Jaleo at the Cosmopolitan is one of those restaurants that immediately transports you to Spain the moment you walk through the doors. The décor is vibrant, warm, and sophisticated, inspired by the energy of traditional Spanish tapas bars with a modern artistic twist. Rich reds, warm woods, colorful tile accents, dramatic lighting, and an open, lively dining room create an inviting atmosphere that feels both upscale and welcoming. The open layout allows you to take in the excitement of the restaurant while still feeling comfortable at your table. It's a beautiful space that perfectly captures the spirit of celebrating food, wine, and good company. The service was absolutely magnificent from beginning to end. We were warmly welcomed by the hostesses, who immediately made us feel like valued guests. Our waiter was exceptional, professional, attentive, knowledgeable, and genuinely passionate about the menu. He took the time to answer our questions, offered thoughtful recommendations, and ensured everything throughout the meal was perfect. This is hospitality done right. The sangrias were delicious, refreshing, and full of flavor. My only minor suggestion would be a little less ice in the glass next time, as it diluted the drink a bit. I may order a pitcher on my next visit because they were that good. We started with the olive assortment and the Pan con Tomate, toasted slices of uniquely crispy bread imported from Barcelona and brushed with fresh tomato. It's a classic Spanish staple, and both appetizers were simple, authentic, and absolutely delicious. For our entrée, we enjoyed the halibut filet served with a luxurious mussel saffron sauce, braised fennel, and chive oil. The fish was perfectly cooked, tender, and complemented beautifully by the rich, aromatic sauce. For sides, we ordered the Patatas Bravas, crispy fried potatoes served with spicy tomato sauce and alioli, which were outstanding, and the Coliflor Salteada con Aceitunas y Dátiles, sautéed cauliflower with dates, olives, and PX wine. The combination of sweet and savory flavors made this dish incredibly unique and memorable. The atmosphere is chic, energetic, and joyful. You can feel the excitement throughout the dining room, making it an ideal place for a date night, celebration, or gathering with friends. Overall, Jaleo delivered an exceptional dining experience from start to finish. Beautiful surroundings, impeccable service, outstanding food, and delicious cocktails made for a truly memorable meal. I highly recommend it and can't wait to return to explore more of the menu.

I always love a good excuse to get tapas, and Jaleo looked like the perfect spot to indulge. Vegas has its fair share of celebrity chef-driven restaurants, and this one is led by Chef José Andrés himself, located inside The Cosmopolitan. The setting is upscale yet warm and unpretentious, with an energetic vibe that makes it the perfect spot for a memorable, shared dining experience. Our dinner included the following: Spanish white anchovies with pan de cristal, Jamón Serrano, grilled chicken thigh with ajillo sauce and black garlic purée, charcoal-grilled octopus with potatoes and tomato confit, and shrimp sautéed with garlic and served with flauta bread. We also shared a pitcher of their white sangria, which came highly recommended and is a true tapas staple. Everything we had was spectacular and reflective of Chef Andrés' culinary prowess in showcasing authentic Spanish cuisine on the Strip. Service was excellent and attentive, with our waiter keeping the pacing of our meal just right and checking on us regularly. We certainly felt the hospitality throughout the lively and welcoming atmosphere.

Welcome to Jaleo brought to you by Chef Jose Andres, housed in The Cosmopolitan Hotel. This is a Spanish restaurant bringing you authentic paella's cooked over open fire, assorted tapas, delicious sangria's, steaks, seafood, and great desserts. Customer service from every employee is just stellar. Food is served in small portions so can you enjoy many different items. A simple standout was a shaved fennel and apple salad with walnuts and bits of manchego cheese. Great atmosphere with comfortable seating. I would definitely go back to enjoy so much more on this delectable menu. Highly recommend

Ambiance: it's a nice restaurant but nothing outstanding about the interior design. it was lively without being loud Service: service was great! server was knowledgable. also it was my friends bday and the detail they put in for her was super nice! Food: We got 8 different items to try between the 4 of us & honestly, nothing was outstanding. it was mediocre or fine - not bad food or anything. but compared to the price of everything, id go somewhere else.

