I absolutely love the staff at Costa Vida, but I wanted to share some feedback. The last couple of Tuesdays I've ordered Sweet Pork Tacos, they've had very little meat compared to what I receive on other days of the week. The quality and portions seem noticeably different on Tuesdays, which has been disappointing. I know a lot of people that love this place! So I was super excited to give it a try! Unfortunately, this fell super flat for me... There is plenty of free parking! There is also a drive through. The place was clean and the vibes are very chill. It's got more personality than a chipotle. Service here was top tier! Everyone was very nice and personable! It honestly pains me to move on to the next topic... food I got horchata, a bowl and chips/queso. I have had a lot of horchata and this was just not it... there was too much cinnamon and the flavor was... off. The chips tasted like they had been fried in bad oil. They had a horrible smell to them. It made the vehicle we were in sleep bad. I had my friend try them as well and he also thought they smelled and tasted bad. The queso did taste good! It was a little spicy. I ended up throwing the chips away and put the queso on my bowl. The ranch and queso definitely carried the bowl. The chicken was dry and I didn't like the cheese being melted, it got hard. I just couldn't finish it. I don't know if I just came during an off time or not, but this just didn't live up to the hype read more

Happy happy joy joy! One of my fav fast casual restaurants in Colorado was Costa Vida so when I was randomly in Apple Valley over the weekend I was ecstatic to find a Costa Vida! My fav is the small salad with sweet pork and the tomatillo sauce. It was as delicious as the last time I had Costa Vida which was 4+ years ago. Woo hoo! Thursdays have the good deal of half price burritos, but yesterday I rediscovered that you get what you pay for. I ordered a large guacamole, got a small, 4 oz. cup. The guacamole was brown. I called the store, they said that four ounces "is a large guacamole, unless you order the guacamole and chips". I did order the guacamole and chips, but asked for a small order of chips. I said the isn't really the problem, the guacamole is BROWN. They said "that happens when it sits for too long, (duh) stir it up and it will be fine." I scraped the brown off and ate the couple of scoops that were left. The sweet pork burrito didn't taste like they usually do, but I ate it anyway, against my better judgement. Visited on 11/11/22. I cannot say enough good things about costa vida. Who needs chipotle when you have this place with fresh flavors, top notch ingredients, and absolutely amazing chicken? I choose the regular sized salad because it is gigantic and then I can have leftovers. This also comes with a homemade tortilla underneath the salad so it's almost more like a burrito bowl. I pair this with all the fixings it comes with, black beans, and the tomatillo ranch dressing to add a splash of flavor. I most often get my order to go (they have a walk through option similar to a chipotle but they also have a drive thru at this location), and at home I add a bit of hot sauce on top to give it a kick. Service is always incredibly professional and I find myself recommending this place to anyone in the south metro area. Check it out, this place is a must visit. read more

Goodbye Chipotle, I have found my new burrito love. After Baja Sol closed it's doors for good, I was considering where my next south of the border dive would be? Chipotle is too commercialized and blah for me. I needed something with a little bit more jazz. Well, Costa is that jazz. First off, they give you a nice big menu to choose from. There house special is Sweet Pork, which is very good. Think pulled pork with a sweet mango glaze. What I love the most at this place is that they will smother your burrito (melted cheese and sauce added on top) for no extra charge, it is expected that you do. They have three sauces to choose from as well as a mix of salsas. I love their Mango Salso, fruity, mild, fresh...YUM. Their portion sizes are huge and yet pleasantly priced. You basically could make two meals out of a burrito but most of the time I cannot stop my mouth from inhaling the food and so get one meal out of it. And one last thing, don't skip the tortilla. They are house made and freshly served and are delicious. You do have the choice of getting a burrito bowl, but the serving size is halved for the same price. If you want the most bang for your buck, get the burrito, smothered, and serviced with salsa and lettuce on the side. Delish. read more

I ordered the Baja Bowl with chicken and all the condiments that didn't cost extra. First, everything you get here seems to cost extra. In fact, this is the first time I have been asked for a tip at a zero service fast food restaurant (I pay 20% +/- usually at sit down restaurants for service). Second, the food was...shall we say bland? Just bland all around. My kids didn't even eat their chicken quesadillas they were so bland. Pros: Freshly cooked proteins, very generous portion sizes, friendly staff, well sourced natural ingredients, and a broad selection of salsas and dressings Cons: Not enough to distinguish itself from other TexMex fast casual offerings in the area. I've had both the burrito and salad (which comes with a tortilla unless you request sans); as well as chips and queso. The consistency of the queso is similar to Chipotle's but tastes better! I've been to Costa Vida a couple of times now. Both times I've ordered the Sweet Pork Enchiladas. Both times it was pretty tasty. Its braised in cola which I knew going in and it still caught me a little by surprise. There are a ton of other options you can go with when it comes to the meat choices. Besides that, you can choose tacos, burritos, quesadillas and so on and on with every permutation of sauces and sides imaginable. You can literally come here for a number of days in a row and not even make a real dent in the menu. Its a tad bit spendy for those that might compare it to a Chipotle, except Chipotle doesn't have near the variety that they have here and it is more spendy. I have a few options for Mexican in the area that are closer to home so I don't get here as often as I might otherwise. Give them a try if you happen to be in the area. read more

