Beyond Kitchen first crossed my radar since I volunteer with a group that helps organizations that support individuals with special needs. That's the demographic they hire from. The next meal for our organization was cooked by them since they can do catering-style trays. Since then, we've ordered from them several times. My go-to is the burger lunch special, which comes with fries or hips and a drink. At $15, it's a bit pricier than I'd expect to pay elsewhere, but I appreciate both the fact that I know exactly what everyone's going to pay when we order from here, and that they provide work to people with intellectual disabilities. I switched things up and tried the sour cream chicken enchilada bowl this past week. It was two large enchiladas served in a heavy cream sauce, with chunk grilled chicken inside and topped with avocado and pico de gallo. I wouldn't have mistaken it for authentic Mexican (or even Tex Mex) enchiladas, but it was a nice upscale take on the dish. The food here falls in a category that I've found several places, but it's not a knock on any of them-- everything here is good, but nothing is the best you've ever had. There's a special appeal to this category in my mind, because I can take people to restaurants like this and they always have a good experience.

The assembly came with a bowl of hot water (I prefer it warm), plate of vegetables, a plate of meat with more carrots, few sheets of rice paper and a small bowl of fish sauce. First I wet the rice paper from the edge of that hot water bowl. Rotate on the edge for 2 turns. Then, place it on an empty plate. Now, I pack the right amount of lettuce, pickled carrots, cucumber and the protein. Roll it from the edge like a burrito. Dip it in the sauce. And Voila! Time to consume. It was healthy and more fun than those ready-made vermicelli bowls.