    Arroz gambas. So tasty

Restaurant is on the 3rd floor with the other places like beauty and Essex and STK. open to the casino common area. Hugh central kitchen where you can see the fire as they cook and make paella. We had a 7 pm reservation and showed up a little after 5. Luckily it was Sunday night and they weren't busy. We were seated and the adventure began. We had not been here before so ordered across the various areas of the menu. Since it's a tapas place, each dish is small and can put away quite a few. We ordered: Jose's taco. The best thing I've put in my mouth in a long time. Wish we didn't have it first, was mind blowing mix of flavors. It's seaweed with a slice of Iberico ham and caviar. 25 each but well worth it One of each cone - sonatas, caviar, Scalia and atun. All were delicious but the caviar and tuna tartare were my faves Pan tomate wife loves this, traditional presentation and good. Patatas brava chunks of potato in a tomato sauce very good Vieras scallop dish, very tasty Gazpacho was cold and refreshing Cod bunuelos. Cod fish calendar fried, got about 5 and they were really delicious Marisol croquet seafood cake, deep fried and served with a tasty aioli. Arroz gambas. I had the large paella, takes about 45 mins so if you know you want one, order early. You can get the paella of the day in a smaller version, but I had my heart set on this one and polished off about 86% of it. Tarta de queso. We had the basque cheesecake for dessert. Was really good, I think I like this version better than the NY style. Much lighter. Was a fantastic experience, food was great, service amazing. Can't wait to come back!! They are known for their gin and tonics so the wife got the ultimate and I got the citric. Citric had Mediterranean tonic water with grapefruit juice. Was really good! Service was super, Kayla was very attentive and friendly with lots of suggestions and helpful explanations of things weren't sure about.

This is a nice tapas place. Kevin who is our server made our restaurant experience extra special. Kevin was extra nice and very attentive to our requests. My friend celebrated his birthday. We got sangria, a pitcher and it was more than enough for all 4 of us. We tried and enjoyed this.fried eggplant with honey. They dates also were extra delicious. Octopus was also good. You can taste the charred grilled from the octopus.

I went into Jaleo with high expectations. José Andrés is a legend, and I was eager to experience his take on Spanish cuisine. The food largely delivers, but the ambiance left me wanting more. For a concept with so much cultural richness to draw from, the space feels like a missed opportunity. The one exception is the "e" room, an intimate 9-seat chef's experience that is creatively and beautifully decorated. I peeked in but didn't dine there as it runs around $300 to $400 per person. We started with the manchego, and it set a great tone. The raw sheep's milk flavor is tangy and bright, and the young, creamy texture pairs beautifully with the Marcona almonds. Simple and well executed. The Bikini de Jamón y Queso Manchego was one of the highlights of the night. It's a pressed sandwich of Serrano ham, Manchego cheese, and caramelized onions, served with a honey mustard sauce on the side that is excellent. Sounds simple, tastes remarkable. The Cono de Sobrasada is a cute little bite that comes in a crispy brik pastry cone filled with sobrasada Ibérica, a hint of goat cheese, and a drizzle of honey. The honey is essential here because the sobrasada is bold and intense on its own. It's a fun tapa but I expected a little more from it. For tapas, the Berenjenas Fritas a la Malagueña is a must order. Crispy fried eggplant paired with a light yogurt, lemon, and honey espuma that hits a perfect balance of salty and sweet. Don't skip it. The undisputed star of the night was the Gambas al Ajillo. Shrimp sautéed in olive oil, garlic, and chili peppers with an aroma that pulls you in before the plate even lands on the table. Mouthwatering from start to finish. We closed with the Tarta de Queso, a Basque style cheesecake made with goat cheese, finished with honey and salt. I appreciated the concept and I knew going in that this would be nothing like a traditional cheesecake. That said, I've had better versions of this dish elsewhere. This one was slightly overbaked and a touch dry, and the flavor didn't quite reach the depth it promised. Overall a memorable Spanish dinner with some real standouts. Lean into the tapas, order the gambas without hesitation, and save room for the Bikini. For the location and the caliber of the concept, $120 for two without alcohol feels like a fair deal on the Strip.

Chef José Andrés' Spanish tapas restaurant is an absolutely fabulous date night experience! From reception to wait staff, everyone is cheerful, enthusiastic, and on it. They make the place, without a doubt The food is elevated tapas, fancier than typically found across Iberia. The vibe is exactly right; tables near each other, the whole village enjoying food together. The Cono de Caviar has smoky Amar Osetra topped with gold leaf, a fabulous bite that celebrates the ingredients. The Cono de Atun lets the fish shine through. Winners, both. The Datiles - dates stuffed with almonds and wrapped in bacon - have texture and taste dancing together in your mouth. The Chorizo Casero features an olive oil potato puree and a cider reduction that brought me back to the streets of Barcelona. The Calamares Romana - deep-fried squid with an octopus ink aoili - is deeply satisfying and makes everyone's mouth black for a satisfying amount of time. It's hard to exhaust this deep menu, and we left all the dishes celebrating the native acorn-fed Iberian pigs to the next visit.

