Overall, the resort is a great place to spend a weekend. It includes three outdoor pools with a…read more235-foot waterslide (the spa pool is adults only); a 27-hole championship golf course; a full-service spa with therapy baths, steam room, fitness center, and cabana rentals; hiking and biking trails with stunning views; a bocce court; and four restaurants offering Southwestern specialties and organic cuisine. But, there are some things to note, namely on cost: 1. There are great "summer" rates and packages available - they usually run from mid-May until just before Labor Day. 2. Valet parking is $42 a day - there really isn't another option. 3. The resort fee is $68.73 per day (that includes tax) 4. Food and drink are VERY pricey - especially breakfast and lunch (my small egg white omelet with greens on the side was $29). If you have the ability, use the To-Go coffee and bakery spot next to Core Kitchen & Bar. They are open until 11am everyday. 5. They do cater, fairly well, to gluten-free needs. Other things to note: We were in room 2805 - a beautiful, clean, and comfortable room. It was so nice to have a fire pit on our terrace to enjoy (as well as the wildlife that stopped by to say hi). Note that there is a sidewalk that runs the length of the hotel, right in front of the fire pits so during the day, it does not feel as private. The spa cabana was worth the price tag if you plan on wanting to be outside all day and want to keep cool in between soaking in the sun or swimming in the pool. It's also adults-only. The spa, itself is beautiful with every amenity you'd need for a relaxing day.

There is outdoor seating with small tables and misters to stay cool. The inside has a good amount of space and A/C is on spot. There is also a bar with a good number of seats available. This might be first come first served but I am not totally sure. The food is a really good spread of options. Pancakes, german pancakes, french toast, eggs benedict(s) monte cristo, omelets, croque madame, country chicken with biscuits and sausage gravy, chilaquiles con pollo, avocado toast, savory crepe, and even a breakfast pizza. Oh and they offer a few skillet options too-southwest, loaded baked potato, and sausage and peppers skillet. So many options!! I can't speak too much for lunch but I did see burgers on the menu. Not too helpful in that arena sorry. The eggs Benedict with ham was awesome. Side of potatoes with a bit of all seasoning and a side salad with awesome light dressing comes with it. The dutch baby was also great. A german pancake served savory with sausage. Huge portion. Come check this place out and make sure if you don't want to wait you call in advance when driving there and ask to get on their "wait list" you may not be able to get a reservation but you can do this. When we entered the restaurant, I was immediately impressed with all of the accolades that Amelia's Kitchen seems to have accrued over the years. Maybe that set my expectations too high. We made a reservation, which I highly recommend, so we were quickly seated. but it did take a bit for someone to actually come and greet us and take our drink orders after being sat down. Then it was probably another 40 minutes before we actually got our food. I'm not sure if it was this lag time that affected the food quality, but several of my items were just lukewarm and some even cold? The star of the show was definitely, the molcajete. This came out sizzling and full to the brim with shrimp, nopales, chicken, asada, cheese, and lots of other goodies. In hindsight, I probably should've ordered one for myself. I went with the chicken mole enchiladas. Again, the sauce was okay but not super spicy, and it was a little cold, as was my side of rice and beans. We also ordered the mini birria chimis to share. and these were just OK, they tasted like frozen food. Overall, if you come here, I highly recommend getting the molcajete, but can't really vouch for any other items. Maybe we'll try it again on a less busy night.

The mussels were good, tasty broth, and grilled bread to soak up the sauce. We also ordered a tagliatelle bolognese that was fine, decent taste, hot and a generous helping.
