    It was our last supper in Maine and our daughter wanted sushi. She had a bento box that she enjoyed. My wife and I had sashimi and sushi rolls. The salmon and hamachi sashimi were meaty and very fresh. The lobster roll stole the show. So good. The Ocean Roll was also very fresh.

    Came here with my sister when I was up visiting her and I have to say everything was exceptional. When we walked in we were immediately greeted by both our server and the sushi chefs. We sat and were given water as we looked over the menu. Our server came over and asked if we had any questions and we did. All our questions were answered and recommendations were given. We ordered the gyoza, bao buns, and cauliflower pop to start. Everything was amazing! For our entrees we had the shrimp tempura roll, yummy roll, beef bulgogi ramen, and my sister got a pork ramen again everything was tasty, fresh, and a good portion. All of their wonton wrappers and noodles are made homemade in house and they are incredible. Would highly recommended Jin to anyone.

    Trust me, I really want to like this place. I've tried their ramen on three different occasions, and now recently their sushi. The ramen is nothing to write to mom and dad about and certainly doesn't bring home the taste of Osaka, Japan, and New York where Chef Hwansoo studied. It also failed to reflect the art from his experience and time with Pai Men Miyake. Just bland and it's one of those dishes that your order if you're in Saco, you're craving Ramen, and close to "I don't care let me have it" Then few bites and slurps in, you're an already bummed and should have sucked it up and drive 20 minutes to Portland. Today I gave it my fourth shot. I finally tried their sushi. Boy howdy. I was legit disappointed in the presentation. Granted I ordered delivery. Delivery other than Pizza and Chinese always seems to fail presentation. I ordered the Miso soup, Maine roll, and Crunchy spicy tuna roll. Miso broth was right there, and probably the best out of the whole ordeal. Maine and crunchy spicy tuna roll arrived with eggs smashed, and rice on both rolls stuck to each other making each bit fall apart. Rice was also very out of place and not in a perfect roll. Overall, it was a hot mess of an unintended deconstructed roll. So I ended up looking very forward to this meal coming from a spot where Chef Hwansoo takes great pride in his background, was nothing but being led on by another designer portfolio where it looks great, but when you hire them, they weren't as advertised. Do better. Double-check your work. Hell. Even double-check your staff's work. You're in a great area where the food scene is blowing up in Biddeford. Be the first one in Saco to lead that. You apparently have the background, so step up.

    I ordered the dynamite roll and it was truly dynamite. Yummy! Fresh and beautiful presentation. Service was A+. Ambiance is simple, clean and comfortable. Five stars *****

    We have enjoyed several meals here. We've tried a variety of items and some have been better than others which is why I only rated them a 4. The pork buns are just okay. The spring rolls are decent. The Korean chicken is very good but be warned that mild is still very spicy! Where they really shine is their Ramen bowls. The waitstaff is always very friendly and prompt.

    When I visit Maine, I love to come to Jin sushi. Atmosphere is cozy, warm and clean. They give large portions and everything looks great for the eyes. We ordered nigiri special, rainbow, ocean roll, gyoza and Jin ramen. loved hearing that the owner makes the ramen noodles in house! Will definitely come back for both food and service!!

    Dumplings were decent. Chicken teriyaki was atrocious. The "chicken and veggies" were sitting in a pool of teriyaki water.

I was caught off guard since I've never been to a restaurant that turned people away. I'm assuming kids/babies aren't welcomed here? There were plenty of large tables available in the front where the host stand was. I could count 4 tables on my way in, 1 or 2 of them larger tables. We were open to the grill tops or regular tables but he didn't ask us. I guess if you have kids, save the hassle and dine elsewhere. We ended up at Highrollers for the evening.

We ordered the Chili Ramen (tonkotsu with chili oil on top) and the Shoyu Ramen, both with pork as the protein. The cook on the egg was great (nice and gooey in the center and the white was nice and soft) but it was a little cold and lacked flavor (could've been marinated for longer?). The pork was a nice cut of meat but despite being blowtorched it was a little chewy and lacked a bit of flavor also. The lack of marination on these toppings was helped by the fact that the broth was great and flavorful and if you ate them with the broth and noodles, it was satisfying! I think the broth was the best part; I tried both of them and enjoyed drinking the broth by itself even without eating the noodles with it. Overall, I thought the ramen was OK (the soup was the best part!) but for the price and portion I think this is a nice place to stop by for lunch! One of the biggest changes has been the complete turnover of the staff. All of the original people who made the place welcoming and enjoyable seem to be gone, and the difference has absolutely shown in both the service and overall experience. The food quality has become inconsistent and, at times, marginal compared to what originally brought us in. We've also dealt with repeated order mistakes, inattentive service, and an overall lack of attention to detail during several recent visits. Everyone understands that restaurants can have an off night, but this has become a pattern rather than an exception. What was especially disappointing was that we took the time to privately contact ownership about these concerns and never received any response at all. We weren't looking for compensation or special treatment, just acknowledgment and some indication that customer feedback mattered. Kume had a lot of promise when it first opened, which makes this frustrating to write. Unfortunately, based on our recent experiences, the quality control, consistency, and customer service are no longer close to where they once were.
