3 1/2 stars! Eaker BBQ has a great BBQ vibe. Relaxed, welcoming, and the employees are super friendly. We ordered the dry rub pork ribs and the Gochujang ribs. They were cooked really well but just didn't have that big, smoky flavor I love. Not bad at all, just not quite standout. On the flip side, the mac and cheese and cucumber salad were both very tasty, and the boozy banana pudding was really good! I'd definitely come back to try one of their sandwiches next time

Just wow, literally some of the best Que I've had in years. Made Eaker a run destination for my car club on a recent weekend. Made our way from South Austin out to Fredericksburg winding through the backroads. Was worried about parking, but the restaurant is on the west side of town away from the hustle of the shopping district. Special was Hot Honey Pork Belly bites for Saturday. Gotta have some of those right? Half pound of fatty (moist) brisket. Bulgogi Sausage? Yes please! The brisket was tender and flavorful. Now I'm "borrowing" one of my buddies Gochujang Pork Ribs in exchange for one the Pork Belly Bites. Every bite of the Korean inspired Que was amazing start to gut bulging finish. Sides get more love here too. The Kimchi Fried Rice was next level cuisine. I'd literally drive west for this side and ask for a kettle of it versus most Austin Asian offerings. Even the "Boozy" banana pudding was far superior. Well done y'all!

We loved this place! Excellent BBQ, including some with a Korean twist. We tried the brisket, the gochujang ribs, and the bulgogi sausage. All were terrific. The "moist" brisket was smoked perfectly, nice smoke flavor and smoke ring, and oh so juicy. The Korean ribs and sausage were different, but in a good way. We're not huge fans of thick sauces on meat, but the ribs worked, super tender, fall off the bone! Grateful for the ample supply of napkins at the table! We had beans and slaw for side, both delicious! Even the garnishes of pickles and pickled onions were first-class. Very good homemade BBQ sauce too. Super friendly owners and staff. Great meal. Highly recommend!

My wife & I visited Eaker on our way out of town at the end of a 3-day anniversary trip to Fredericksburg & had a great visit. I'm a big Texas BBQ fan & follow the Texas Monthly Top 50, so any time I have a chance to eat at a place recognized by TM I'm in. Our order consisted of moist brisket, 1 link each of brisket boudin & jalapeno cheddar sausage, & 1/2lb of their Korean BBQ ribs. Side for our order were mac n cheese, kimchi fried rice, and a Korean cucumber salad. In order of favorites, the brisket & brisket boudin were the favorite proteins, while the Korean BBQ ribs were the least favorite because they were chewy. The favorite side was clearly the kimchi fried rice with the Korean cucumber salad once again being the least favorite. All in all, it was a solid visit & I would go back again tomorrow. Way to go, Eaker team!

Brisket. Korean ribs. Kimchi fried rice. Beans

The venue is funky, cool and dark- perfect for a hot day in Fredricksburg. We ordered the Korean Ribs, brisket, kimchi fried rice and beans. The flavors are bright and bold- unapologetically different. The meat was moist. Flavorful. Ribs were a little light on meat but beautifully delicious. The fried rice will live on in my memory for years to come. And the beans were rich and paprika smoky- very good. The crew was a little disorganized at first but friendly and gave generous portions. Expensive. But worth it. This is a fresh take on some classics and well worth the trip.

Babbbbyyyyy, if you're thinking about going, GO NOW! It was delicious. The brisket was so tender and literally falling apart. We tried so many different things. I loved the dry rub ribs and sausage, my favorite side was the creamed corn. I didn't get photos of the sides, but we had beans, Mac and cheese, and rice! My husband and I ended up getting 2 sides of that corn though. lol the banana pudding was fire too! Will definitely return next time we visit.

I love kielbasa style sausage and the bulgogi sausage here is in my top 3 all time. A flavor bomb and not greasy. Complex and so damn tasty!!! The pinto beans are just how I love them with lots of black pepper. Kimchi rice and pork belly burnt ends equally delicious. The atmosphere is what you'd expect from a Texas BBQ joint, homey. The staff are very friendly and the owners stopped by the table to check on us and we had great conversation. Next time we will arrive early enough to try their signature ribs. They were sold out when we arrived.

This time around I tried their special - smoked meatloaf with 2 sides. The smokey bbq sauce covering the meat was delicious. The texture was interesting...fell apart easily. Not sure, but I believe a bit of veggies were incorporated and baked into it as well? Nevertheless, tasty. I enjoyed the potato salad and Korean cucumber salad immensely. A must stop when in Fredericksburg, located at the end of Main Street. Military discount offered.

This was our first time to Eaker, and it did not disappoint! The excellent - moist brisket, bulgogi sausage, the Mac and cheese. Honestly, one of my top 5 Mac and cheeses ever... and I'm a Mac and cheese snob! Super cheesy and creamy. The brisket is traditional Texas style, but it was executed well. The great- kimchi fried rice, Korean marinated cucumbers, gochujang ribs. The fried rice is definitely good, but I don't quite understand the hype. Good side, not exceptionally noteworthy. TLDR: get the brisket, bulgogi sausage, and Mac and cheese. Can't go wrong with anything else, but those are the must haves!

