Snce we arrived a little early, and our friend was en route, we decided to try the scallion pancakes, with the Chengdu spicy dumplings and sesame bread which was enthusiastically recommended by Jeanne. The appetizers arrived and we all enjoyed them. The dumplings arrived in a spicy broth-like elixir that complemented the soft pillowy pockets of seasoned pork.The scallion pancakes were mediocre at best, but the sesame bread was amazing!! It had the perfect texture and savory flavor that was enjoyed by all. For our entrees, we ordered two dishes of the Stir Fried Shrimp with Yibin Chili and asparagus (extremely delicious), a spicy Clay Pot Fish, Beef and Napa Cabbage with spicy chili sauce (incredible spicy flavor!), Hot and Spicy Chicken (chunks of deep fried chicken, yum!!), Combination Fried Rice, and an order of the sauteed snow pea leaves. There's plenty of seating with booths, small tables, and a few large round tables for bigger groups. They really went all out on the panda theme with the interior decor. Service was good. Our waitress (who I'm pretty sure was the owner) mentioned that the bullfrog dishes are prepared fresh to order. You can tell they take a lot of pride in the quality of the food here. We ordered the sautéed bullfrog with pickled pepper (泡椒牛蛙), braised pork liver (老烧猪肝), and the house special spicy hotpot (极品毛血旺). The bullfrog was super tender and fresh with just a bit of heat. The pork liver was really flavorful -- a little salty, but that's expected and it went great with rice. The spicy hotpot was amazing -- the chicken and beef were unbelievably tender, almost fish-like in texture. Probably the best version of this dish I've had in DFW. I also liked that the dishes weren't drowning in oil like a lot of Sichuan spots -- just enough for flavor and color. Pro tip: don't skip dessert, especially the brown sugar glutinous rice cake (爆浆红糖糍粑). Even though we were already full, we had to try it.
