Churro Old Fashioned
Matt C.

Laws is a very special place. They've been producing some of the state's finest whiskey for the last decade. From humble tasting room beginnings where they could only provide neat pours to a stunning whiskey sanctuary complete with an elegant and beautifully designed cocktail lounge, everything about this place is a home run. Laws is not only in the conversation for the best whiskey in Colorado, but also for the best cocktails in Denver. Upon my last visit, they had a churro old fashioned on special and it was glorious. The paper plane was just as delightful, one that was so excellent I may have chugged it a bit too quickly. When you visit take the time to do a tour of the facility. I personally feel like you'd be doing yourself a disservice if you don't, because learning about their grain to grass process is one to celebrated. As their tagline suggests, "there are no shortcuts" and in this day in age where everyone is looking for the quickest way from point A to point B, Laws does everything the correct way to achieve their signature whiskey. For me, their San Luis Valley Rye is my number one. However, all of their bourbons are stunners. I'm intrigued to try some newer expressions and experimental releases they've unveiled over the last year. To me, they can do no wrong. For the whiskey lover or the whiskey novice, Laws is towards the top of the list. Hands down, one of my favorite spots in Denver!

This has become one of our favorite go-tos in Denver (and not just because it has a parking lot just off Broadway!) :) Law's is just enough off the beaten path (around the corner off Broadway) that you might just walk by it and not notice, or just never turn down the side street. But this is a true hidden gem! Inside is super sleek and modern. There's a spiral concrete staircase taking you to the second floor where there's a rounded bar, couches & comfy chairs, and some high top tables. Music is not blaring. Lighting is moody. You also get a little bit of 2nd story views. Onto the drinks - everything I've had so far is amazing, and I'm not even a huge whiskey person. Their cocktails are blended very well though - if you don't love whiskey, I still recommend giving it a shot. I can't remember the most recent seasonal drink I had there but it was so good - it had sage in it which blended out the fruity flavors so well. All the waitstaff have been very friendly and are great at giving cocktail suggestions based on your tastes.

When they refer to themselves as a Sanctuary, they aren't kidding! Came by to taste some whiskeys and have a cocktail with my husband and baby on a sunny summer Sunday afternoon and had a fantastic time. It's worth noting that kiddos are only allowed in before 6pm. The space is just gorgeous. Beautiful staircase upon entering (but don't worry, they have a nice elevator to get those like us with strollers upstairs easily) and the upstairs lounge area is equally stunning. Ample stools at the bar, plenty of high tops and tons of cozy couches and armchairs. Plus room for us to park the stroller! Gorgeous artwork as well. We went with a tasting flight of their ryes - and took a bottle of the San Luis Valley Straight Rye home (though they were all delicious). For cocktails, my husband is a classic Old Fashioned kinda guy and he was very happy with his choice. I opted for the special old fashioned which was inspired by churros and very yummy; would absolutely get again! On the whole, top marks for Laws. Really looking forward to returning :)

Laws Whiskey was awesome! I attended a private event so obviously my experience was a little different than the average joe, but I can still speak to the wonderful service and quality of the whiskey. As an avid whiskey lover and a fellow service worker in the distillery world, I have so much respect for Laws process. From the four grains they use in many of their spirits, to the open valve system so you can actually see the process with your own eyes, I was very impressed. The tour was informative and engaging, and I learned a lot! I ended up leaving with a bottle of their plum brandy and a nice buzz after two delicious craft cocktails and some tasters. Although the drinks weren't super spirit forward, the intricacies of their flavor profiles surely made up for it. Thanks for a great night! I will be back.

Welcoming feel... for novice whiskey drinkers and connoisseurs alike! Service oriented and friendly staff. The Whiskey lounge is located abive a beautiful spiral staircase and has a warm and inviting feel with a social vibe and views of the Rockies. Great for a girls night or after work socializing... or before a night on the town. There are plenty of whiskey flights to try... but my favorites are the cocktails. The ild fashion is delightful and smooth. But, the black manhattan, with notes of cherry is now a fav of mine! The whiskey church is the first stop of the distillery tour and adds great detail to the story of Laws Whiskey. Knowing the heart makes the whiskey taste better! The staff are excellent at helping folks make a whiskey bottle choice based in likes and dislikes... I'd go back for sure for an evening of fun!

Beyond personable staff.... Stopped in last night at cocktail lounge, and returned today for a distillery tour and finish off with a few pours and cocktails. The vibes ...outstanding! If you're a whiskey/bourbon drinker you MUST stop in! BTW Thank you Robin for an I formative tour. We will return to enjoy the vibes soon!

