This is a nice tapas place. Kevin who is our server made our restaurant experience extra special. Kevin was extra nice and very attentive to our requests. My friend celebrated his birthday. We got sangria, a pitcher and it was more than enough for all 4 of us. We tried and enjoyed this.fried eggplant with honey. They dates also were extra delicious. Octopus was also good. You can taste the charred grilled from the octopus.

Chef José Andrés' Spanish tapas restaurant is an absolutely fabulous date night experience! From reception to wait staff, everyone is cheerful, enthusiastic, and on it. They make the place, without a doubt The food is elevated tapas, fancier than typically found across Iberia. The vibe is exactly right; tables near each other, the whole village enjoying food together. The Cono de Caviar has smoky Amar Osetra topped with gold leaf, a fabulous bite that celebrates the ingredients. The Cono de Atun lets the fish shine through. Winners, both. The Datiles - dates stuffed with almonds and wrapped in bacon - have texture and taste dancing together in your mouth. The Chorizo Casero features an olive oil potato puree and a cider reduction that brought me back to the streets of Barcelona. The Calamares Romana - deep-fried squid with an octopus ink aoili - is deeply satisfying and makes everyone's mouth black for a satisfying amount of time. It's hard to exhaust this deep menu, and we left all the dishes celebrating the native acorn-fed Iberian pigs to the next visit.

The evening was excellent we were able to get a lovely table for three on short notice. Since we were able to get right in. We had the Garlic Shrimp Tapas! They were quite delicious with just the right spicyness! They devein and take the heads off the shrimp! The ambience was really nice because you could sit and watch them prepare the Paella and people watch at the cosmopolitan! I really liked the decor. The Paella of the night was sausage, Shrimp and chicken. I also shared a glass of Sangria which was delicious! I would highly recommend Jaleo and can't wait to return!

OMG! My daughter, Muff decided to treat me to a Las Vegas trip for my birthday and we went to several restaurants that we've both been wanting to go to. Jaleo was one of the top restaurants that we wanted to go to and the restaurant exceeded our expectations. Jaleo is a beautifully appointed restaurant and the decor is amazing. Low-backed sofas were actually beautiful and comfortable and the way that Jaleo is decorated is in keeping with casual yet elevated Spanish tastes. And the wait staff service was stupendous. My daughter and I never had to ask for our table to be serviced; It just happened and the staff was extremely intuitive. And the food! I left the restaurant hoping and begging that Jose Andres would open a Jaleo in the Pittsburgh area. We had the Croquetas de Pollo, Croquetas de Jamon, Gambas al Ajillo, sangria and we had a black ink pasta dish (Rossejat Negra...or Not) that was superb. I can't wait to go back again to the Las Vegas Jaleo! Definitely worth the wait!

I needed some time to kill and it was almost dinner time when I found out Jaleo has something called 'Sangria Hour', which is their happy hour. It's daily at the bar from 5-7. I got there at about 6:40 and overall, it was a bit empty, and the bar was probably only about half full. I don't think a lot of people know about it because they don't advertise it. Even when I sat down and they gave me the menu, they didn't initially give me the Sangria Hour menu - I had to ask for it. Luckily, I still had enough time to order. I had: Patatas Bravas (fried potatoes with spicy tomato sauce and aioli) - these were a little basic. It could have used a bit more flavor - maybe more spicyness? Endibias Con Queso de Cabra y Naranjas (endives with goat cheese, oranges, almonds, roasted garlic dressing) - I normally don't like goat cheese but I really liked this. The oranges were refreshing, and I liked all the different flavors together Pan con Tomate (toasted bread with fresh tomato) and added Manchego cheese - can't go wrong with tomato bread! I probably could have eaten a few more of these They also have a few drink specials during Sangria Hour so next time if you're around during this time, check it out but just be sure to ask for the menu!

