We happened by this little gem looking for a new place to have a Sunday brunch, so happy we stopped here. Everything about EggShell Bistro is perfect! Alissa was our server and was so knowledgeable on every aspect of each dish that we asked for her suggestions - I am so glad we did! We love, love, love the Chinese Herbal Tea egg~ (This has to be the best food server in town, she hit the mark on everything)-we thought she was the owner! After getting a little more information Alissa suggested the "Mixed Heirloom Potato Frittata" ~ It was simply amazing! My friend also loved his Parisian Toast, (which looked tempting!) Went mid-morning on a weekday to try the coffee (I'd heard so much about it). It absolutely lived up to its reputation. Brian (the Barrista) walked us through the process of making the perfect cup which made it even more enjoyable. We also tried the Chinese Herbal Tea Egg and the Smoked Lamb Bacon. Both were quite unique and tasty. I'm very excited to go back again to try some other breakfast entrees. This could quickly become my new "go to" place for business meetings or a morning delight. This place is takes coffee seriously: they source beans from Blue Bottle in San Francisco and employ techniques that a only a true connoisseur would attempt. I recommend the El Salvador blend for a good morning cup of coffee. Try coffee Japanese siphoned -- which maintains the oils found in the beans for a smooth, velvety finish. read more

I really wanted to give Eggshell five starts. The decor is adorable, there's a GORGEOUS espresso machine sitting on the counter, and the menu has some good items. The cup of African coffee for $3 was lukewarm, the brioche with poached egg was supposed to come with asparagus ($9) - which, it technically did, but...it looked like sprinkled little pieces of slivered green onions. I doubt it was even half of an asparagus spear. They did not have fresh ground pepper. The piece of brioche itself was very good though. The whole city of Carmel is fake and this "bistro" is just as fake. Fake retro look, fake decor, fake French feel. Fake. The service is horrible, slow and annoying. We watched people get served that came after we arrived, and had to wait a long time to get the check while the waiter was chatting with another table. Food was nothing short of disappointing. I ate here very early on a Saturday morning and I was the only customer in the place at the time. The waiter was very friendly and I had great service (of course, being the only customer was I'm sure part of it). I loved the coffee, and sweet potato hash with chorizo and two poached eggs. I had a side of lamb bacon which was good but just a little too sweet for my taste. I read several reviews that complained about the portion size and while I tend to eat a lot of food at a meal, I had no issues with the portion size and I was not too stuffed when I left but very much satisfied (probably over did it with the bacon). I contemplated giving 4 stars due to the price ($21+ between the hash, coffee, bacon and tax) but you can't expect to eat anywhere in Carmel City Center cheaply, as far as I can tell so far, so as long as you keep that in mind when you go there, you can't complain about it afterwards as long as you were very happy with the other factors. read more

I am a bit worried about writing anything but a stellar review on this place as it seems that everyone else that has has gotten a lot of backlash from Eggshell Bistro staff. So I talked my friends into going here the day after my Bachlorette party. I heard about it a few months ago and have been really wanting to try it. When we walked inside it looked like a Vintage diner you might see in California. Liked the look of it. When we arrived there were two other tables seated. 2 servers, a couple of people in the kitchen and one other person that was by the coffee bar. They gave us the drink menu. No food menu. He came back to get our drink order. The server had this nonchalant air of not giving a damn which I think was the theme of this place. When our server took forever to come back and ask us what we wanted to drink I told my friends, " Perhaps they are doing the Slow food movement. That is big in Europe.... " trying to make them feel better. My friend exclaimed I am not in Europe! I want some coffee" eventually after a half an hour or so we got a cup of coffee. My friends got one of the brews of the day. I got the New Orleans Iced Coffee. It was good. The only redeeming thing about our trip. After we placed our drink order we had to ask for a food menu. Then we had to wait for those menus, wait for him to come back to take our food order and then you guessed it wait Forever for our food. Total wait time for food 1 hr and 20 min. And for whatever