meat ground into hamburger. It came with a small salad, fries and mustard. My colleagues had the rack of lamb, duck breast and scallops...everyone cleared their plates. Food is served from another floor and passed to the service staff via a dumb waiter, which is pretty interesting. For the four of us, including two badoit, coffee for all and two dessert samplers the bill was $159 euro. Table d'hote menu is not available on weekends and they do not take American Express.