I made a reservation to celebrate our anniversary as we've dined at other Jose Andres restaurants around the country and they are always a great experience. This location was no different. The food, service, and atmosphere were on point. Situated in The Cosmopolitan near the infamous chandelier, it offers ample exterior seating and things to see/do if you show up a little early as we did. Kevin was our server who with a team of people ensured our evening was special. We were welcomed with congratulatory signage at the table and verbal recognition of our anniversary which got me some brownie points with my wife given the smile on her face. We tried the Patatas Bravas, Judias Romesco, Carne Piquillo, Chorizo Casero, and Pollo Ajillo. They were all delicious. These are smaller dishes that are shared at the table, not single person entrees so you have to account for food choices and number of people when ordering. Given that it was just my wife and I, it was pretty easy for us to pick and choose what we wanted to eat. My wife had a ginger beer which she seems to be enjoying more of these days given our fitness kick. I on the other hand had a margarita which I thought was good, but not great. I've had better for the cost and size which seemed to be overwhelmed with ice. I would likely stick with water or a non-alcoholic beverage in the future. To celebrate our anniversary, they brought us a dessert and champagne which we really didn't need but were very appreciative of the generous recognition. Overall, a $138 bill for two people which is a little steep but it was a wonderful memory.

First time trying Jaleo right on the third floor of the Cosmo and it was absolutely phenomenal! They have small plates to share and it's more of tapas and drinks. Service was great and reservations weren't needed on a Wednesday night at 7pm. Highly recommend to anyone! ^.^

Always a pleasure to visit any of Chef Jose Andres restaurants. The service/food and ambiance never disappoint. That chorizo has ruined me for life as I won't be able to eat any other sausage wout comparing to this one. It is a tapas place and each plate is enough for 2 pple to try. My husband and I ordered 4 dishes/2 sides and we were full enough. It was our anniversary and our server went above and beyond. Again. Always 5 star service every time we go to Jaleo anywhere. For our special anniversary dinner we received a comped toast except I don't drink alcohol so they made a special sparkly mocktail for me that was delicious. I just can't say enough good things about the service the food and the ambiance. It's not cheap but well worth the splurge!

Amazing food, fun shared plates and great vibes. Located upstairs in the Cosmopolitan Jaleo is a true gem. It is a little more casual thank your typical Vegas dinner. Our group did the tasting menu, omg wow!!! A few of the dishes that I thought I wouldn't like were actually some of my favorite (ex olive appetizers & I don't like olives). The tasting menu is 100% small portions, but don't be fooled it will fill you up. The staff was super knowledgeable about each course providing insight into each dish.

Came here for the Sangría hour that's daily 5-7pm. I came on a Saturday night around 6 and found a seat at the bar right away. Around 6:30 it got full though. We got the patatas bravas, cono de sobrasada, endibias con queso de cabra, Sangría de cava, but the real HH deal was they had was their special - a bottle of wine and cheese and meat board! This was a nice stop for the night and we had great service from our bartender JT as well :)

Lovely Spanish tapas restaurant at The Cosmopolitan! Came here specifically to eat Paella and called ahead of time to ensure that Paella Valenciana is available and it will be made with rabbit meat. Ambiance is modern, staff is friendly and menu is exhaustive. Bread and tomatoes were delicious. Spanish chorizo sausage and manchego cheese were good. Paella on the other side was a total disappointment. Expensive served in plate for one person for $80 is an insult. Considering this is the only reason I came here - I would consider my visit to be a total flop

If you can't fly to Iberia for their cuisine, you can find their elevated flavors at Jaleo, First of all, this is a large restaurant with indoor and outdoor seating. It's beautifully ambiance added to the experience with low lighting and hues of red. Our server, Kevin, was outstanding. He was personable, attentive, made excellent recommendations and wicked fast considering the number of guests he serviced. Every single thing we ordered was art on a plate. We were a party of 4 with a couple people having food allergies. There is something for everyone here. We savored every bite and ordered seconds of the eggplant and beef. Even the person who doesn't like eggplant - loved it. We're looking forward to coming back for the experience and we'll definitely request to be seated in Kevin's section. All the staff - from the hostess who seated us, the additional servers delivering our tapas, the bartender and the manager who visited to ask how our experience was top notch. Mahalo Jaleo - we made forever memories here.

This was my second time here... and honestly it wasn't as good as the first! The service is always nice, they are helpful and always willing to guide you through the menu. But the food fell short this time. The pork secreto was the only thing I enjoyed this time. The paella was just ok, nothing spectacular. The shrimps also weren't a stand out for me. The appetizers we had were only ok and you honestly can't go wrong with cured meats. I hope this was just a bad night because I was really hoping to make this a go to spot for me.

Is the cochinillo (baby pig) available on the menu next month, March 2026?

Yes it is! Please call us at 702.698.7950 to reserve it. We request a 72 hour notice.

