I recently moved to Plano and have been researching fun activities to participate in. Running in 90+ degree temps with humidity will tire a girl out! Something needs to be indoors. Enter, an incredible pastry class. I'm no rookie when it comes to culinary classes. I love them! I love cooking and baking and always learn something new from a class. It's something I throughly enjoy. This experience was 5 STARS! Everyone was so warm, friendly, inclusive and kind. We really had the absolute best time. I've been trying to feel a sense of community after relocating and the other students, as one told me are "my people". My week days have been spent in an altogether different environment that regardless of if it's cultural has brought me down in a real way. I was looking for an afternoon of joie. The class was so inviting, hands on and fun! We made a bunch of items, shared snacks and our creations together. On break another student in class gave me a tour of Central Market since I'd never been to one. Grabbing coffee, exchanging business cards with others, bookmarking a ton of new spots to try and learning about other fun activities was truly worth every dollar spent to join this 4hr class. It felt exactly like what I had imagined moving to Texas with Texans would feel like. It attracted the finest residents. I can't wait to return. They have an all star line up of classes and August is hatch chili month. I will surely be signing up for at least one class a month. The florals are also totally worth mentioning, the store and class is adorned in the most incredible arrangements. It really was such a lovely class. Now if I can find someone to teach me Mahjong! The store is also gorgeous! I'm definitely at the age where I couldn't care less about local bars, show me a stunning grocery store! Coming from Los Angeles, dare I say it... Central Market might be better than Erewhon.

I will do these at home. And a surprise: Italian creme cupcake for my birthday celebration. Truly a great night. Totally worth it for a family celebration.

Chef Zach provided us a wealth of knowledge on the different types of cocoa (dutch, natural), how to know what's happening with your ganache, how the proportions of liquid to chocolate impact it, infusion of flavors, talked about how best to incorporate ingredients depending on the way in which you choose to do so (by hand, mixer, or food processor) - just a pleasure to learn from and talk to! I'm the baker in the house (although my husband makes amazing souffle's) and I walked away with tips and and tricks that I will definitely be using in the future! I loved seeing and using some of the tools that I didn't even know existed but will definitely be purchasing for my own baking. It was an amazing evening and we look forward to doing another class in the future!

Chef Zach was an absolute gem. :) We parked, walked up to the door, and he opened the front door without us having to knock. He had his entire kitchen prepared for us so that all we had to do was whisk or pour or laugh at his jokes. We made white chocolate mousse with a strawberry sauce. It was absolutely delicious, and he made the entire class effortless. Taught us a lot about chocolate along the way and imparted great advice for an easier time with remaking it. Had a serving each while there, and he sweetly (;)) boxed up our extra servings to-go. Definitely recommend doing his chocolate class! It was a fun date, and the white chocolate mousse just melted in our mouths haha.

Everything was explained really well, and the instructors made the experience fun and easy to follow, even for someone who isn't a professional cook. We made our own dressing for the arugula salad, and when I tell you it was amazing, I thought about that salad for days afterward. It was honestly one of my favorite parts of the class. I had never had gnocchi before, and it was really, really good. I was pleasantly surprised by how much I enjoyed it. We also learned some great tips for preparing steak that I wasn't aware of, and I've already started using them at home. Overall, it was a great experience. The class was informative, hands-on, and enjoyable from start to finish. I would definitely recommend it to others, and I plan on coming back to try the knife skills class and probably a few other classes as well.

Chef Kate led us on a wonderful 2 hour culinary adventure making roasted chicken, kale salad, a Lemon tart, marinated artichokes, and a delicious aioli. The chicken had a golden brown skin, cooked perfectly. Tasty and crispy. The kale salad had a great flavor thanks to the nice dressing that you make. The lemon tart is made first due to the amount of work and steps involved. It is a nice treat to go with the meal. The artichokes are delicious and you add some of the aioli you make and it is so tasty. Probably my favorite part. You do the cooking yourself but Chef Kate guided us from beginning to end. Happily answering all questions. She made everything so easy and instructed us the whole time.. After you take a class you get $10 off another class and 10% off a purchase in the store. I took hundreds of photos of the estate and the vineyards and artisan farms and towns we visited. I plan on going back next year with 3 of my friends. After getting to know the sisters, I booked a tour for September 2010, which kicked off a month of touring Italy on my own. The trip itself was life-changing, and I still think back to my days in a Tuscan villa with Gina, Mary, and my fellow hungry travelers. First, we had an AMAZING kick-off to our trip with dinner in a Siena piazza alongside members of Gina's contrada as they celebrated their win during the summer's palio event. I'm sure few, if any, Americans can say they've been to such a festival, and I'm so thankful to have had such a unique experience! The rest of the week was full of cooking, amazing food, wine (oh, the wine!), and - most importantly to a shutterbug - loads of photo opps. We met a pig farmer (cinta senese pigs-- super cute, and, coincidentally, delicious) who is also an olive oil taster, we toured vineyards, ate in fantastic restaurants, learned some important Italian phrases, and more. And, I really learned to relax in the kitchen (plus, my friends and family are loving the dishes from Gina's cookbook!). I love a good time, I'm a foodie, a food geek, and just a regular geek, and I just can't say enough good things about this adventure. I'd go back again, and again, and again if my piggy bank and waist-line could handle it! Gina and Mary are passionate professionals, and after my week in Tuscany, they are my friends. Do yourself a favor: go to Italy with Ecco la Cucina, pronto!

Case in point: many years ago I made a lamb cake for Easter. Growing up, my grandmother had always made one and I thought it would be fun to try. My young adult children at the time, named my creation a "Rat Cake." I can see how they might have come up with that. I used chocolate sprinkles as whiskers and now that I think about it, I don't think a lamb even has whiskers! :-) For the past couple of years I have gone to Cake Carousel for help in picking up the needed supplies to make a decent looking Easter lamb cake. My result has not been laughed at so, I'll take that as a win! Their tub of whipped buttercream is perfect! Not too sweet, reasonably priced and it spreads on great. They have precious candy flowers that instantly elevate your cake. The grandkids even had fun helping me decorate! I love this tradition that I'm able to carry on with my own grandkids, just as the happy memories I have with my grandmother so many years ago. Cake Carousel makes it happen!

Now, having completed the course, I wonder if the few prior reviewers had even turned up to class?! I loved her traditional teaching format, which incrementally built lessons on subjects that drawing students have studied for centuries. The excellent and thorough technical instruction, along with a relaxed and supportive art practice environment, gave me time for trial and error. The amount of growth in every student in the class from first to final class was outstanding. Tina has extensive experience and translates it into interesting, engaging, and supportive learning-to-draw lessons, making me believe I can draw anything I set out to. So satisfying and highly recommended. If you have been looking for a beginning drawing class, treat yourself, and don't wait!
