I waddled in skeptical. After all, we beavers know a thing or two about craftsmanship: sharp teeth, strong wood, steady paws. But the moment those folks poured me a sample of their American Single Malt, I realized I was in the presence of fellow artisans--humans who build with barley the way I build with birch. The aroma? Like sniffing a warm cedar log at sunset, with a hint of orchard fruit drifting downstream. The taste? Smooth as a freshly planed maple branch, with a delicious grain character that made me contemplate abandoning dam construction to pursue professional sipping full-time. The finish? Long, warm, and rich--lingering like the satisfaction of placing the final stick on a perfectly engineered lodge roof. And don't get me started on the place itself. The distillery is polished, welcoming, and smells pleasantly of oak instead of predators. The staff? Delightful! Not one of them tried to trap me, and they spoke about their whiskey with the passion of creatures who truly love their craft. Westward, my whiskered friends, you have built something remarkable. Finding Absinthe is rare, but Pilot House has it, and it's the real deal with the wormwood. They even have the absinthe pour tap, so they can do it up right. In addition to the absinthe, which I absolutely had to get, I also ordered a gin flight. My server, John, was very knowledgeable, friendly, and attentive. The patrons there were all friendly. The atmosphere was comfortable and they had plenty of swag. I bought a tiny bottle of absinthe and a sweatshirt, so I would have fond memories of that fine establishment every time I wore it.

We ended up doing a flight of their Gin and the regular was still by far our favorite. We saw them at the market that weekend a purchased a bottle to bring home! Truly the best Gin I have ever had! I would also like to say as someone who runs a non profit animal rescue Pilot House Distilling donated towards our auction. I put two and two together later. Just goes to show how much they support local.

WorldMark guests are treated to a complimentary tasting, so The Homie and I decided to check this out on 6/18/25. The counter person there was extremely welcoming and knowlegeable. He replied to my inquiry that they have been in business since 2018. He gave us the rundown of all the featured spirits: vodkas, rums, whiskeys, and liqueurs. The Homie selected 3 whiskeys & 3 liqueurs to sample. I selected all five whiskeys and the coffee liqueur. While we sat outside for our tasting, we also saw a deer and osprey. I ended up buying a 375 mL bottle of the Rhubarb Elderberry liqueur to take home. The Homie and a friend also visited today (3/20/25) and purchased some gin for a family member. Approachable and no upsell pressure experienced, one can make a fairly educated choice and purchase.

We ended up buying the love warrior gin, wheat whiskey, bourbon, coffee and cranberry liqueur. Twist our arm why dontcha! Theo was friendly, knowledgeable and gave us recommendations based on what we preferred. He also gave a little backstage tour which gave us more insight into the company and process, and told us about local events, things to do and when the new bottles come out so we could plan future trips. The tasting room is small, just a few stools and one table inside but on a sunny day there are picnic tables outside.