Very interesting/weird combination of traditional Texas bbq with Korean influences. But it works. And it works well. I'm a Northerner, so I'm no expert on Texas brisket, but the brisket I had was delicious. Tons of smokey goodness. I maybe could have used a little more pepper, but then again, I really love pepper! The bulgogi sausage was just as good. Full of flavor. Not greasy at all. For sides, we got the Mac and cheese and the cucumber salad. Really great mac and cheese. Creamy and cheesy without overdoing it. And even though the cucumber salad was loaded up with paprika and I don't really even like paprika, I found myself coming back for more and ended up devouring the whole thing. For dessert, we got the banana pudding, which was a great way to top off an excellent meal. Combine good food with friendly staff and a nice outdoor eating area, and you get a 5 star dining experience. Way to go!

TLDR: Family-run spot fusing Texas barbecue with Korean flavors. Standout gochujang ribs and bulgogi sausage plus tasty sides and desserts. With fair prices and warm service, it's an easy Fredericksburg recommendation. Overview: Eaker BBQ (pronounced like "acre") brings mesquite smoke and Korean soul to Main Street in Fredericksburg. String lights, mismatched black-and-white chairs, and wood-top tables set a casual, family-run vibe. Pitmaster Lance Eaker tends a clean mesquite fire and keeps the proteins dialed in, while Boo Eaker leads the sides and desserts, many inspired by her Korean roots. After a successful Houston food truck run and a 2021 move to the Hill Country, they've earned serious nods from Texas Monthly, making the 2021 Top 50 BBQ Joints list and securing an honorable mention on the 2025 edition. Ordering is easy, the service is warm, and prices feel fair for the quality (brisket $36/lb; gochujang ribs $30/lb; links $7 to $8; most sides $3.50). Food: The gochujang ribs are the headliner. They're tender with a gentle, building heat, balanced by sesame and green onion. The kicker is that they make their own gochujang, and it shines here in a way dry-rub ribs often don't. The brisket is very solid, with a pepper-forward bark and honest mesquite smoke; both lean and moist were slightly drier than ideal, but the flavor is all Texas: beefy and bold. The bulgogi sausage is a must-order, with a snappy casing, juicy interior, and that sweet-savory profile that plays perfectly with smoke. As for the sides, the kitchen's "homemade first" approach is clear. The mac and cheese tastes great and never veers artificial, though the Mornay sauce split a bit and pooled some oil in the bottom of the container. The coleslaw is crisp and refreshing, but a touch bitter. The kimchi fried rice has excellent texture (distinct grains, not mushy) and solid seasoning, though it could use an extra pop, maybe a brighter acid or a runny egg to tie it together. Desserts are where Boo really shines: the boozy banana pudding isn't cloying and the rum adds welcome depth. Additionally, the gochujang sugar cookies are fantastic, with a classic chew and a playful, spicy edge. The pecan pie is solid but not essential. Final Thoughts: Eaker is a confident, evolving marriage of Texas barbecue technique and Korean flavors, led by a duo that clearly cares about the details, especially the sides and sweets many joints overlook. A few tweaks (juicier brisket, a tighter Mornay sauce, a brighter note in the fried rice) would push it into destination territory. As it stands, this is an easy recommendation for anyone passing through Fredericksburg, as well as locals looking for a fresh take on Hill Country barbecue. I'm excited to see where Lance and Boo take it next.

Everything was better than well, and well, everything went fast . It's the best BBQ I've ever had , love the Korean twist , the sides are all house made , including the pickles , pickled onions , kimchi , and everything else .. it's a one of a kind twist , Lance and Boo , allong with the rest of that Eaker family in FBG, do it right and make everyone feel welcomed , and also leaving fully satisfied. Weather pending , my favorite spots are out back under the huge Oak, or right in the front under the huge pecan tree. The seating inside has expanded , and the service was super friendly. The country music playing the back ground matched the heavenly BBQ smell in the air. If you stop once you'll want to go back , guarantee it.

I am not a huge fan of barbecue food so my expectations were pretty low. However the food was shockingly good. We ordered a lot of different meats and sides. I loved the turkey, gochujang ribs, Mac and the kimchi fried rice. Our group of 13 had nothing but good things to say about the food and service. I highly recommend coming here if you're craving barbecue!

How early should one arrive to ensure they don't run out? How long is the typical line?

We arrived on a Thursday ten minutes before the opening, and were second in line. Fifteen minutes after the opening, the line was out the door. It is always best in the world of BBQ to go early.

When the dish arrived, however, the steak was clearly overcooked and closer to well done than medium-rare. When we raised the concern, the waiter claimed she had told us the meat would come out anywhere from medium-rare to well done due to how it sits in the warmer, and then suggested we must have misunderstood her initial explanation. This contradiction was frustrating and unprofessional, especially as it felt like our concern was being dismissed rather than addressed. Both the waiter and manager insisted the steak was cooked correctly, despite it clearly not being medium-rare. After we sent it back, they replaced it with a filet that was prepared properly. They did remove the original entrée from the bill, but then charged us for the filet at cost. Given the situation, it would have been more appropriate to simply substitute the filet at the original menu price. Unfortunately, my meal was also very underwhelming. The fish lacked flavor and was not enjoyable. Overall, it was a disappointing experience, especially for a special anniversary dinner. I will say -- the hummus plate was delightful. Fredericksburg has a certain type of demographic and at times I feel they are unfairly nitpicky to the local businesses. When the restaurant is crowded, it's lively and full of smiling faces and servers who are eager to serve and make sure that you enjoy your meal. Restaurant was also clean on our visit and the restrooms were well taken care of. I can't wait to come again for breakfast!
