This was a great mix of Mexican and Caribbean food all put together. We didn't know what to expect walking in as it's located in the back of a sort of strip-mall type place, but they've got a cute little porch area where you can sit and eat outside but we sat inside. We were seated quickly and I ordered the Yucatan and was pleasantly surprised with how savory and flavorful the dish was! I'll tell you that it might not look like enough to fill you, but it's piled on with tasty coconut rice and cheese, black beans, sausage and shrimp and other choices! They do finish it off with chipotle cream cheese of which I scraped off and just used it seldom. It was a HUGE serving that they put on the top. We also ordered a glass of wine each. So you know -- it might a feel like a mexican restaurant but it's not. You have to order chips and salsa to get them before your meal. They've got a great assortment of different salsa's to choose from though. Our waiter was quick and very good about keeping up with our table and seeing if we needed anything. One thing to note though - they don't stay open very late for a restaurant in a college town on Saturday night. They only stay open until 9:30 PM on Saturday and it was around 7:45PM when we decided on where we wanted to eat. Plenty of people kept coming in their doors around 9PM and they gladly seated them, but I'm sure they had to eventually hold people off! I have been eating here for several years before my kids went to school there and while. After they remodeled the place I thought the service and food suffered a little but it's back to normal now. My favorite dish is the Taos but I have had many boats are good. I have also had burgers and salads and it's all pretty fair. Been living in the Boone area for a few months now and finally got to check this place out! Went on a Sunday evening so it wasn't too busy. Everyone was friendly and our server was amazing! The food was great and it was nice to get something a little different. The kid meals were nice, and my daughter got to try something a little different too! (Fried plantains, coconut rice, black beans, and a cheese quesadilla. [pictured]) I got the shrimp tacos (pictured) and they were stuffed full of goodies! We also got the apple pie cake which was delicious. The only con is that the restaurant itself is quite small, so on a day like it was Sunday (windy and cold) every time someone came in it would get cold again inside. Being a little hole in the wall on a strip mall I've never seen a place that has so much quality packed into a small spot. I went by this place on a friday for lunch and the food was excellent. It's kinda hard to explain the style they have but I could best describe it as a tex-mex/american fusion. I shared some sweet potato fries and chips with beans for a appetizer and followed that up with the Domingo burrito. The chicken on the burrito was extremely well prepared as well as seasoned and they also bring out a couple house made hot sauces. The hot sauces are a pineapple habanero and a much more milder sauce which is borderline sweet. Careful with the habanero sauce as it can sneak up on you :) Another very nice aspect of this restaurant is that they offer Gluten free items as well as strictly vegan items. Even though its been a growing trend, not a lot of restaurants seem to take as much time as this place to cater to the needs of a people who have certain diet needs. I really realy wanted to like it. I loved loved the atmosphere and the waitfollks but... *Took almost an hour on a Wednesday at 1:30 to get our lunch *Didn't really like the food, but let me explain: I had the "Moab Boat" which was: tofu, plantains, rice, some beans, sweet potatoes topped with lots of melted jack cheese and a chipotle cream cheese. I had to peel back the cheese as there was so much and I know it was just me, but I didn't like the cream cheese stuff, which kind of permeated the whole thing. So it was not bad, just not my thing. My husband and son had a fish sandwich with fries. Seemed ok, was served on a Wal-Mart type white bread bun. Again, not bad, but not amazing. I would say ok. I am still hungry and (sorry) would not return. Oh, there was amazing artwork which did make it 200% worth it-art gallery quality. I love to eat at Coyote Kitchen, and I've never had a bad meal here. My favorite is the Chipotle Chicken Sandwich - I love the spicy cream cheese, and the caramelized onions. Plus, the sandwiches come with a side of chips or fries. My boyfriend always gets a boat, which is too big for even his large appetite. We also always get some sweet potato fries - they have some of the best, with a wonderful chipotle ranch dipping sauce. The only reason I didn't give them 5 stars is because a few times, when I've taken friends or family here, they've ordered that day's special, and it never seems to be quite as good as the regular menu items. It's a pretty small location, and it would be hard to fit a group of 5 or more in here. It wouldn't be as much as a problem when the weather is warm, as their outside patio seating just about doubles their space. read more