Is it possible to order the flat iron steak (6 oz) with peppers and pepper sauce on the side? I have some medical reasons. Thanks!

Hi C.C. Yes, we can definitely accommodate you by putting the peppers and sauce on the side!

Is there a corkage fee, if so what is the price?

Hello! Our corkage fee is $50 per bottle, provided it is not currently on our wine list. Thank you.

How easy is it to get bar seats on a Saturday night around 6:30? Do we have the ability to order some or all of the food on your menu at the bar?

It depends on what is going on at the hotel. If there is a big conference, the bar can get jammed up. If none, then the bar is big enough to find a spot.

Do i have a choice as to what paella i can order on any night?

No. Each night they have one kind of Paella. As far as I know they don't always know too far ahead what it will be each day. It's different kinds on different night.

Sure, there's plenty of good food and drink on the Strip, but this place is 100% worth the short drive. We'd go back in a heartbeat.

We visited the location on Hughes, which was closer to the strip, but you still need a ride. The restaurant is large, like a Macaroni Grill, with lots of tables, plenty of two-tops. We tried not to compare it to the tiny tapas hole-in-the-wall places in Madrid and Barcelona. We had a reservation, but didn't need one on this Thursday at 6:30. We stood at the host stand for more than 5 minutes as there was no one there. When the hostess arrived, she sat us right next to another couple, you know where there are a bunch of two-tops against a wall with a long bench seat? It was odd, given that there were SO many other available tables. We ordered a pitcher of the red sangria, which was good. I don't know how many glasses there were, but more than two each. Maybe between two and three? Here's what we ordered (unfortunately, we had a bit of a late lunch so we weren't very hungry): Manchego and apple salad--I liked the ideas of the flavors together more than the result. It was fine, but my bites had too much cheese. May have just been the one we got. Bacon wrapped dates--these were really good! The bacon wasn't too fatty. A crisp almond inside. Yum! Camarones al ajillo--this was spectacular! Similar to garlic shrimp we had on a food tour in Madrid. Perfectly cooked shrimp with fried sliced bits of garlic in a garlic sauce. Dip the bread in it! You won't regret getting this dish! It's almost a reason to come here. Service was very fast! So fast that we were in and out in less than an hour. My conclusion--if this restaurant was down the street from my house, I'd frequent it with friends. I'm sure there's more to try that's really good and our appetite was part of the problem. But not worth the cab fare from the strip.

Some dinners are good. Some are memorable. And then there are the ones where you sit back halfway…read morethrough and realize you're having entirely too much fun. That was this. From the jump, everything just clicked. The pacing felt natural, nothing rushed, nothing forgotten. You could tell there was intention behind the experience, but it never felt forced or overly polished. Just... dialed in. As it was a bit of a slower early evening, chef/owner Justin came to check in several times to see how we were doing and provided explanations of the food and the idea behind each bite. This not just dinner...it was an experience. I went all in on the menu and I'm glad I did, because this kitchen is not playing around. There's a confidence here that shows up on every plate. But a few dishes absolutely ran the table. The foie gras is rich in the way you want it to be, but balanced enough that you don't feel weighed down after a few bites. The wagyu carpaccio is ridiculous, melts instantly and somehow still feels light. And the toro crudo... that one didn't stand a chance. Silky, clean, just enough citrus and heat to keep it interesting. It's the kind of dish where you finish it and immediately wish you hadn't shared. And then there's the ensalada de naranjas. I ordered it three times, which honestly says everything. It shouldn't be the dish you keep thinking about, but here we are. The frisée and fried kale bring texture, the manchego gives it that salty edge, the candied walnuts add just enough crunch. But the oranges are unreal. Sweet in a way that almost doesn't make sense, no bite, no bitterness, just pure citrus perfection. You can tell they're something special, not the kind of thing you find just anywhere. What I appreciated most is that nothing felt like filler. Seafood, meat, vegetables, every dish had a purpose and actually delivered. It's rare to go through that much of a menu and not find a weak spot, but they pulled it off. And the service matched the food. Attentive, sharp, and genuinely welcoming without hovering or making it feel like a performance. The kind of service that makes the whole night flow without you even noticing it. This is the kind of place you leave already planning your next visit, trying to decide if you reorder your favorites or pretend you have self control and try something new. Either way, it's awesome.

