I'm your typical run of the mill "high-end" Vegan Chef. I'm a JERK when it comes to what other people think is "good". As a deep and intellectual human, I can chat with intriguing individual's for hours on end but I become your worst enemy when tasting your "food". I like my people, my music, and my experiences to be one of top notch value. When it comes to my food I am no different. I hate "market" style eatery spots, like hate. No reason I just don't. That almost stopped me from walking in. BUT my sugars were low, I received terrible health news today, and I have to eat a certain way to stay ahead of the curve when it comes to an ailment. I typed in "vegan" in my Google maps and boom, this spot I have yet to hear about pops up. Like, I have searched and this name has never come up. I see "Rueben" (not made with fake meat BS) and I pounced. I was on my way. Upon arrival I was greeted by one of the owners. I dig a serious Chef, one was not as vocal as the other (to be fair he was working) but the one who took my order was the right amount serious, helpful, and confident and I like that. That tells me they might be on to something and they know it. Nobody was over the top corporate nice, thank God. I hate that. It's fake. Worse than "fake meat". I drove myself home (I hate Market type eatery's) 20 minutes away which I battle with because it's respectful to eat whats made for you immediately in order to experience it's full purpose. My whole family is plant-based and I knew I couldn't eat more than just tasting a few bites due to my condition. I shared my Rueben, shared my Polenta Fires, and shared my Cauliflower Bisque. You should know, we have been in state for six months from California where we are spoiled with the BEST in produce and the absolute finest in dining. It's a vegan's paradise (Check out Oakland!). It has been an exhausting experience here in Colorado thus far. Yes, I am a Chef, but it is my art, so to cook meals every single night at home without time off is MUCH and it has a tendency to kill ones creative edge. We are not happy with the vegan choices here. A Beyond meat burger is gross and heavy salt saturated foods are gross... I'll stop here. I'll start here though, GO HERE. Support these Chef's. Spread the word. Apparently they have only been open for the last year and they REALLY should move into their own brick and mortar. Seriously. They can and should stand alone and allow a line to form. Hands down the very BEST vegan food in Colorado that I have tried so far and I have tried so much only to find myself feeling bloated and letdown. GO. NOW and take a friend. These are REAL Chefs. LOVEEEE Gladys. While I love everything on the menu the winter wedge, root vegetable Rueben and chocolate chip cookie are AMAZING. I'm a vegan and love having a vegetable forward fast option. Plus, everyone I've interacted with there has been amazing. read more

Amazing new place in Edgewater public market. Right off the main hall. All vegan, seasonal dishes. Local Organic produce .Compost-able Serving Dishes. Amazing vegan food, friendly staff. Visiting Denver for a few days and this was by far my favorite meal. The Ruben is bursting with flavor. The gnocchi, snap and green beans left me wanting more. The beautiful presentation makes it a complete dining experience. read more

My issue with many vegan restaurants is that there is usually some sort of disappointment. Sometimes it is the apps or entrees. Oftentimes, it is the dessert. We ate at Gladys and they delivered! We had the reuben, rissoto, and ceaser salad. All of them were excellent. To top it off, we had a chocolate chunk cookie that was perfection. Gladys is easily one of my favorite restaurants in Denver. We try to go at least once a week since the menu changes periodically and we never want to miss what is new. The flavors are bold and complex, the presentation is beautiful and elegant, the portions are hearty, and the price is so reasonable for the caliber of this elevated fare. My only complaint? They discontinued the fried artichokes which were about my favorite thing on earth, and they haven't brought them back! read more

We were visiting from out of town and our trip had been one disappointment after another until we found Gladys restaurant. The food was amazing - if we'd found Gladys earlier in our trip we'd have gone back again and again. We loved the root vegetable reuben and the carrot lox salad! Absolutely delicious! We had the fried artichokes, mushroom risotto, and Reuben, and I spent every bite wondering why I didn't order from this spot sooner. I love that vegan cheeses and products like the Impossible Burger are available on the market, but they just aren't my jam, so it was incredibly refreshing to see a truly plant-based menu. The artichokes were cooked *perfectly*, and the risotto was so creamy and savory. And, I mean, celery root sliced pastrami-style?! I wish that more vegan restaurants were as creative as that! The food at Gladys is simply amazing! Everything I've had on their menu has been incredible and so flavorful. I love that their food is seasonal and truly veggie focused, and does not rely on fake meats or cheeses. ive been to Gladys nearly once a week since they opened (it is that good)! Some of my favorites were the carrot tacos and the Colcannon potatoes from their first menu. Their second menu does not disappoint, either! So far I've had the chowder, the winter wedge salad, the risotto and the fried Brussels sprouts. All we're delicious! The staff is super friendly, too! read more

Creative, unique, and well prepared vegan food! We had the aguachile, charred Caesar, flatbread, and Reuben. Everything was incredible, the Caesar and aguachile were really the highlights though. The ricotta which came on the flatbread was unlike any other vegan cheeses I've tried. The Reuben could have used a bit more acidity from the chicory kraut, as it was a bit heavy for my liking; however, the celery root "pastrami" was perfectly done. read more

One of my small joys in life is the excitement of a new vegan restaurant. We had the Miso Carrots and Sunchoke Risotto. The carrots were perfectly tender with a generous coating of sweet miso but not too sweet. The risotto was perfectly creamy and dreamy without being too salty. I feel like a lot of vegan restaurants over do the salt to make up for flavor but this was great. The dark chocolate salted cookie was super chocolaty in each bite. When my husband and I travel, we go on "Vegan/Plant Based (PB) Restaurant Tours". We are always searching for "Delicious" Vegan/PB food". On our last month-long trip to Colorado, my daughter introduced us to Gladys' restaurant at Edgewater Public Market in Edgewater, CO. OMG! Gold mine! I've labeled this as my absolute favorite restaurant to date! The chefs were amazing, open and friendly. From the first whiff to the last bite, we were impressed! If you live in Colorado and haven't visited, "What's wrong with you???" Then, we were impressed that the chef made time to explain each item we asked about and they all sounded amazing -- we had a difficult time deciding what to have since everything sounded amazing! By the time we left CO, we'd tried almost everything on the menu (except desserts--we wanted the true vegan/pb experience you see)! For the food, they serve the best creamy, succulent, well flavored Mushroom Risotto I ever tasted! The Charred Ceasar Salad with spiced sesame seeds, crispy onions with a most awesome dressing, had us all but fighting over who'd get the last bite! My Root Vegetable Ruben sandwich was so unbelievably delicious, hubby wanted to "taste a bite" and then came back for "the rest" of the 1/2 piece! (Really hubby?? He'll surely have to get his own sandwich next time!). But wait, please be sure to try the Fried Artichokes-- OMG! they are so good! You try them, then tell me what you think! On top of it that, they serve foods in recycled paperware! I appreciated that! They don't skimp on their serving sizes as many other restaurants tended to do. Honestly, we visited this restaurant about 4-5 times while in CO and planned to return again but situations did not permit. Y'all, I'm from Illinois - we have absolutely nothing even close to this. If we did, I'd retire my oven, visit regularly, and take out stock in this little restaurant because if they keep delivering such an amazing offering at such a great price, they will be worth a fortune soon! You're not Vegan or PB? No problem! Gladys' food is so delicious that your body will appreciate you doing the right thing for it and stepping up to plant-based foods! Lol!