Love love love this place! Come here regularly and the food never disappoints. Even if the line is long, I give it a 5 star rating! Tonight I went around 5:30 and there was a excellent group of workers, especially the younger male at the register. The exception to the excellent workers is Heather (I asked for her name from someone, wearing a hat, maybe a team lead or shift left, got pennies for cashier, brownish hair, Caucasian). She was cooking tortillas in the front of the line and never once looked up or said hi to the line. Just barked things at workers. Then the cashier (the young guy) nervously asked for pennies and she gave him a rude look and said in a very icky tone, "go watch the tortillas!" And he didn't hear and asked what, she said it louder and more rude. How she interacted with the other worked and bossed was not okay and uncomfortable to see. To act like this in front of customers let alone to your coworkers is not okay. I understand it's busy but if that's how someone behaves, she shouldn't be in customer service. Beware of Drive Thru! They do not pay attention to your requests and since you can't watch you don't know what you actually get. Had to say several times wanted chicken tacos with only cheese. (For my kid) I mistakenly thought they only put what you asked for on your nachos. When I was paying I heard someone ask if I wanted everything on my nachos from the drive thru window. I brought this up right then as paying saying I did not want everything and was told not to worry and was completely blown off. I also said I do not want a bunch of stuff on them and want to make sure. It didn't help get my order right. Some people may have loved them covered in tomatoes, onions, cilantro, sour cream and a ton of quac. But I don't. After a very long day this was such a disappointment. I HATE GUACAMOLE AND TOMATOES. I haven't reviewed this place in a few years. They have definitely made improvements. This place is legit. It's a touch more expensive than Chipotle but it is worth it! The food is so much better here and more fresh! They make their Tortillas fresh and they are fantastic. Their steak is amazing and tender. Way better than Chipotle's steak. My wife loves their steak nachos with all the fixings. I typically get the large steak salad, no beans, add fajita peppers, and I get the tomatillo ranch. They offer a tortilla at the bottom of the salad if you'd like it. So once your salad dwindles down you can make yourself a mini-burrito or taco. Otherwise you can forego the tortilla to save on the carbs and cals. Bottom line. Costa Vida is better than Chipotle. Download the app to collect frequent buyer points. I get $4.00 off about every other time our family visits there. After each purchase the app will offer you the opportunity take a survey, rewarding you with something like chips and queso for your next visit. P.S. This place recently opened and I have not heard of it before. The food is very good but a bit spendy. It is not out-of-line but it is more than Chipotle. The food did have more flavor than Chipotle. We were pleasantly surprised to find that Costa Vida had come to the Twin Cities. You really can't go wrong here. Bowl, burrito, or salad...you will not be disappointed. My personal favorite is the pork salad. The meat is tender, with a hint of sweetness. If you're looking to cut carbs, hold the rice, beans, and tortilla. It will still be good. It's also a great place to take kids. They can make nachos and quesadillas that will please even the pickiest eaters. Don't forget to try the horchata, it's a good recipe. read more

They cook it in a strange honey sauce that gives and odd taste and it is not grilled. The shrimp weren't thoroughly cooked and were spongy. My shrimp quesadilla had a strange aftertaste. I was on board for a while. It definitely is the better chipotle. Better guac, better meats, better QUESO. I got the nachos a few times. Always good and end up soggy. That's my fault though since I add the black beans and queso. Didn't like getting charged .99 for ranch and .99 for salsa. That was not cool since I assumed it came with it on top. The people are friendly and kind that work there. They do hit you up for tips two places which is kind of annoying- So I'll pass on that. Also the last three weeks it smells like stale dish towels. This is not hard for management to figure out- when you use stinky dirty towels to wash and clean- your place smells as well. If it were one time- I'd say bad luck but been there 4 times in last 3 weeks and it still smells like stale clothes. I say- clean your mop and throw your towels away and get new ones. This place is trying to benefit from the Chipotle craze. They offer some more options. A cross.l between Chipotle and a Mexican diner. It's a fail cause it's not Mexican and not as good as Chipotle. They were friendly and it was clean with nice service. Wanted to like it but don't think this place will make the market they are seeking. Has the chips and queso. The chips are starchy and not close to authentic. The queso was bland and powdery. Plus it was only filled 2/3 up. Too many fake Mexican places opening up cause the MN snob suburbian people don't know good food. Apple Valley is the pinnacle of shitty fast food. I was craving some Mexican food and ordered from CV through door dash. My husband and I have talked about trying it out and I figured what better way to try than when we are both work from home and I'm so glad I did. The quesadilla was HUGE as was the burrito. I ordered steak for both and the steak amount was generous and it wasn't tough or chewy which is big for me. I was a little sad at the amount of the refríed beans that came with the burrito it was basically what seemed like a spoonful and I forgot to add rice and beans to the quesadilla so we missed out on that but again that was my mistake. The side of rice portion was cheaper and larger portions than most sides of rice I've gotten from other Mexican restaurants which I definitely appreciate. The food itself was flavorful, enormous portions enough for two grown adults to eat 2.5 portions. I'm definitely going to order them more in the future! read more

Not vegetarian or vegan-friendly. I'm surprised that in today's modern restaurant world, the owner of this restaurant didn't think to have one vegetarian option on the menu. I ordered a baja bowl with veggies, which basically meant a full-priced meat entree without the meat. Guacamole wasn't even included. My meal was over-priced and disappointing. An easy fix for the owners to consider would be to consider adding more vegetables and guacamole for a vegetarian baja bowl for the same price. It's my moms birthday, and she wanted tacos for taco Tuesday. I was a little dubious since the last time the food has been less then good. But it's close and it's her birthday and I had hopes that maybe it's better. So when i confirmed rice and beans, due to previous experience, I guess they just decide to skimp on everything. Maybe it's also just because I'd like more meat than lettuce on my tacos that I'm paying way too much for. And maybe, you know, the rice that's supposed to come with it, and that I confirmed. Also, when I call, don't assume I don't speak Spanish, and start talking to someone else while I'm still on the line, I was just trying to let them know there'd been a mess up. Mind you, just an FYI, not to ask for anything other than an apology and give them a heads up they're serving subpar portions wrongly. But they don't care. Bad service. Bad food.
