They are thin and crispy and half the plate is pickled veggies and some jalapenos. The chicken skin is light and airy, fried crispy with some light seasoning. The kefir lime leaves give it a beautiful aroma and flavor. The sourness of the broth and the umami (probably from the fish/shrimp paste) is a gift that just won't stop giving. The chunks of catfish take this dish up several notches. The greens are also a great addition and they aren't your typical greens you will find in an American supermarket. These are Cambodian greens.
