My partner and I came here for an early valentines day dinner last month. We had our expectations high and were really pleased. Our server was fine, nothing too memorable about our interactions. we started with bread, butter lettuce salad, and a couple of drinks. I'm always shocked when a salad actually tastes good. I got a filet and my boyfriend got a ribeye, both cooked a perfect medium-rare. The truffle fries though...hands down the best part of the meal. For dessert, we were trying to go to Levain but ended up ordering something from their dessert menu. I have no relocation to what it was and I can't seem to find it on any of their menus. I used to come to this restaurant when they first opened, it was nice, service was great, food is perfect but now everything changed. I hate giving bad reviews especially after one bad experience i normally will give a place a second chance and that what i did with CUT DC. I have been there 3 or 4 times before Christmas break and honestly each time is worse than the one before. Once you arrive to check in, one of the 2 ladies is extremely rude and not nice at all, i don't know how she got hired in this place. Again this review is not based in one time experience. One of my experiences i came earlier before my friends show up and i went to the bar to have a drink. I ordered a bottle of wine again A BOTTLE and when my friends showed up the same rude lady asked me to pay in the bar before moving to the table. I told her yea that's fine i will pay everything when i'm done with my dinner. I didn't know that the bar is different despite being in the same area with the same name. Any way i didn't know and instead of telling me nicely or at least bring me the bar bill to my table " which is in the same area" she " the same lady " yelled and said no it's different the bar is different than the restaurant. I understand doing this in a cheap restaurant but not CUT. The bar tender was very nice Gentleman by the way. The service at the table is extremely slow, the staff are very nice but very very slow. I call them 10 times to get more wine or more water. The food is delicious but there's no comparison with CUT London for example. read more

Shockingly low level of service given the price point. I've dined here several times and this was the most disappointing. Had a reservation but was seated for dinner in the lounge area, not the dining room. I definitely felt as though I wasn't dining at the same restaurant and didn't receive the same level of service and attentiveness as those in the adjacent main dining room. A large table adjacent overwhelmed the staff as the lounge was not properly staffed and set up for a full dinner service. There were a number of major service mishaps including my main course going to the wrong table, sitting for several minutes at said table, and picked up and then delivered straight to my table as if it came freshly from the kitchen. This was a major faux pas with no attempt to acknowledge the mistake from anyone. I didn't make a scene, and there was no manager visible anyway, as they were occupied with... the main dining room. 4.5 stars for a great new addition to the Georgetown dining scene. When it comes to steakhouse, Georgetown (and DC in general) doesn't have a ton of options that are both excellent and reasonably priced. You can go to the Four Seasons, but you are probably going to drop some cash. Fortunately, Wolfgang Puck has opened up a brand new spot called The Cut. Located on 31st Street in the Rosewood Hotel, The Cut is the newly remodeled restaurant and rooftop bar that my wife and I took a couple of our New York friends recently to try out. We arrived for our 2pm lunch reservation to find a beautifully decorated restaurant with the classic DC interior and plenty of outside tables by the canal (the latter being something the previous venue in this spot somewhat lacked). We took a seat at one of the tables and our waiter came to greet us. We actually had two waiters working together on our meal, and they were both generally pleasant and knowledgeable. After looking through the menu (which appears a bit limited due to being new and brunch not yet being offered, but still had solid options), we decided to order some drinks. After waiting a little while (not that long, but a little longer than normal), our drinks came out. Not only were they solid, but the waiter gave us a fun corn pasta appetizer on the house for our wait! It was absolutely delicious (nice marketing right there) and showed a service staff that was keeping its eye on us without a word being spoken (the mark of high quality service). We then put in our orders, and our food came out in a reasonable amount of time later. I ordered the steak frites (the cheapest of the 3 steak options), while my wife got the lobster sandwich. The steak was cooked perfectly (which makes me excited for the venue's more expensive options) and my wife's lobster sandwich was solid. I wasn't expecting much from this new spot, but it really delivered. After finishing our food and drink, we paid and then went up to the rooftop bar for post-lunch drinks. The view was absolutely spectacular and the service and drinks on point (although I wish all the beer options from downstairs were available). We relaxed with our drinks for about an hour before finishing up and heading on our way. Overall, The Cut by Wolfgang Puck provided us with a great steakhouse and rooftop bar combo experience. The great venue, service and food was quite the pleasant surprise and gives my wife and I another spot to take friends when they visit us in Georgetown on the weekends. Wonderful (if expensive) fancy meal delivered. Was hoping to make taco Tuesday extra special and Cut was perfect. I love duck, and this was great, with crispy skin and lots of flavor. The vegetable sides went well, and the tacos are assemble on your own so if you don't like cilantro you can leave it off. The crab fried rice was absolutely fantastic, great salt and umami. The habenero salt side was cool. Finally, the chocolate cake was light and fluffy and tasty with some nice berry sides. We had some leftovers, it was a big meal. We ordered a Christmas takeout dinner and were thoroughly impressed. This was one of the best meals we have had in recent memory! Whenever you order to-go, I think we always anticipate a dip in quality or portions and that was certainly NOT the case at Cut! Pick-up was quick, easy, minimal contact and they even had hot chocolate for any waiting done outside. The food was phenomenal - Peking duck tamales, enchiladas, and blue crab fried rice! I decided to check out this restaurant for the first time after seeing Wolf Gang Puck on the local news. The restaurant's ambiance felt upscale and welcoming, once we arrived the hostess escorted us to our seat immediately. The server came over and seemed in a rush to put in the order but since this was our first visit here, we needed a few moments to decide on food. I asked about the complimentary pretzel bread and was told we had to wait and order food first before the bread would be brought to the table (I've never heard of this before at any restaurant). For drinks, I had the WGP Pinot Noir - light and fruity and my partner had the Start Me Up, rum cocktail. The cocktail was a bit on the sweeter side but a very good balance of alcohol and flavor. We decided to skip the appetizers and start with crab fried rice (very popular choice I'd heard), it came out with an egg wrapped around the rice. On the side of the rice was the most delicious, toasted garlic soy sauce, this dish was packed with flavor, texture and a beautiful presentation. Then we waited quite a while for the server to return to our table but eventually we were able to order entrees. As for the entrees, we had the American Wagyu Bavette, very juicy and cooked to perfection and the Bone in New York Steak. The Bone in New York Steak was well-seasoned and the steak sauce was tangy, slightly sweet and the perfect accompaniment. Overall, I had a very good first experience - the food was excellent; however, the service was a bit disappointing, especially at this price point but I would certainly visit again. read more

I give 4 start because there are a few dishes that I didn't favorite. I really like big eyes tuna sashimi. A bit sour, ceamy, salty, and scent of basil. They went together perfectly. Salmon sashimi was boring. Kinda bland. That Korean hot sauce did not fit with it. Pasta was so good. I love it. I would have it every week. I think it had taro inside. So good and fatty. Beef tartare was ok. Nothing special. Steak quality was good. Chocolate souffle melted in my mouth, good choice of icecream. They tasted good together. Drinks were so good. Drinks worth the price. 4.5 stars. This is my third time dining at CUT. I've also dined at CUT in LA. I love this location. It's more intimate. I'll definitely dine in when it reopens. I'm Not sure why it doesn't have more higher ratings. I ordered takeout from tock. I didn't know what to expect at first in terms of the quality. Because when I ordered takeout from Fiola Mare down the street, the quality was just not the same as dine in. But I'm so glad that the take out experience was just as good as dine in at CUT. The Peking duck was the best I've had in the area(I'm from Beijing). I also ordered the Spanish cheesecake. It takes me back to San Sebastián right away after the first bite. It's like taking a trip to Basque Country. I