Everything in the happy hour menu was incredible. With a wide variety of tapas, the seafood was extremely flavorful paired with a delicious sangria and hand selected wine by their in house sommelier. The service and ambience was wonderful with extremely friendly staff, our servers name was Nina therefore if you get to have her help you, don't be afraid to ask for recommendations! The black ink squid calamari, potatoes and chicken fritters were very tasty. Can't wait to order them again and try others in future!

I needed some time to kill and it was almost dinner time when I found out Jaleo has something called 'Sangria Hour', which is their happy hour. It's daily at the bar from 5-7. I got there at about 6:40 and overall, it was a bit empty, and the bar was probably only about half full. I don't think a lot of people know about it because they don't advertise it. Even when I sat down and they gave me the menu, they didn't initially give me the Sangria Hour menu - I had to ask for it. Luckily, I still had enough time to order. I had: Patatas Bravas (fried potatoes with spicy tomato sauce and aioli) - these were a little basic. It could have used a bit more flavor - maybe more spicyness? Endibias Con Queso de Cabra y Naranjas (endives with goat cheese, oranges, almonds, roasted garlic dressing) - I normally don't like goat cheese but I really liked this. The oranges were refreshing, and I liked all the different flavors together Pan con Tomate (toasted bread with fresh tomato) and added Manchego cheese - can't go wrong with tomato bread! I probably could have eaten a few more of these They also have a few drink specials during Sangria Hour so next time if you're around during this time, check it out but just be sure to ask for the menu!

The evening was excellent we were able to get a lovely table for three on short notice. Since we were able to get right in. We had the Garlic Shrimp Tapas! They were quite delicious with just the right spicyness! They devein and take the heads off the shrimp! The ambience was really nice because you could sit and watch them prepare the Paella and people watch at the cosmopolitan! I really liked the decor. The Paella of the night was sausage, Shrimp and chicken. I also shared a glass of Sangria which was delicious! I would highly recommend Jaleo and can't wait to return!

OMG! My daughter, Muff decided to treat me to a Las Vegas trip for my birthday and we went to several restaurants that we've both been wanting to go to. Jaleo was one of the top restaurants that we wanted to go to and the restaurant exceeded our expectations. Jaleo is a beautifully appointed restaurant and the decor is amazing. Low-backed sofas were actually beautiful and comfortable and the way that Jaleo is decorated is in keeping with casual yet elevated Spanish tastes. And the wait staff service was stupendous. My daughter and I never had to ask for our table to be serviced; It just happened and the staff was extremely intuitive. And the food! I left the restaurant hoping and begging that Jose Andres would open a Jaleo in the Pittsburgh area. We had the Croquetas de Pollo, Croquetas de Jamon, Gambas al Ajillo, sangria and we had a black ink pasta dish (Rossejat Negra...or Not) that was superb. I can't wait to go back again to the Las Vegas Jaleo! Definitely worth the wait!

We dined at Jaleo and it was truly an amazing experience from the beautiful women in the front till our leave! We didn't have reservations but I would recommend it. I think we were very lucky on a Saturday night to be seated within a few minutes. Our seating was just what we hoped for without even asking. We love booth seating because we explore menus and love good food. Our server (KEVIN) was excellent along with the server assistant (NATHANIEL). Shout out to these men for truly exceptional service. They both worked hard as we watched them demonstrate their expertise all over the restaurant. If you love sparkling water please try theirs which is the best I have ever had. I didn't order drinks guys I just enjoyed the water. The food was sooooo delicious ! Everything was cooked to perfection. I love seafood but not really shrimp but I ordered 2 servings OMG! They noted my pork allergy which was great. Kevin was even more impressive by telling me he forgot the scallops came with pork but got the cooks to prepare it without the pork so it only took a few minutes longer. This sold me here because not many people are accountable for mistakes but this never made it to my table! ‍ THANK YOU KEVIN! Thank you to these men cook also for preparing it so fast because there was no lag time! Everything was PERFECT! We will definitely be going back to dine here again! Big thanks again Kevin you are exceptional and Nathaniel you are amazing! Dream team! ‍

    Ask the Community - Jaleo

How can I book the dining course experience for 2? Reservations is showing regular tables.

