My mom got the pumpkin spice soft serve and espresso soft serve swirled together. She said it was good but probably not the best pairing. I got the specialty sundae called "The Uptown". Vanilla soft serve, orange olive oil, bee hill honey, sea salt, candied orange slice. Such a unique combination and was so so good. I really think the sea salt brought it all together. If you follow me on Insta, you already know how much I adore Kate & Mike and their crew, but I also wanted to state it for the official Yelp record, so that anyone looking for the absolute best ice cream in St Augustine, would be able to find it. Firstly, their parlor is beyond adorable, with some of the absolute cutest wallpaper and a fab retro vibe. It is tiny, with only a few stools at the counter and a wrought iron table for two, but they also have shaded picnic tables outside on the patio. If you drive up and see a line out the door, it's not because they are slow, it's because there's really only room for a handful of people inside, so go ahead and get in line and it'll be your turn before you know it! They only have two ice cream machines, so they always have chocolate/vanilla in one and two rotating flavors in the other. Follow them for updates, because they make everything in micro batches and they do run out of really popular flavors quickly. I can't tell you how many times I've driven down there, because I had my heart set on a specific flavor and ended up with vanilla. Luckily, even vanilla isn't boring at Cookiebird, because they offer so many amazing toppings, plus their homemade waffle cones in all kinds of fun flavors, like matcha or lavender. After you order one of the three flavors, you have the option to add two different styles of toppings. Either a sauce, or various dry toppings. We had the pleasure of being assisted by Mike who I am assuming is an owner/the owner. His passions shines through in his smile alone! This is an awesome soft-serve ice cream place! They offer flavored cones that actually taste of the flavor they are meant to, not just a cone with different colors. The soft serve is the best I've had where the chocolate is full of rich chocolatey goodness that isn't at all watered down. There are two rotating flavors that can be swirled together. The chocolate and vanilla can be swirled together. Alas, being on different machines from the rotating flavors, the chocolate or vanilla may not be swirled with those. They will gladly stack them for you, however. Then there are the toppings! Lots of really yummy toppings you may add to your cone or cup. Chocolate curls and pistachio syrup are my favorites, but there are many more that are all wonderful. Service is top notch. The owner is very friendly and will chat with you. We stood outside for about 20min without any movement in the line. Finally as someone came out they told us the place was out of vanilla. Once we finally got inside we weren't greeted, or thanked for waiting. We were asked to shut the door and then told they were out of vanilla. We got cookies and cream in a cup with pistachio sauce and a pecan praline topping with a lavender cone. The aesthetic of the place is great. That is about it. The flavor is wet cardboard, and for being cookies and cream there was no cookie taste. For $12 plus dollars for an ice cream I would hope there would be flavor.