guess when you can't travel back to Spain, order a Spanish cheesecake instead...The whole experience I've had was very much like the moment Anton, from the movie Ratatouille, having the Ratatouille, as it reminded me of my homes Spain and Beijing. I went on December 30 to surprise my boyfriend with a treat, and our reservation was for 7PM. I got there early in case of traffic and was able to be seated right away. We were able to order our food and get pretzel rolls and mustard seed-like butter. Rolls were warm and butter was soft/creamy and we got another order of rolls (free, obvi). My boyfriend got the ribeye steak, I got the salmon with a side of patatas bravas and we had ZERO complaints. This our second Wolfgang Puck, and he's batting 2-0. The only thing is price was expensive but the food was worth it, but just not often. read more

Replacing The Rye Bar in the Rosewood Hotel, Wolfgang Puck's CUT D.C. is a gorgeous space featuring two seating areas -- the luxe restaurant in the hotel lobby and an Uber-posh outdoor furniture laden rooftop bar (cleverly named The CUT Above) atop the hotel with a nice view of the city. Both options serve handcrafted artisan cocktails, wine, beer, and globally-inspired nosh focused on steaks, plant-based and seafood offerings. Reservations are recommended at the hotel restaurant but CUT Above (open noon to 9:00 p.m. daily, weather permitting) offers seating on a first-come, first-serve basis. The ambience is sophisticated and lovely, designed by the French artist Jacques Garcia with just the right melange of urban American meets European details. IMHO it gives a swanky-yet-hip vibe and usually isn't too loud for a comfortable conversation. It's obvious this Mid-Atlantic concept restaurant aspires to happily blend Puck's European influences with the local scene--architecturally, culinarily, and with every sip in CUT's upscale bar ware. Even the libations reflect this lovely mix of Old World and New World with a master sommelier curated wine list of over 500 wines paying homage a wide range of sources from as far as Puck's Austrian roots as well as Virginia vineyards. The beer list features choices from imports and local microbreweries as well. The cocktails and bar menu celebrates local distilleries, and although it does not offer the broad variety of whiskeys it's predecessor proffered, it does have a partnership with Virginia's Catoctin Creek Distillery to make a signature restaurant exclusive Rye. I don't think you could go wrong from the menu options, but I highly recommend the melt-in-your-mouth Virginia-sourced wagyu beef and the Chesapeake Bay rock fish. Everything is sourced from local ranchers, farmers, fishermen and creameries whenever possible. Another lovely option is the Peking-style Duck, sourced from local farms, served on puffy cloud tortillas with a rich cherry flavor and a touch of spice. If I am ever able to push away from the lovely appetizers and entrees before I'm stuffed to the gills and actually save enough room for dessert, I'd love to try the dark chocolate soufflé! read more

I had high expectations for Cut in the charming Rosewood hotel as I had a wonderful dining experience at the BH location years ago. We went on a Thursday night at 7:30. It is not a large space, it is intimate with the lights turned down low. My husband used the candle to read the menu. It was crowded and for those who have a hard time hearing, I would not recommend. Our wait person came to the table right away and greeted us. I will give her a break since she was wearing a mask. It was very hard to hear her. We ordered drinks and we were disappointed with the size of the martini. She had a few others on her tray and they were poured higher. We did point it out to her. She took it away and brought it back a splash higher. She was clearly annoyed. We did notice two men who sat down next to us were immediately given complementary champagne. We wondered why them? There were a few employees standing in the dining room keeping an eye on the service. However, nobody came over to say hello or check in. We let our server know we did not want to rush. She said we should order everything at once because the steaks take awhile. That was not the case as our steaks arrived while we were still eating our appetizers. The appetizers were tasty each with a unique flavor. The sunchoke tortellini was our favorite. It was a generous portion and could be a meal. The smoked cauliflower was served on a mini grill. The dipping sauce was the highlight. The fire roasted eggplant was creamy and smokey. The steaks were delicious and cooked as ordered. The chimichurri sauce was delicious. I did not prefer the sauce that was served with my filet. It was too sweet for me. My