We made reservations just in case but arrived around 630, and we were the only ones. Restaurant is nicely decorated with a modern simplistic vibe, definitely welcoming. We decided on the premium menu, they explained the top 3 items were only a one time order and everything else was as much as we'd like. 3 orders per person and/or they'd basically give us a tasting menu of all the offerings. We thought perfect because we wanted to try everything anyways. The courses flowed nicely and we were rarely without a fresh plate or food in front of us. The staff was super polite and the chef came around at the end of dinner to talk and asked us how we liked the food. We reordered some our favorites, and left stuffed to the gills. We are all big eaters, and while it is smaller bites, there is plenty of options and chances to order. We left very content. They have a pretty good all you can drink option as well. If you plan on having more than 2 glasses of sangria, might as well get it as it's cheaper. We will definitely be back , some of ur favorites were: Foie gras of course The filet Iberico ham The grilled octopus

Goes well with the meat, cheese and olive oil. 3. Japanese Vaca wagyu 8oz; a must. Perfect amount of fat ; meat is tender nicely seasoned. Make sure medium rare. 4. Japanese Sangria. Plum wine flavored and tasty, loved it. 5. Seafood paella; like any paella it takes a while to prepare. Was not a fan of it. It was a bit bland and dry. But you can just a bit of salt to season it. 6. Beet salad; must have. Love the tender beets with who knows the sauce and dressing. Hints: 1.sit on the counter /bar to get the full experience. 2. I'm not sure how this place currently has a 4.6/5 rating. My experience was mediocre at best…read more Firstly, parking in this small plaza is a nightmare. So, give yourself ample time to play the parking lot vulture game. When you first walk in, be aware there's a dart board that people might be shooting darts at. This is definitely a safety concern if neither party is paying attention. There's not a host stand nor signage indicating if you should stand at the bar awkwardly or if you should seat yourself. So, we stood there for a couple of minutes waiting to be acknowledged. Seating is pretty limited, another thing to be aware of. There were 3 half booth/half table seats (high top) and only bar seats from what I could see. Maybe not the most ADA accessible spot. They were offering happy hour when we were there, which is neat since it was a Saturday at 7pm! They had some good options for drinks and food at $5 a pop. We looked at both the happy hour menu and regular menu. We each ordered a glass of Tempranillo wine. They had some solid options from Spain and elsewhere but not a lot of "by the glass" options. Pretty typical for a small establishment though. Sadly, the paella couldn't be served/prepared? The server stated they were out of some other items. Her wording led me to believe they just didn't have the operational capacity to make more than one paella dish at a time, which is disappointing. The food was mediocre. The octopus was definitely chewy, and seemed like sliced tako that should have been served as nigiri vs what you'd expect at a tapas spot. The bacon wrapped dates were way too big and the weird mini cleavers were not the greatest for trying to cut the food down with--they didn't have normal utensils nor napkins (just small bar napkins). I did like the pan con tomate. Honestly, this place was super disappointing--I started out with 3 stars but then realized through the course of writing this review, 3 was a reach and 2 was more appropriate. I don't think I'll come back here and especially not for a date. They have a LOT to improve on.

The food: the most expensive tasting menu was recommended, which had some very good elements, some okay and one which was unsatisfactory. The "noodle" take on paella (the primary dish) was okay ... a clever idea but lacked the bright flavors which are expected of paella. Disappointingly, an anchovy on toast was atop butter. It's the kind of lineup that genuinely makes you curious to try everything. However, while the potential for a 5-star experience is clearly there, the execution still feels like it's chasing that final "je ne sais quoi." The Highlights: Gambas al Ajillo: Absolutely fantastic. The prawns were expertly cooked, and the brown butter confit garlic provided a rich, perfect complement. Wagyu Burger: Once the kitchen nailed the temperature, this was top-notch. It's a standout dish when executed correctly. The Misses: Consistency: On the first visit, seasoning felt sparse across the board and the empanadas cried out for more sauce options. This time, the pendulum swung the other way with a slightly overcooked and oversalted scallop. Technical Execution: We had to send the burger back; it arrived medium-well despite a medium-rare request. The "Fries": The menu lists truffle fries, but what arrived were essentially homemade chips. While tasty, they don't quite hit the mark if you're expecting a true fry texture. The restaurant is clean, the vibe is right, and the menu is creative enough to keep me coming back. They are so close to being a premier Summerlin destination. Once they tighten up the kitchen consistency and fine-tune those minor execution errors, they'll more than likely hit that 5-star mark.
