While I wanted to get everything, I opted for the Chicken Saag (this time around) with a medium spice. In ten minutes, the bag was waiting for me and I dug in right there in the parking lot. This Chicken Saag was purrrrrrfect! Medium spice was a bit on the medium-high side, so I had just the right amount of sniffles and small beads of sweat on my forehead. The flavor jumped out of the carton and assaulted my tastebuds in the best way. The chicken was perfectly cooked and tender, and I immediately regretted not getting another dish or two to have leftovers for dinner. I've got to make the trek back south again next week (boo), but this truck (yay!) will definitely be the brightest part of my day as I start to navigate through the rest of the menu!

Perfect balance of flavor and heat, and they even made it extra hot for me without me asking this time. We came in for our second visit and the guy working recognized us from before and remembered I like it spicy, so he told the kitchen to kick it up a notch. That kind of attention is awesome and the result was easily the best vindaloo I've had in Colorado. My wife had the saag paneer, which was rich, creamy, and packed with flavor, and the kids ordered butter chicken, which she absolutely devoured. Always a good sign when the kids' plates come back empty. The food is fantastic, the spice levels are legit if you ask for them, and the staff clearly care about their customers.