You do not need to book in advance the Jaleo Experience. Just let the waiter knows when you get seated.

Is the cochinillo (baby pig) available on the menu next month, March 2026?

Yes it is! Please call us at 702.698.7950 to reserve it. We request a 72 hour notice.

Is it possible to order the flat iron steak (6 oz) with peppers and pepper sauce on the side? I have some medical reasons. Thanks!

Hi C.C. Yes, we can definitely accommodate you by putting the peppers and sauce on the side!

Is there a corkage fee, if so what is the price?

Hello! Our corkage fee is $50 per bottle, provided it is not currently on our wine list. Thank you.

How easy is it to get bar seats on a Saturday night around 6:30? Do we have the ability to order some or all of the food on your menu at the bar?

It depends on what is going on at the hotel. If there is a big conference, the bar can get jammed up. If none, then the bar is big enough to find a spot.

Do i have a choice as to what paella i can order on any night?

No. Each night they have one kind of Paella. As far as I know they don't always know too far ahead what it will be each day. It's different kinds on different night.

Is the Sangria hour still everyday 5-7pm? and can we make reservations for sangria hour?

Hello Jennifer, Sangria Hour is available from 5 PM - 7 PM Tuesday - Sunday. Please make a…

I will have 2 teens with me in during the week in April....am I able to come for happy hour and make reservations to sit, or is happy hour just at the bar?

Hello Michael, Sangria Hour is available within the restaurant. You are more than welcome to enjoy it with your family.

What is the attire for this restaurant?

You can really wear anything you want, as it's a casino-mall location, but we felt most comfortable in her dress / my blazer-shirt-jeans casual nice. But definitely not a snooty environment.

Are the paella dishes served in the pan individually?

Hello Elizabeth, Jaleo Las Vegas is home to the first wood-burning paella pit. We cook large pans of paella over the open fire.…

I read that you cook your paella over a fire pit. Is that over an open flame and can one smell the smoke in the restaurant? Thank you

There is a open flame fire pit they cook on but I've never smelt any smoke in the restaurant.

Is the price of paella per person or the actual price, it says it feeds 8 I would like to take my parents and wife.?

Total cost, but saying it feeds 8 is a bit of a stretch. You'll still need to order a few more dishes

We've done fine dining before and usually it takes about 2+ hours to get through the meal. We have a show to get to at 8pm at the Palazzo. Is it cutting it too close if we have dinner at 5:30pm?

I don't think you will be able to make it. There are seating at 5:30 and 8:30. I've done the 5:30 seating twice and once we finished right at 8:05pm and the second we finished at 8:19pm. Finished meaning when the last course was served, chefs gave…

Hello. I am wondering if you have non sea food or fish items? My husband and i are looking to book for july but do not eat sea food. Thanks.

The tasting at e' consisted of both meat and fish when I was there. An equally spectacular alternative would be to go to jose's Bazaar Meat instead.

So is the "service charge" the tip or not? I was charged 20% on reservation but it sounds like I also have the option to add additional gratuity at the end. So does that mean the 20% charge doesn't go to the staff? Or only to the servers not chefs?

Hi Monica, Yes, the 20% service charge is gratuity that goes to all é employees. When you dine…

Is there a set price per person?

Hi Laura, If you're looking to book an experience at é in February or March, the price is $250 before tax and gratuity. However, for all seatings booked for or after April…

    Gluten free menu?

I didn't notice a specific section on the menu labeled "Gluten Free", but i am sure the servers are knowledgeable enough to point you to the items that will appeal to the Gluten Free customer.

What is the dress code? Are jeans acceptable?

Yes nice ones , no holes

Is it only a pre-fixed menu? Can it be altered for a vegetarian?

The menu was calling to us and the restaurant itself just fit more our vibe. The food was good. The Cuban Benedict was calling my name but since 2 people in my group were already ordering it, I decided to try the breakfast platter while the last person ordered the chicken and waffles. We also ordered the southwest chicken caesar salad and a side of the truffle mac and cheese for the table. All the breakfast food was good, nothing really stuck out to me. I was shocked the chicken and waffles didn't come with a bone in chicken like a leg and thigh but my friend still enjoyed it. The star of the meal was the truffle mac and cheese. The dish came out on a small cast iron skillet and the cheese was so velvety. To my surprise there were even slices of truffles folded in. Without a doubt, this would be a dish I'd request as for my death row meal, not to be dramatic! As for drinks, they did the job. Don't be surprised at the prices, we definitely were! Drinks are close to $20 each, but it is vegas, I guess... Our server, Ed, was absolutely amazing! He was very attentive and even brought out a dessert for my friend at the end of our meal. We mentioned we were celebrating her birthday and it was definitely a nice treat!

