Ahi crudo had such a small amount of ahi, it was questionable. Happy hour tacos were small on the protein and average on taste. The only thing we enjoyed was the jalepine cocktail. Fresh with pineapple and a touch of jalepeno and rimmed with chile and salt. Sad to visit a once special menu and find mediocrity. Yes, food prices are up but quality should not be so far down. Charge more if you must but this was disappointing. Try other spots in town. There are many with promise. read more

It's pretty rare that I update my reviews, but Fish Gaucho is getting an upgrade from 4 stars to 5! It's quickly becoming one of my go-to's in Paso as the food and service are consistently good. We've only ever come here on a whim, and because of that we usually end up sitting at the bar, but most recently we did get a regular table on a Saturday afternoon. They do take reservations if you want to make sure you secure a spot when and where you want. Favorites are still the tacos and Aguachile, especially the short rib tacos. We've also gotten nachos, oysters, ahi crudo, and taquitos, all of which we would get again. Food comes out pretty quick, but still seems to be very fresh. So it's a great place if you want to sit down, but still get out quick to go back to the wineries. read more

Fish Gaucho, Paso Robles -- Beautiful Room, Candied Beef & the Great Butter Incident September 3, 2026 Fish Gaucho came highly recommended--one of those Paso Robles restaurants that seems to appear on every "best dinner" list. So I went in wanting to love it. And visually, I almost did. The room is gorgeous: glowing tequila shelves, weathered wood, Mexican folk-art touches, barrels overhead, illuminated fish dangling from the ceiling like Jacques Cousteau opened a nightclub. The place has personality. The food and I had a more complicated relationship. We started with the house-made warm corn tortilla chips, guacamole, and salsa trio: roasted Roma tomato, avocado tomatillo, and pineapple-jicama pico. Fresh, warm, generous, pleasant. A good start. The Wagyu tartare was beautifully plated: Snake River Farms flat iron, egg yolk, Felipe's hot sauce, chive oil, herbs, beet purée and toast points. It looked terrific. Flavor-wise, though, it was oddly polite. With that lineup of ingredients, I expected fireworks. Instead, everyone seemed to show up for the meeting without anyone volunteering to chair it. The ahi crudo was also handsome, with avocado, peppers, greens and crisp elements, but I wanted more acid, salinity and tension. Everything seemed fresh. Nothing seemed especially angry about being alive. Sometimes crudo needs just a tiny bit of anger. Then came the short-rib tacos. Beautiful. Tender beef, peppers, salsa, soft tortillas. And grotesquely sweet. Not "pleasantly caramelized." Sweet enough that I wondered whether the short rib had been braised by the pastry chef. Desperate for balance, I reached for the house hot sauce, which turned out to be a Carolina Reaper/ghost pepper combination. So the tacos went from candied beef to chemical warfare in about three seconds. There was apparently no middle setting. The sauce did cut the sweetness, in roughly the same way a house fire helps you forget the air conditioner is broken. Then came the enchilada soup, which looked wonderfully comforting: a broad reddish-orange broth decorated with cabbage, onions, herbs, red peppers and other garnishes, with warm flour tortillas alongside. Visually, it promised grandmother. It delivered butter. Lots and lots of butter. There simply wasn't enough love underneath it. Instead of layered chile, roasted depth, acidity and warmth, the butter seemed to flatten everything. The garnishes were all present and accounted for, and the tortillas helped, but the broth itself felt rich without being soulful. The cocktail was attractive and enjoyable, with its chile-coated rim and dried citrus wheel, and fit the room perfectly. That became the theme of the evening: Almost everything looked better than it tasted. I didn't have a bad meal. The ingredients were good, the presentation thoughtful, and there is clearly talent in the kitchen. My issue was balance. One dish needed more acid. Another was absurdly sweet. The soup had richness without enough depth. And the attempted rescue sauce could probably remove barnacles from a fishing boat. Maybe I caught an off night. Maybe my palate and the chef were simply having philosophical differences. Entirely possible. But reputation changes the equation. When a neighborhood restaurant gives you a pretty good dinner, you leave happy. When one of Paso Robles' most frequently recommended restaurants gives you a pretty good dinner, you leave wondering where the famous part went. I loved the room, admired the presentation, respected the ambition, and survived the tacos. But somewhere between the elegant tartare, understated ahi crudo, dessert-disguised-as-short-rib tacos and the Great Butter Enchilada Incident of 2026, Fish Gaucho and I failed to fall in love. We had dinner here after a long day of driving and an afternoon of wine tasting at Daou Winery, and it was a nice way to wrap up the day. The restaurant is right in the heart of downtown Paso Robles, making it an easy stop if you're exploring the area. We had reservations through OpenTable and arrived a little early. They seated us within a few minutes, and although outdoor seating was available, it was around 97°, so we were happy to wait for an indoor table. The inside has a