    Fast counter service and a few tables & chairs if you decide to stay instead of take-out. Seasoned fries were very good. Gyro was also good, could have used a little more tzatziki sauce. Rewards program is the pits. Can't get credit for food unless it is ordered via the app. The chain needs to get with the times.

What we noticed right from the start is how well the staff works with and for each other to bring guests the best dining experience possible. Maddie was our server. She was kind, professional, patient, and knowledgable about both food and drink on a grand scale. Her recommendations were stellar. I had a refreshing gin and basil martini as well as their beef carpaccio, which was absolutely fantastic. My girlfriend started with their beef stew, which was thick and satisfying. It was so delicious, she almost canceled her entree to have more. She went with the home cooking route and indulged in their meatloaf with green beans and mashed potatoes. Although she loved that as well, half had to come home with her, which made for an excellent lunch the next day. I went with the raw of it all and got their spectacular tuna tartare with asparagus, radish, and rice. Usually, the tuna is cut into strips but this tremendous block of gorgeous fish knocked me out. Absolutely fantastic from presentation to flavor. For dessert, we got their brownie with ice cream and this was all upper level in taste and texture. I would be shocked if their ice cream hadn't been made in-house. We loved our first experience with Apollo and we look forward to our next visit, which is hopefully sooner than later.

But I'm glad that I ate Waffle House at what I perceive to be the right time: after 10PM. Having never ordered here, I have seen some YouTube videos on some epic meals. I was sitting in a booth and in about 6-7 minutes, he made at least 8-10 rounds of crispy golden mounds for everyone in the establishment, and each hashbrown looked just as good as the previous. He's a pro. I recall visiting some Waffle Houses in Lancaster and even Ohio, and I didn't like the ambiance; however, this one is clean! At least at 10PM on a Thursday it was clean and staffed with excellent workers. My food was so delicious. That hashbrown bowl came with two servings of potatoes, eggs scrambled perfectly, and that thick sausage gravy to make everything into one delicious bite. And in fact, FEMA uses what they call a "waffle House scale Green (Open, Full Menu): Minimal to no structural damage. The area has power and the community's infrastructure is largely intact.... Yellow (Open, Limited Menu): Moderate infrastructure disruptions. The restaurant is operating on backup generator power or has low food supplies.... Red (Closed): Severe damage. This indicates catastrophic conditions, massive power outages, unsafe roads, or structural damage to the restaurant itself The restaurant has a nice "diner vibe" on the inside. Their farm-to-table approach means a rotating menu and selection of curated ingredients that make up stunning dishes. Starting with cocktails - the famous Sleigh Bells Ring (featured on the cover of Edible Magazine) was perfection. Not too sweet, warming and tart with the mescal and boozy cranberry sauce- and incredible concoction. The Dark Love Story was equally seductive with a vodka base and aperitif blend with red wine reduction. The thought they put into their menu doesnt just stop at food! We were torn between starters but the Tartare was our pick and an excellent one. The egg was golden, the capers crisp, and the truffle aoili was never overpowering. The housemade crisp chips were a welcome change from the often offered toast bites while still being an elevated dish. The potato crsted cod was served beautifully with a lobster broth poured table-aide and was accompanied by fresh clams, shrimp, and mussels- honestly not a critique to be found. The grilled Chipotle flank steak was cooked to perfection and the hen of the woods mushroom was a showstopper. All in all I struggled to not make a reservation for every night I was in town because it is a must to go back. The decor and staff arw welcoming and as thoughtful as the meals served with mushrooms present all throughout complimenting the Bolete name. 10/10 all around.
