We were bummed to see that we were a week too early for the fall whiskey festival, but reached out to see if we could stop in for a tasting. Bev, one of the owners, arranged a private tasting for us and we were blown away! Her spirits are exquisite and there is something that will appeal to everyone's palate. Don't sleep on the cocktails - the Old Fashioned flight was delicious and so much fun! Bev pairs her distiller's knowledge with a deep appreciation for the history of the region and the distillery's namesake. Ask her for the story of Ewing Young, then sit back and enjoy her telling it. Throw in an absurdly bucolic setting and you've got the recipe for a perfect day!!

The corn whiskey was smooth and liqeur was subtle in sweetness (which is preferable). The owner was very nice and knew anything you wanted to know about their product. Finding Absinthe is rare, but Pilot House has it, and it's the real deal with the wormwood. They even have the absinthe pour tap, so they can do it up right. In addition to the absinthe, which I absolutely had to get, I also ordered a gin flight. My server, John, was very knowledgeable, friendly, and attentive. The patrons there were all friendly. The atmosphere was comfortable and they had plenty of swag. I bought a tiny bottle of absinthe and a sweatshirt, so I would have fond memories of that fine establishment every time I wore it.
