I was sat immediately and was the only person in the restaurant the entire time (it was 11am on a weekday, so understandable), so I chose a seat by the window to enjoy the view. Water was immediately brought to me along with the extensive menu, and I ordered three dishes, plus garlic and cheese naan, and was offered a complimentary chai. After a few pages of my book, the food starting rolling out. The Chicken Tikka Masala was so tender with the yogurt-marinated chicken having a little tang, the Chicken Saag was creamy with the perfect spice, and the Baingan Bharta was made perfectly, studded with fresh peas that burst in every bite. The garlic and cheese naan was a perfect compliment, with a beautiful glaze of ghee on every piece. I ordered medium, but would likely up my spice preference next time. This was a ton of food, as planned, so I packed up my mass amounts of leftover to take home to share with the rest of the family where it was consumed immediately. HIGHLY recommend this place!

I was driving back north wanting something to pick up something quick for lunch to avoid traffic when I remembered having seen this truck. I pulled in to the parking lot of the dispensary, and got quite a few odd looks (including the unsuspecting owner of the food truck) when I walked straight to the truck, circumventing the marijuana shop. They have a pretty full menu, much of which is handwritten below the typed items, which shows that they have had enough demand to expand - including the addition of the missing naan mentioned in the review below! While I wanted to get everything, I opted for the Chicken Saag (this time around) with a medium spice. In ten minutes, the bag was waiting for me and I dug in right there in the parking lot. This Chicken Saag was purrrrrrfect! Medium spice was a bit on the medium-high side, so I had just the right amount of sniffles and small beads of sweat on my forehead. The flavor jumped out of the carton and assaulted my tastebuds in the best way. The chicken was perfectly cooked and tender, and I immediately regretted not getting another dish or two to have leftovers for dinner. I've got to make the trek back south again next week (boo), but this truck (yay!) will definitely be the brightest part of my day as I start to navigate through the rest of the menu!

Perfect balance of flavor and heat, and they even made it extra hot for me without me asking this time. We came in for our second visit and the guy working recognized us from before and remembered I like it spicy, so he told the kitchen to kick it up a notch. That kind of attention is awesome and the result was easily the best vindaloo I've had in Colorado. My wife had the saag paneer, which was rich, creamy, and packed with flavor, and the kids ordered butter chicken, which she absolutely devoured. Always a good sign when the kids' plates come back empty. The food is fantastic, the spice levels are legit if you ask for them, and the staff clearly care about their customers. He was so friendly and made us feel so welcome and special. I got my usual vegetarian korma and my spouse tried their chicken biryani. We also got some chai and the owner insisted on giving us a small order of naan. It was DELICIOUS! I tried a bite of my spouse's and it was delicious. My korma was amazing, as usual. And the naan! It's good regardless but I highly recommend getting it if you dine-in because it's crispy in a way that getting it as take-out diminishes. The chai was so delicious and I wish I knew how they make it so good, it's never that good at home. I hope we can dine-in again soon. It was such a great experience.