I was in Boone overnight and found Coyote Kitchen on Yelp and went there for dinner. I had the char-grilled BAJA Boat. It was one of the most fresh, tasty meals I've ever had. The variety of flavors from sweet potatoes to red beans was amazing. It came hot and timely even- though the place was packed. I also had the Sangria which was excellent. I would definitely go back on my next visit "home". P.S. I believe I was the only person at Coyote Kitchen who did not order the sweet potato fries. This place is so delicious!! They have burritos, bowls, and boats, plus burgers and sandwiches. There's something for everyone!! Our server gave us the lowdown on the menu since we were first-timers. She explained the difference between a bowl and a boat - a bowl is more veggie heavy, and a boat has cheese on top. We of course opted for boats! I had the Taos Boat, mostly because the idea of cornbread was so appealing (many of the others included coconut rice - but I think you can customize whatever you want). The Taos boat was divine. The place is tiny, cramped and noisy. Fun if you're in a group (which we were), but I wouldn't pick it for a romantic dinner. In fact, it's so small that if you have to wait for a table, it'll be outside, which is kind of a drag if it's cold and rainy. The service was quick and reasonably friendly. I had one of the "boats" which is basically a lot of ingredients all mixed in together. It doesn't really work. The shrimp were very well prepared, fresh and lightly breaded, but all the other ingredients just sort of turn into a featureless glop. Several people at the table had the burgers, which they reported were excellent. I doubt we'll be back, but if we do, burgers are the way to go. Words cannot describe how much I love this place. I used to go to App. and would frequent Coyote Kitchen on the regular. Now when I get a craving I have to make a 2 hour drive. Sad times. :( I haven't had everything on the menu. But everything I have had has been a plate full of happiness. I think of it as a primarily Caribbean spot, but they also have tacos, burritos, and burgers. The boats and burritos are my favorites. Each plate is full of flavor. It probably seems odd to the outside world that this kind of restaurant would be in Boone. Really though, it fits right in. No matter what you get, ask for them to bring out their salsas. I had Coyote Kitchen after meeting one of the Gms through my work. He was very nice and gave me a coupon that I held on to for a few weeks before deciding to use it. One night I was bored and decided to use it. I do not regret it. I drove up to Coyote kitchen and immediately realized the place was absolutely packed. I made a choice to get my food to go as the people were still steadily moving in and I didn't want to take up a table as a single person. I made my way through the lines and the awkward front door wait line (super duper inconvenient layout of the entryway.) and looked over the menu for something basic, as it was my first time there. I ended up having chicken tacos with mango salsa. The wait wasn't terribly long despite the amount of people, it definitely seemed adequately staffed. It was quite loud and there was a party outside so I took it upon myself to play doorkeeper and help the servers go in and out of it through the people. I got my food in what looked to be a post consumer carton. It couldn't have been more appropriate for the place. I got home to discover that I had a new favorite place to get chicken tacos. The flavor wasn't overwhelming, they give you wonderful portions and the chicken was perfectly cooked. The veggies tasted fresh and crisp. Overall, I don't see why the hype about Chipotle when you can get better tacos and burritos for less right across the street. read more

Went on Sky Valley Zip Tour and was told this would be a good place to go. Not disappointed!! The food is southwestern/Caribbean and is delicious. We opted for the bowls which are casseroles of various protein rice and bean combos. I had the Mojave which had blackened chorizo but was told that the Kobe beef there was good so I added it on (and $5) but it was WELL worth it. Beatriz had the Cactus which had rosemary chicken and chorizo (also delish). I tried the cranberry salsa and pineapple habanero salsa with my dishes which went perfect and were different in a great way. Also asked to try the homemade hot sauces (coco banana, Hawt sauce and Magic Mystery Tour). I like hot and they were HOT. I drank two glasses of water quickly but I craved more. Recommendation from the Inn I was staying at. I ordered the blackened chicken sandwich with fries and a side of mixed veggies. Presentation was good, portion size good also. Bread was soft, aioli sauce was good however the chicken was dried out with extremely heavy seasoning, that u could flake off. Fries we're over cooked and lukewarm.