really cool Spanish hacienda vibe with rustic wood beams, warm lighting, and plenty of unique décor to take in. It's a fun space with lots of character and is connected in the back to the tiki bar next door, making it easy to continue the evening with a drink. The atmosphere was lively without being overly loud, and we really enjoyed the classic '80s music playing softly in the background. The oysters were fresh and very good. My wife ordered the ceviche and enjoyed it. I had the hanger steak salad--it was decent, but I'd probably skip the beets next time and order something different. Overall, the food was good, but it didn't quite rise to the level of "great." Service was friendly and attentive throughout the meal. Overall, Fish Gaucho is worth a visit for its downtown location, unique Spanish-inspired atmosphere, and solid food. While there are probably stronger culinary options in Paso Robles, we'd happily come back to enjoy the ambiance, check out the connected tiki bar, and sample a few different menu items. read more

Our server was blown out, with 2 large groups ahead of us, yet she gave us a heads up that she'd be a moment & once she got to our table all was good; in short, good service as in letting the patron know what was up. The shrimp ceviche my husband ordered was outrageously too sweet and the fish tacos were definitely one note no seasoning no acid very very disappointing. But our server swooped in and saved the day brought my son and I beef posole on the house and it was a hit. We went to Fish Gaucho in Paso Robles excited because of the numerous recommendations, but not really knowing exactly what to expect, and it ended up being one of those experiences that just kept getting better as it went. From the moment we walked in, everything felt intentional, warm, and thoughtfully done. It was the kind of night where the food, service, and atmosphere all lined up in a way that made the entire experience just that, a spectacular "experience." *Service: the service was outstanding across the board. Alex, our bartender, was extremely knowledgeable, friendly, and genuinely helpful. He felt more like a sommelier for tequila. He custom curated an extra añejo tequila flight for us that was incredible. He walked us through each one, explained the differences, the aging, the flavor profiles, the growers and distilleries, growing conditions, and little details that made it educational and really fun. It was fascinating and honestly one of the highlights of the night. Our server, Rebecca, was fantastic. She was super knowledgeable, friendly, and completely down to earth. Talking with her felt like talking to a friend who just happened to know the menu, the restaurant, the staff, the ingredients, the decor, and everything else inside and out. She was amazing. Every person we interacted with was kind, personable, and clearly cared about the experience we were having. The service alone made the night feel special. *Food: the food was spectacular. Period. Hands down. Top tier! The aji tacos were unbelievable. They come four to an order, street sized, but absolutely loaded with fish. The fish was chilled, fresh, and incredibly clean tasting. The green chili added just the right amount of tartness and smokiness to balance all that richness and buttery depth. It was a perfect dish. I couldn't have asked for more. I'd eat it every day. We ordered the chips and salsa(s) to start. A huge basket of warm homemade chips and 3 types of made from scratch salsas were amazing! Everything felt curated with care and deliberation. The ingredients were clearly top quality, and every plate felt thoughtfully built, not rushed or generic, but given individual attention and love to arrive at your table with intention and perfection. This was definitely food created with respect for flavor, presentation and customer perception. *Ambiance: the atmosphere was open but still warm with worn woods and fabrics and felt comfortable, cozy and relaxed. It felt western-historic with a modern flair. Comfortable, inviting, and not cramped at all. It was a bit loud, but not overwhelming, with energy in the room but didn't feel chaotic. While the decor was deliberate and strong, it added to the experience instead of distracting from it. The 20 foot wide and 25-30' high wall of tequilas (they have over 250 types) was amazing and beautiful, really added to the look and feel. *Value: for the quality of the food, the quantity, the level of service, and the overall experience, the value here felt more than fair. This is the kind of place where you leave feeling like what you paid for was absolutely worth every penny for what you received. *Overall: this was an exceptional dining experience. We made a reservation for Saturday evening at 715 on the patio. First observation was that the tables are all cornered towards the street for both parties (if 2 of you). While I understand this is probably to fit more tables, better views, it makes it very hard to converse with the servers as they are always behind you. We never did hear the name of our server as he wasn't super welcoming and kinda just came up and stood there waiting for us to basically say whatever. He wasn't super attentive throughout the meal and we could see he had various tables throughout the restaurant which made it probably more difficult going in and out of the patio area. We also had another server fill our water pitcher which was appreciated. The carne asada was ordered as medium