husband did like it. We were excited for the truffle fries. It is a generous portion. The fries were served very hot. However, for $35 I wanted to taste truffle. I did not. Not a hint of truffle. I tasted Parmesan only. The aioli dipping sauce had the truffle oil. Again, for the price the oil should be used on the fries. We also order the mac and cheese side. We all agreed it was lacking something. The Blue Crab fried rice sounded like a winner. It is served inside a thin egg omelette. While it is a creative presentation I was hoping for more crab, rice and less egg. I must mention the bread. We loved the round pretzel roll. It was served warm out of the oven with an herb butter. Our server put dessert menus down right after our plates were cleared. We purposely waited to order the cheesecake and apple crumble. Good move as they came out very quickly. Both were delicious. I would choose the warm crumble over the cheesecake if I had to choose. I did ask the server to please spoon the remainder of the sauce that was still in the hot pan. He was about to take it away. Learn from us. If you want to enjoy a leisurely meal do not order all at once. If you have a hard time hearing go at an off time. For $500 not including gratuity, we expected special. read more

They insist on selling stale champagne (opened the day before) at full price. Either charge full price and deliver fresh champagne (opened the same day), or charge half-price for stale champagne. If you (Wolfgang Puck) insist on having your cake and eating it (charging full price for stale product), with customers on the losing end of that bargain, you are actively investing in destruction of your client relationships and very actively destroying your brand value. You're essentially telling customers that you think they're dumb - dumb enough to accept a heads-you-win, tails-they(the customers)-lose. There is precisely nothing classy about your strategy. The meat was excellent as were the fries. The Halibut was solid, rice was nothing special. What was bothersome was the wine gimmick they have. They have very expensive bottles by the glass, which are, you guessed it, ery expensive. I decided to splurge and spend on a $75 dollar glass. They poured me 1/3 of a glass, and only that after I insisted how do they calculate that amount. It was really an unacceptable amount, 6-7 sips worth. Then I got a glass of a very good normal wine, $23, and they did a standard pour. The teo glasses were incomparable. If you're gonna charge $75 for a glass, pour a glass. Well this was a huge disappointment. The old Grill Room was a place you could have a civilized meal and hear your companions speak. Delicious and original food. No more. The cozy unique Scottish like Rye Bar is gone replaced by generic and typical bar. The noise and AWFUL music can be heard in the dining room and it's just ruinous. The ceilings seem to have been lowered too which does not help noise problem and also destroys what was so elegant about the dining room. Used to feel French along the canal. Sophisticated and lovely. Beautiful tables along the canal. Now feels like an overpriced chain restaurant. I could be in Vegas or NY or anywhere. I can't believe how they ruined the place. Even the entryway is weird and off putting - no warm elegant art. Just a small dark alcove. The bathroom lounges have been replaced by a single bathroom. That meant there was pee on the seat. I managed to lock it but my date inadvertently walked in on a woman who hadn't figured out the lock (it took me a bit). The font on the win list and cocktails was too small to read. The table are too small for the plates. I had to ask to have our first course cleared. And for the check. Our mail meal was delivered missing a side dish that we had to wait for. The food was fine but nothing special. But the noise was just awful. Awful decibel level. Awful 80s elevator music instead of jazz or classical. I was keen to see the renovation but this is terrible and inelegant and was actually a painful experience and for the price point, for any price, I doubt I will be back. Too bad. I could cry. I stopped into Wolfgang's latest addition to his D.C. pack of restaurants on a random weekday night and I was not at all disappointed. CUT is a welcome addition to the already-competitive steakhouse scene here in the city, and it has enough to set itself apart from everyone else. Rosewood gave The Rye Bar the boot and replaced it with CUT; but if you are a cocktail lover, there is nothing to be sad about. I cannot say that CUT offers the extensive range of whiskey's that Rye Bar once had in stock, but the cocktail creations here are excellent and there is something for everyone. The menu is broken down by spirits. My 21 year