La Cave at Wynn is such a pretty brunch spot in Vegas! I've really enjoyed my experiences here,…read moreespecially because it feels a little more tucked away and intimate compared to some of the larger restaurants on the Strip. The atmosphere is definitely one of the highlights. The space is beautiful, cozy, and elevated, making it perfect for brunch with friends, birthdays, date days, or any kind of celebration. I especially love the garden-style patio area. The food is served in smaller, shareable portions, which makes it fun to order several different things for the table and try a little bit of everything. Everything we tried was delicious, and I loved being able to mix sweet and savory brunch options instead of committing to just one entrée. Service was friendly and attentive, and the overall experience felt relaxed even though the restaurant itself feels upscale. It's definitely somewhere you can sit, enjoy brunch, and make an occasion out of it rather than feeling rushed. If you're looking for a beautiful brunch experience at Wynn, La Cave is definitely worth adding to your list. Great food, gorgeous atmosphere, and such a fun spot for a Vegas brunch!

However, you can see where the quality of the food isn't up to the standards of other restaurants at Wynn or even other hotels. Our server was lovely, so i have no complaints there. This is a butler style all you can eat small plates restaurant, so people walk around with trays of food and you can pick it you want something. We would get skipped so many times with the food we wanted to try. We just couldn't figure out their system or how they serve the food. The quality of the "more expensive" dishes were lacking. The short ribs were watery. The filet mignon eggs Benedict was tasteless and it was the most thin and overcooked piece of filet mignon I've ever had. The pancakes were cold and thick and dense. The heirloom tomatoes tasted more like regular tomatoes, and the scrambled eggs with caramelized onions and tomatoes lacked seasoning and flavor. So many dishes that were on the menu didn't even come out. The following items were delicious: Bacon and egg flatbread Avocado crostini Mini egg frittata Truffle mushroom grits (although it's bold of them to call it truffle mushroom grits when there's only like 2 little mushrooms. See the picture I included, haha) Definitely wouldn't go back. It's worth the money if you just want to be able to eat unlimited mediocre food. You can definitely get your money's worth if you eat a lot of the dishes, but I rather spend ten dollars more and go to the Wynn Buffet instead.

I tried to take pics of everything, but we were so busy living in the moment I forgot a few things. I reserved a 6:15pm table for 6 of us, and we waited in a very comfortable waiting area with couches for just a few minutes. We were in AWE of the table they gave us inside- awesome inside corner booth with a beautiful view of the Bellagio fountain show. I'm not sure if our table was this incredible because I listed "birthday" as the occasion in the reservation, or if we just got incredibly lucky. To be fair, there's not too many tables that DON'T have a spectacular view but if you're celebrating something, definitely let them know in the res! We started with oysters (SO sweet and delicious), shrimp cocktail, focaccia, and the prosciutto. I had to make note of the prosciutto ingredients to try to recreate at home sometime. For mains, the table got branzino, lobster risotto x2, filet x2, and the ribeye. I got a bite of everyone's dish and there was not one thing below a 10/10. I would recommend ordering a handful of different sides for the table if you're dining with 4-6 people- it was fun to share those family style, and honestly the mushrooms side was maybe the best mushroom dish we've ever had. Service was friendly, helpful, and very attentive. No one ever had an empty glass, a dirty plate, or an unanswered question. At the end of dinner service, they brought out a tiramisu dessert with a candle for my mom on the house which was so kind and really made her night.