came out medium rare to which we did ask for an adjustment and came back medium well. There was very little spice or flavor to the meat. Was almost rubbery after the recook. Was difficult for to know the intention behind the dish as tortilla was given, but it was also served with mashed potatoes. Stewed tomatoes and white onions was also included as questionable intention. The ceviche and margarita were the highlights! Halibut was the fish for the day in ceviche. There was a nice balance of acidity and the tortillas were well fried. I do have to mention the size of the water glasses were pretty comical (as seen in the margarita picture). We did ask for larger glass of ice water which was provided. I feel the place is maybe a little over hyped. As someone from DC we do have a lot similar restaurants. Great food, friendly and responsive service, and a lively atmosphere have put Fish Gaucho on our list of central coast (ish) restaurants we must return to often. We had a large group dinner here for my wife's 40th birthday and every single person in our 11-person group was highly satisfied with their drinks and entrees, which says a lot for such a variety of orders. Given the restaurant's title, many of us decided to forego other appetizing options to try the seafood, and we were happy we did. Personally, I very much enjoyed my ahi tacos, which tasted fresh and were layered with texture and flavor from the other veggies and sauces. I also had the Otra Vez cocktail, a rum-based drink with orange and lime flavors that was a bit intense but tasty. And honestly, I prefer that to having weak/mild drinks without much personality. Our group really came to appreciate Fish Gaucho the night after we visited; we had dinner at a nearby pizza place and were underwhelmed with the service and cocktails. There's something about Fish Gaucho that feels like a little evening escape without ever leaving town. I've been here a handful of times, and tonight felt like the perfect excuse to return. I wanted to treat a friend who had helped me out recently, and since she hadn't been in a while, we decided to keep it simple with appetizers and a cocktail during happy hour. We grabbed a spot in the bar area, which is one of my favorite parts of the restaurant. It's thoughtfully laid out with high-top tables facing the bar, and behind it, a striking wall of liquor, mostly tequila, like a glowing amber library. Tangerine-Thyme running at about $10.00 - Fresh pressed tangerine, thyme, lime, agave, sotol, volcanic lava salt and it was a standout. The black salt rim added just the right edge, and while it wasn't overly citrusy, you could definitely taste that smoky mezcal coming through in a really balanced way. For food, we started with tortilla chips and three salsas: - a roasted roma tomato with depth and warmth - a lighter greenish-avacado and tomatillo salsa - and a pineapple, jicama and jalapeño pico, that had a sneaky kick in a few bites - we also dabbled into the Morro Bay guacamole...really good. We also ordered a fresh fish dish - the Ahi Crudo - It came with four large, sturdy chips for scooping, topped with a bright slaw and finished with thin slices of spicy red pepper. Cilantro creama and a lime vinaigrette rounded out this fresh dish What really rounded out the experience was the service. Our server struck that perfect balance, attentive without hovering, friendly without feeling forced. And the owner (or manager) was out on the floor, moving from table to table, refilling waters and checking in. That kind of presence says a lot. You can feel that they genuinely care about how people are treated here. All in all, it was one of those easy, enjoyable evenings where everything just clicks. I've been here twice - once for happy hour and once during regular dinner hours. It's a fun place with excellent cocktails and decent but not authentic Mexican food. Service is friendly and helpful. The ambiance and food is what you'd expect to find in a gentrified suburban neighborhood. My most recent visit was during HH which offers smaller portions and thus, allowed me to try more things. My party shared the fish tacos, the short rib tacos, the nachos, and the ahi crudo. The tacos are small but tasty. Despite the restaurant's name, I preferred the short rib tacos to the fish ones. The nachos were ok but I felt there was more beans than beef and could've used more flavor and spice. The ahi crudo was a refreshing dish but there was too much crema. For dessert, we had the churros which were very soft almost batter like in the middle. I'd come back here for the drinks and maybe the tacos. read more

I ate at Fish Gaucho on Monday after a friend suggested giving it another try. I had been here once before and honestly didn't care for the food at all, so I never came back. Thought this visit would be different. I ordered the new salmon dish on the menu and I'll give credit where it's due, it was honestly amazing going down. The salmon skin was buttery, crispy, and tasted amazingly. The fish itself was more of a seared style, almost like sushi or poke, lightly cooked on the outside and raw in the middle. Flavor-wise, it was really good. Unfortunately, later that same night I woke up with intense stomach pain. It's now Wednesday and I'm still dealing with stomach cramping and nausea. I didn't eat or drink anything else that night nor at the restaurant, so the salmon is the only thing I can narrow it down to. Off of memory Service was TERRIBLE, our