At first, walking down the alley in downtown Bend, I honestly was not sure what we were about to find. Then we started seeing little fire pit pods, heated huts, glowing candles, and people tucked away having cocktails. It instantly felt cool without trying too hard. Walking into San Simón felt like stepping into some funky speakeasy hidden in plain sight. Dark lighting, moody atmosphere, David Bowie playing in the background, wild artwork on the walls that makes you stop and stare for a second. Just a great vibe all around. The kind of place where you sit down and immediately relax into the evening. The cocktails were excellent. Not overdone, not syrupy, just really balanced and well made. One of our favorites was the "Some Positive Feedback," which came with this sugar rim that looked awesome and added just enough sweetness without overpowering the drink. Bright citrus flavor, refreshing, smooth, and dangerously easy to drink. Then we asked the bartender if they could just make us something off the cuff. We said vodka, lemon and lime forward, not too sweet, maybe a little spice. They absolutely nailed it. Crisp, refreshing, layered citrus flavor with just enough heat on the back end to keep it interesting. Honestly one of those cocktails where everybody at the table takes a sip and immediately goes, "Oh wow." As a bourbon guy, I was also pleasantly surprised with the whiskey selection. The bartender recommended Stafford's Reserve, an Oregon bourbon, and I am glad I listened. Smooth, approachable, a little sweet up front with some spice on the finish. Easy sipping bourbon that fit the whole vibe of the place perfectly. What really made the night though was the staff. Everybody was friendly in that genuine way where you feel welcomed instead of "served." By the end of the night it honestly felt like we had been there before, even though it was our first visit. The outdoor setup deserves some love too. Bend cooled down at night, but the fire pits and heaters kept everything comfortable. We could have easily stayed another couple hours just hanging out. Pricing felt fair for the quality of drinks and atmosphere. This is not a dive bar pretending to be fancy. It is a genuinely cool cocktail spot that knows exactly what it is. If you are in Bend and enjoy craft cocktails, bourbon, cool music, quirky atmosphere, and places with personality, go find San Simón. Half the fun is finding it tucked down the alley in the first place.

I don't condone whatever the man did that led to him being removed, and if he was causing problems, he absolutely should have been escorted out. But the guy was clearly intoxicated, and the amount of force being used seemed completely unnecessary. People around us were yelling that he couldn't breathe, and whether that was true or not, the whole situation was disturbing to watch. It honestly felt like we were watching someone get beaten up. I understand security has a difficult job, but this didn't seem professional. It completely ruined the night for all of us, and none of us feel comfortable coming back after what we saw. There are plenty of bars in Bend where you can have a good time without witnessing something like this, and we'd rather spend our money at those places instead. Go to Astros instead!

The service after the food came out is where everything takes a screeching halt. 2-3 bites into breakfast my coffee was empty. What looked like 2-3 hostess' just standing at the front door doing nothing, maybe the owner or manager standing behind the counter talking with the one customer, there was no awareness of the floor or intuition to maybe roam the floor with a water/coffee pot helping the servers with refills. It wasn't until my plate was clean, silverware sat at the 4oclock position and napkins on the plate and ready to pay that only the server noticed the empty cup sitting at the edge of the table. Booooooo... Will I return? Maybe, probably not. It was a great start that sputtered to a flavorless, coffee less experience. I do have 10+ years in restaurant/bar management experience so I'm not just sounding like an uppity douche. Just simple requests and expectations for a breakfast joint.

Okay, we order. 10 minutes later, they say sorry we are out of orange juice. We did not order orange juice. They say they do have chocolate milk, which we did order. Glass (like, adult glass) comes for my kid and the guy explains they are out of chocolate milk so they mixed cold milk with hot cocoa powder. Looks chunky. He apologizes and says he needs to go across the street to get orange juice and chocolate milk so we can wait if we want. We don't. We just want to eat and leave. I order iced coffee (on the menu), they only have canned cold brew. Not ideal but fine. Burger (something I could honestly make at home) comes with dry breakfast potatoes. The flattest pancakes I've ever seen, complete with black grease marks from the griddle. I appreciate that the patio was nice and there was a water bowl for our dog but there were so many rookie mistakes that it felt like a restaurant that just opened last week and we're working out kinks. I'm actually annoyed at the 5-star reviews because there's no way they are at the same place we did.

It was especially frustrating seeing so many empty tables while waiting. Once we were seated, the servers were also pretty slow and seemed a bit overwhelmed. Hopefully they can improve the seating and service process, because the place has potential. For now, though, I'd probably look elsewhere for a more efficient brunch experience.

Despite their rudeness, I left a 20% tip on each transaction. They continued to treat me rudely as the food was delivered and randomly gave the kids food from the different orders every time one of the buzzers went off. It was interesting that when my white husband went back to ask for more ketchup they were both extremely friendly and pleasant with him. Terrible, rude service aside, the food was also below average. I would absolutely not recommend the onion rings - at $8 they were comically thin and came with about 6 in the order. The burgers were dry, messy and the buns were hard and stale. The oreo shakes were milky and not fully blended with huge chunks of cookies (like the size of a quarter oreo) at the bottom that you had to try to fish out with the straw. I want the $50 in tips that I gave them back! How on earth do places like this still stay in business?! We would have gotten a better quality meal at any of the big fast food joints. Makes it hard to try to support local businesses in Redmond.