Great place to grab some excellent cocktails with a view! Laws newer place really shines and delivers some of the best bourbon. I had a meat cone (speck and truffle cheese) and I saw on the menu they offer other meats/cheeses/olives combinations. They offer tours which are informative and a great way to see the whole operation. Great space with lots of comfortable seating options. I'll be back!-)

Picked up some of their agave spirits (which are awesome!). Their regular whiskey stacks up against the best. And, if you like variety and unique finishes, try their excellent Calvados or Madeira. The tour can't be beat, either. Schedule one for a small group of friends!

This place is so chill. Going from Stranahan's to this place was a definite gear shift but I loved the smaller environment, got to talk to other locals, the tasting was incredibly reasonably-priced and the Rye was incredible. Bartender was super kind, knowledgeable, and enjoyable to talk to! I am very glad we made the trip over to this, sorta, hole-in-the-wall place in an industrial area - well worth the trip. Do more than one flight - they .5 oz pours so you can really sample a LOT!

Top shelf whiskey here - at this Colorado distillery soon to celebrate their 12th year. The tour is awesome! Highly recommend. It goes deep into how they operate their distillery. Our tour guide, Crystal, was phenomenal. She knows her whiskey, bourbon and rye.

A fun visit. We took the private tour. Laws tries many different mashbills and finishes. We like some expressions very much. We were able to taste everything we wanted, allowing us to be confident in our purchase decisions. The distillery is building a large addition.

I looked online and found that they were hosting an all Vinyl 80's dance party with no cover charge on Saturday night... how cool is that!! So, we took a rideshare from Downtown to The Delorean. I am not familiar with that area of town, but there looked to be several bars and restaurants nearby. Anyway, upon entering, we were immediately greeted with a library of cassette tapes. Then, we wandered further to see lots of neon lights and neon carpeting, cases of nostalgia featuring various toys and games from the 80's, as well as lot's of music posters. The cocktail menu was super cool, with drinks named after 80's songs and movies. There was a fun little photo booth in back. I ordered a Pretty in Pink cocktail, which featured jasmine and rose gin with champagne and elderflower liquor with a huge champagne bubble. My friend ordered the She-Ra Colada because it came it a really cute Tiki cup. I think she enjoyed it because she ordered a second. That night, there was an Ape (yes a man in an ape suit) playing 80's vinyl all night. Also, he was giving away records. If you enjoyed a song, you could ask and he would give you the record after it finished playing. I brought home a single by the Klymaxx (Meeting in the Ladies' Room). My friend and I had an absolute blast. We danced the night away and made 80's music-loving friends who we shared stories with about various 80's bands. A server wearing Strawberry Shortcake served us drinks at our table all night. The only bummer is that the dance night went from 9- midnight. After the Ape DJ left, the music was a bit on the quiet side, so we left rather than staying to dance, as the dance party had ended and it was still early. All in all, though I was disappointed, as I wanted to dance until 2AM, The Delorean was still one of my absolute favorite experiences during my Denver weekend stay.

We walked in without reservations and managed to grab one of the last open tables, so I'd definitely recommend booking ahead. The space has a great atmosphere with low lighting, candles on the tables, and that lively dinner buzz that makes a restaurant feel exciting without being overwhelming. Our server, who I think may have also been a manager, was fantastic and brought such a fun energy to the experience. The house focaccia immediately changed my opinion of the place. Honestly the best focaccia I've ever had. Perfectly crisp on the outside, soft inside, salty, flavorful, and good enough to eat completely on its own. The spring greens were light and fresh, and both pasta dishes were excellent with perfectly al dente pasta and great seasoning. I ordered the chimaera alla vodka, but my friend's no waste gnocchi ended up being my favorite bite of the night. We finished with lattes and tiramisu, and somehow the meal kept getting better. The coffee was genuinely better than what you get at a lot of coffee shops, and the tiramisu was light, balanced, and not overly sweet or soggy like it sometimes can be. I'm already looking forward to going back and trying more of the menu.

It was around 8 on a Friday night. The service was just what my friend's dad needed, joking around in Spanish and answering random questions that an older person might have when seeing food they grew up with and hadn't seen in a while... and, then, the food. I'm not familiar with Colombian cuisine, so I wanted to try something traditional. The presentation was sizable and I really like color on a plate. Then, it was flavorful and filling?! YUM.