We come here every year for my hubby's birthday. I had the bright idea of doing a reservation…read moreonline, and I did for Sunday August 9th instead of Saturday August 8th. I realize my mistake and we went on Saturday at noon b/c we would be on a Delta flight at 5am that Sunday. We go and speak to Karen and their cashier. I tell Karen everything and ask if there's anyone that can fix this. She said NO. Then says we can pay the $146 again plus $50 to jump the line, and they would figure out how to fix the reservation I dated in error. That Sunday Aug 9th, once we landed I called and spoke to Stacey who identified herself as the Asst GM. I couldn't talk to her fully b/c I was in the airport, and we hung up. The second time, I was in the shuttle, and tried to reason with her. After she was like "there are no refunds", we hung up. The third and final time I called, I could talk and was in my car. I asked if ANYONE could make this right. Stacey stated that Sheri the GM could. Stacey asked me why I didn't ask for a manager on Saturday. I advised that I did ask and was told no one could reverse it. Stacey then says, "I'm not sure why you were told that b/c all THREE of us were here." I asked, "What do you mean all three?" Stacey disconnects the call. I don't call back b/c she gave me Sheri's email. I sent Sheri my email and it took a couple of days for a response. At first, Sherri only apologized for the experience. I wrote back that she did not address THE DUP CHARGE. She finally gives in and refunds my money after I advised that AMEX would be contacted. Lesson: DOUBLE CHECK your date of the reservation. Do NOT make a reservation, just go to the VIP LINE, pay $146 to get in and $50 MORE to skip the line. If you make a reservation, you WILL stand in one line after the next. I'm giving two stars for how this was handled. No ONE has an EXTRA $146 to GIVE AWAY! I don't know who else has experienced this, but I'm not paying for what I didn't get. Please share your thoughts!!! VER our WAITER was AMAZING, and this review is only for the greeters and management.

What an amazing experience at Bazaar Meat with my family!…read more Same day reservations were easy to make. We were staying at the Palazzo so it was super convenient to walk down to the restaurant for dinner. Ambiance was beautiful, chic and classy. We loved the plush bench-chairs at the table. Since we were dining with 2 children, we decided to order à la carte instead of picking a tasting menu. Our server Robert was the best. He was kind, explained how the food was going to come out at a slower pace to allow time for the steak to cook and rest properly before serving. My favorite dishes were the caviar cones and wagyu carpaccio. Flavors were amazing. It was definitely the best carpaccio I've ever had. The caviar jamon tacos were also good- a carefully sliced piece of ham on a nori sheet topped with caviar and gold leaf. My daughter had the sloppy Joe's- I had a taste and thought it was delicious with the skinny fries on top. I'm not a big meat eater, but we got a ribeye to share. It came out perfectly medium rare and was delicious. I really enjoyed the sides, especially the wild mushrooms. The Brussels sprouts leaves salad really surprised us- we've never had it served that way and it was very good. My kids especially enjoyed the "butter with some potatoes." The flan at the end really surprised us. The flavors were so balanced. I didn't want to order dessert, but ended up eating most of it. Thank you for an amazing experience.

Holy... where do I even start?…read more A friend highly recommended this place, so I went with high expectations. Somehow, Fideua still managed to exceed every one of them. A few tips if it's your first visit: 1. Order from their pre-order menu (at least 24 hours in advance). 2. Come HUNGRY. Seriously. 3. Set aside 1.5-2.5 hours to enjoy the full experience. 4. Save room for dessert. What I ordered: - Sautéed Shrimp, Calamari & Octopus (Sepa/Gambas/Pulpo al Ajillo) - Sea Bass Oven-Cooked in a Salt Crust - Ox Tail (Rabo de Toro) - Chef's Signature Seafood Fideuà - Warm Bread with Spanish-Style Aioli - Chef's Choice Dessert (Surtido de Postres) I would order every single one of these again without hesitation. Fideua is a small husband/wife restaurant about 10-15 minutes off the Las Vegas Strip, by Head Chef Farman and Sous Chef Barbara. Barbara makes the desserts in-house, so the selection is limited.. but that's exactly why they're so good. Beautifully balanced, not overly sweet, and the perfect way to end the meal. One tip: don't finish the aioli with the bread. Save it for the sea bass, ox tail, and paella/fideua. You'll thank me later. This was one of the best meals I've had in Las Vegas. What I loved most was how authentic everything felt. The ingredients are imported from Spain, and nothing tasted "Americanized". The food, service, and hospitality were all exceptional. I've eaten at many José Andrés restaurants across different cities, and while I enjoy them, they're much more modern fusion. Fideua delivers something much closer to what you'd actually experience in Spain, and that's what makes it so special. Honestly, I haven't had a Spanish meal this authentic even in Los Angeles. There are a couple good ones but not THIS good. The pricing is also incredibly fair. To get this level of quality on the Strip, you'd easily pay two to three times more.. and even then, I doubt the food would taste better. If you can, book an earlier timing so you'll have the chance to chat with Farman & Barbara and his culinary journey. His warmth, curiosity, and passion shine through not only in conversation but in every dish that comes out of the kitchen. I already can't wait to come back in a few months to try other dishes on the menu.