waitress was rude, impatient, and refused everything we asked for, including sliced avocado. The place was loud and cramped, tables packed too tightly together bathroom was gross, kitchen was wide open and we could see the corners they cut by stacking things on top of other things, i.e. one dessert plate on top of another. the options were lacking variety and flavor, at the time it was a single page and although the things we selected sounded good they arrived as you can see in the pictures, to be lacking substance and flavor. I give 3.5 stars due to the disappointing cod tacos. I think if they give you a tiny piece of fish for happy hour or the size or quality is different they should let you know- hey this will be a small portion etc. You can barely see the fish in fact, it was the size of my pinky finger if not smaller and I mostly had two mango salsa tacos for $13- not two cod tacos. The sweet jam/salsa kind of throws you off at first because you think you have a bitter tomatillo but damn.. this taco is bommmb' meat quality is 10/10! I was missing a little crema on top but perfect taco. Service is good and everyone is attentive and comes by with food fast and updates you, so that is nice. There's a lot of moving parts bringing things and refilling your waters. My main complaint was the lack of protein in the taco I felt like I just had a vegan or vegetarian taco. You can see from the pictures- the lack of fish. Can you even find it? The menu is creative and interesting so I would come back just never again for HH fish tacos. Another beautiful day, Paso Robles. We were going to a winery but we want to be responsible and eat tasty food first. I knew just the place Fish Gaucho. There were four adults, one toddler and one large puppy. Fish Gaucho had us covered they have patio seating and is dog friendly. We decided to order a few plates of the tacos and selected a variety of types. I personally love the mango cod and ahi tacos but they were all delicious. I wish I had taken a photo, but everyone was hungry and I kept having hands blocking the food. Our server was so kind and patient with our large puppy. We ended with the churros and they were soft, delicious, and warm. The Burro Burrito was recommended however the unique mixed ingredients and flavors weren't my jam. *This review is a for a to go order* Was in town from the Bay Area and we were craving Mexican food. Definitely a solid spot! Got the shrimp ceviche and the wagyu California burro. The burro was huge, and can definitely be shared between two people. It was packed with ingredients and a good amount of meat, cheese, salsa, and wedge potatoes. I will say the burro was a bit too salty after you got halfway through the burrito, especially when eating the pickled onion and chili. As for the ceviche, it tasted quite fresh. We heard great reviews for this place while in town for a long weekend and waited for our last night to enjoy their cuisine. After enjoying a drink at their other property, 1122 Speak Easy, we walked over for dinner, arriving at 8:25 on Sunday evening. We were met at the door by a rude waitress who advised the kitchen was closed. When we questioned that their posted hours reflected they served until 9:00, she said, "we've already called it for the night." I called and spoke to a manager, and she said it had been slow recently and they often close early to lower their costs. Moral of the story here is don't depend on their posted hours if want to dine here! read more

A lively, dog-friendly restaurant in downtown Paso Robles. We sat on the heated patio since we had our dog. Several servers came by to meet her, which was very sweet. We started with the delicious, pretty and refreshing margaritas. I had the short rib with green chili sauce, jalapeño mashed potatoes and a fried egg, served with flour tortillas. It was so good!! And very rich. Had to bring half home. My husband had the short rib enchiladas, which were also delicious. It has enchilada sauce but isn't drowning, so all the flavors came thru. I decided to give this place a try and I feel it was over hyped.. I ordered the New York steak and my husband had the rib eye.. both were very bland no flavor at all if it wasn't for the chorizo in the New York plate it would have flavor.. we went on Valentine's Day and it was super packed we knew it'd be a wait but wasn't expecting it to be as tight as it was.. we were sat in the bar area and no two people could walk past each other so if you needed to leave or go to the ladies room you had to wait for the server to pass.. it was hard to get our fab to leave or even order dessert I had to go find someone to just ring us up.. The place itself was nice the decor was pretty neat.. I just wish the food and service had been great as it was also pricy... I don't think we'll be back our experience was not great. read more

I've always wanted to eat here given that it's always busy whenever I pass through Paso. However, I feel like the food was nothing special and they charge for EVERYTHING. There is a 3% surcharge for the use of a credit card and they charge $1.75 for clear ice. For $17 cocktails, I would expect that clear ice was included. Had a very nice birthday family dinner at the Fish Gaucho last weekend. The place was festive and hopping with energy. Service was attentive, friendly and thoughtful. They brought out a small flan for the birthday girl which we appreciated. The food was delicious and I would like to try more!