old self would be disappointed in knowing that I was only able to try two, and none from the tequila category. My friend had a very spicy mezcal drink (Oaxacan Tricycle), but I prefer sweet and opted for the Start Me Up and one other champagne cocktail that I cannot remember the name of. Both were absolutely delicious! Aside from the nearby Bourbon Steak, I feel that a lot of steakhouses do not have a good variety of drinks to suit all tastes, so the fact that I went 2 for 2 on cocktails that perfectly matched my tastes is a promising sign for the rest! Of course the menu is heavy on the meat side, but there are vegetarian and seafood options that were actually well executed - not that the steak was disappointing by any means, but these were the things I actually enjoyed most. We had a bite of our neighbor's Earth n Eats Farm Carrots (they insisted!!!), which were so good! We also really liked the artichoke salad and the salmon ceviche with kimchi was tasty and so fresh! The one thing I would say you cannot miss would be the Blue Crab Fried Rice! It is fried rice with crab meat wrapped in a fried egg.... and my favorite thing of all that we tried! We also had the rockfish which was good, but nothing to write home about as I've had better at several other D.C. spots. The tomahawk steak is the star of the show here, since you can watch it get cut by chef at the center front of the kitchen/dining room, but we decided to order a filet to get a feel for how well they prepare the chops here relative to other places. Our steak was served with a hint of the salt garnish on top, and the knife slice revealed its tenderness and juiciness. I loved the steak on its own but I would have loved it much more if I had been able to add some accompaniments (a sin, I know, but I love blue cheese crust or peppercorn on my steak! I didn't see any options for this on the menu) The sides were okay but lacked the delight and crave-ability of sides at certain other steakhouses. The spinach is sauteed in garlic and tasty, and the presentation of the potato tarte tartin with truffles is the most exciting part of it all since its hard to ruin a potato. The dessert options here are all appetizing on paper and on plate. The cheesecake was one of the best I've had anywhere.... the texture is unforgettably cheesy-smooth, but with a flavor that is decadent. The next time I'm here though, I'll have a hard time deciding whether I should order it again or try the Kardinal Schnitte - it looks like a towering waffle dessert with strawberries, and my dining companion and I couldn't help but stare in envy at the table near us when it came out! read more

It was 9:35pm and we are still standing around finally after expressing our frustration the hostess sat us down at the lounge and we are still waiting for our table. Waitress bring Us cocktail menu. The font was so small you needed magnifying glass. At that point we had enough and decided to leave if this was my restaurant i would have perhaps offered complementary cocktail or something to defuse the situation. I am at 3,5 stars but it seems from previous reviews that it has been hit or miss so far. My lunch experience was good, but it could have been improved. It is not something that they could control, but there is currently a lot of construction on the canal, and once it is over, coming in will be a nicer experience. Our server was attentive, and gave a good overview of their favorites. No blue crab fried rice for lunch. Nice wine selection. The charred leaks were ok, but not as interesting as they make it sound. Good burrata. I had the lobster club, one of their populars, and the raisin bread makes it interesting. Yes, their herb crusted chicken is very good. We then waited and waited for dessert, which didn't end up in their kitchen computer. At this price point, they do need some adjustments, but there is potential. read more

Our server Andrew did warn us but what could be better than leftover porterhouse and Mac & cheese. Very nice wine list by the glass. I recommend you ask the Sommelier to make recommendations and bring tastes. We did a blind taste test of 2 reds that were both outstanding. Of course I picked the Most Expensive wine on the list. Oh well it was my - I mean our - anniversary. Also suggest getting there early checking out the rooftop. They even have blankets out if you get chilly. Overall great experience at CUT. Admittedly it was quite expensive but great for a special night out. Also , we were big fans of the former set up when it was a capella hotel. We were bummed when they closed. I like what they did with the restaurant/bar space making it more of an open area where you could actually sit at the bar, see the canal and have a snack or meal.