reason our friend at the table that just ordered a la cart toast and a poached egg waited the longest. Our food came out and we were still waiting on hers. I think she wanted to kill me at this point bc she really wanted to go to Bubs and I told her this place was going to be great. I ordered the sandwich with the Poached egg and pork belly. Don't remember the name because it was just that memorable. It was so salty and they forgot to put the cheese on it so he brought a side of some shredded Asiago. Which at that point isn't going to melt on the sandwich...but whatever it didn't make a difference. The side salad of Greens was also incredibly salty. My friends tomato and cheese panini, pancetta was really salty and we thought that made sense, pancetta can be super salty but her salad was drenched in salt also. Knowing how long it took to get anything. And getting Zero refills on water I had my credit card sitting out for a good 20 minutes. Nevermind splitting the bill I can't imagine how long that would of taken. I am bummed I wanted it to be Amazing. And perhaps we are all missing something but I feel anything I have heard about this place in the past has been overstated. Very personable and passionate about his craft. If you're looking for a grab-and-go breakfast or something gluten and dairy free, I'd keep looking. Pleasantly surprised to find a new brunch place. The restaurant was small enough that you didn't feel like you were part of a crowd but yet we were able to be sat right away. Alas, a restaurant worth raving about. It's been so long that I've eaten a "GREAT" meal until today when I had the shakshuka. It was not your ordinary breakfast which I love- it was as beautiful to look at as it tasted in my mouth. This dish was so unique and exactly what I wanted on this dreary winter day- finally some type of excitement! We had a great brunch yesterday at Eggshell, but breakfast any day of the week will be on our short list too. Great savory egg dishes like the Mediterranean favorite shakshuka. Also great quiche like egg and ham tarts. Some in our family had kedgeree, an egg over crispy cooked rice and vegetables that is my new favorite. Eggshell has a unique atmosphere that other breakfast/brunch places in Indy lack. I'm not a coffee person, but the coffee was excellent. No cream or sugar needed. The menu offered some really great options that were out of the ordinary- try the shakshuka. Service was friendly and quick. I was excited to see a new breakfast place in Carmel but was quickly disappointed upon entering. I waited with my 2 children for 5 minutes before anyone acknowledged us. When we sat down I asked for a children's menu and found out they did not have one. So with that being said I paid $10 for French toast & $3 for a side of bacon for my 5 year old. Having difficulty swallowing that cost I decided to stay because it's harder to leave with kids and suck up the prices. The second disappointment was the cost of the coffee and you have to pay for refills on coffee. A positive is the unique variety of food but it is very pricey for small portions. Our bill for 3 people was over $50 for breakfast. Will not go back unless they become more accommodating for families and adjust the prices. read more

This is very true, and you would do well to acknowledge this instead of coming here with IHOP expectations only to have them dashed with a small, laid-back cafe serving incredibly delicious food at a price that reflects the quality. The menu, while inventive, is not inaccessible. I had the Parisian toast, and my company had the caprese stata, both of which were expertly prepared, flavorful, and completely on point. I also had a pot of the black tea which was the perfect accompaniment. Our server was refreshingly friendly and sincere. Yesterday was my second visit to Eggshell Bistro--definitely not as positive as the first. I'll begin with the service. Our waitress may have been a new hire...she mentioned that she was still learning to use Eggshell's supercool iPad billing system. As it turns out, that was the only part of the service that went smoothly. She took our order which included coffees all around and three OJs. When she brought the coffee to the table, we reminded her that we needed cream and sugar. She said she'd bring it right and away and then proceeded to disappear for five minutes while our coffee (which BTW, does not include free refills) got cold. I finally gave up and walked inside (we were eating outside), only to see her armed with a creamer and the oversized sugar/sweetener can, headed out the door. So, I turned around and followed her out to our table. About 30 minutes later, our food arrived, but the OJ was still MIA. After delivering the last plate, she asked us if there was anything else. We reminded her of the orange juice, which, IMO, should have arrived before the coffee, not after the meal. The food was okay. The Parisian toast looks tastier than it is. It arrived covered in currant preserves, fresh berries, and a a dash of confectioners sugar. The dish was not sweet enough for my taste and there was no syrup--perhaps the waitress forgot it? The wide bacon was greasy, undercooked, and folded in half, which made the measly two slice serving look even smaller. My friends seemed to enjoy their meals, but I was left longing for the sweet potato hash that arrived at a nearby table. The atmosphere here makes you think your in a French bistro and it's really nice. The food was pretty good, French toast and coffee were great my wife's food was a little salty. Overall a unique and uncommon selection for breakfast food. However the wait at the table just to place our order was 20mins and then it took almost 50mins to get our breakfast order once we placed it. I ate there last Friday on their first day and thoroughly enjoyed it. I had the quiche, which was amazing. I even went back a few days later to have it again. The coffee was also some of the most flavorful I had tasted. I just had a drip coffee but I'm looking forward to coming back and trying some of the other varieties they offer. I have been here twice and have been impressed with the food both times! Here is the breakdown: Food: I have had the Luna sandwich (vegetarian) and the Heirloom Potato Frittata and they were both delicious. I like that the serving sizes are normal, instead of super sized like many American restaurants. The flavors are carefully crafted and there aren't even salt and pepper shakers on the tables. Believe me, if you appreciate finely crafted food, you won't need any extra seasoning. This place also makes the most PERFECTLY poached egg. They also specialize in coffee and have a fantastic selection. Ambiance: This is a pretty small place and can get pretty cozy. I like that intimate feel though. It may not be everyone's cup of tea. They do have some outside tables but I prefer inside. There are several items, including the chairs, that are from old Parisian cafes and add to the charm of this place. Service: It is always a little slow when you are waiting to be greeted and I do think they need to focus more on the host/hostess position since that is your first impression of the staff once you enter a restaurant. The first server we had was very slow and flustered. I did not see him there on the second visit so I don't know if they got rid of him or he had the day off. I don't think he would be missed if they replaced him. We had a nice server on our second visit. She checked in with us a good amount of times, knew about the menu and was very friendly. Don't go here if you are in a hurry or looking for a friendly atmosphere. We tried to call ahead, and got an answering machine which didn't list days or times that they are serving. When we arrived there was one couple ahead of us. After awhile we started to joke with the other couple about the long wait with no acknowledgement by the staff that we were even there and the fact that we could see 4 empty tables from where we stood. This is not a big place. The waiting continued as 2 tables that were seated after us were served before us and then I saw our "friends" from earlier leave just as we were being served. I noticed that a nearby table was also having issues and it appeared that they only received one of their 3 entrees, and eventually opted to pay their bill and leave without waiting for the rest of the food to arrive. This place is a culinary adventure. It certainly has the most interesting, unique menu in Carmel. I had to look up some ingredients. Since it was my first time, I had to try the sweet potato hash. It had a delicious blend of flavors. I cleaned my plate. My hubby had the asparagus ham strata, and it was also delicious. Our service was great. I would like to be able to give it five stars but I can't for three reasons. First, it is really pricy; breakfast for 2 cost $37 not including the tip. Second, the coffee was weak for my taste. Lastly, they weren't offering three items on their menu, and it is not an expansive menu to begin with. Quaint, French-themed cafe with a unique menu and friendly service. I particularly liked the atmosphere. The coffee is dripped by the cup so it is fresh and flavorful. The quiche was thick, light, creamy, and balanced - perhaps the best I've ever had. The fruit cup was small, but a perfect complement to our dishes. We were happy to see berries, grapes, and raspberries without the usual melons in most fruit cups. Parking was not as daunting as it seems. I'm surprised it's not busier than it is.
