    Shrimp, scallop, fish, beef base
    Grace C.

Came here twice and had two different experiences with the porridge ... First time everything was delicious. We got the mushroom base and beef base mixed and added fresh geoduck. The seafood was fresh and the congee was thick and rich in umami. Second time we got scallop/ shrimp, beef, and fish as the base, and added oyster from the frozen section. The broth was much more watery and bland this time. It also completely lacked seafood flavour despite having so many seafood ingredients. The shrimp was not fresh and I think I saw one teeny tiny dried scallop piece, so I'm sure they didn't add much. Overall the sides are decent as well and come out much faster than the congee (which takes 25+ min), so it works well if you're hungry. The tofu century egg is spicy and goes well with the congee. I'd come back maybe once more to see if the issue were the bases we chose the second time... but otherwise I'd say this might be a splurge meal because it's not the same without the fresh seafood. Service can be slow when they're busy (I think it's bc the food takes a while to come out), so expect to wait especially during peak times

Decor is simple & functional; but why paper cups?! 3.5* Porridges (congee) are unique in the sf Bay Area. Not your traditional preparation. YMMV... I like it. 4* Braised beef shank 4.5* Drunked shrimp 4.5* Braised duck wings 2* Braised Pork ears 2.5* Pork ribs 1.5* Chinese donuts (ordered two plates) 4* Braised sauce is a bit bland but maybe it's their style. Just not for me. We tried to order braised tofu (not available) or live geoduck (not available) maybe soft opening & didn't stock well. We had a party of five. From the menu, one can order single porridge (congee) pots. So we wanted to order 5. Waitress told us the max is 2 pots per table due to kitchen limitations. Hmmmm... 1* If you have more than 2 persons. Split into 2 tables! They ended up letting us order 3 pots. Anyways, the porridge tastes good to me with fresh ingredients. But the ingredients are very light. Of the 3 pots, fish & shrimp/clam are very good. The eel is so-so. Since it's their soft opening, hope things will improve. Can come back to give it another chance for dinner ordering the fancy live seafood. btw, it's not cheap! Our lunch was over $30 per person

    Spicy and very tasty kimchi

No napkins! The porridge tasted like cooked rice and broth. The rice grains are still in its original shape, not like the bloomed grains for porridge. The kimchi and peanuts condiments were yummy. No English speaking service.

Good quality congee - I like how you get to choose what ingredients you'd like to include in your congee. Since congee takes quite some time to cook (25-30min in our case), it's best to order some appetizers or veggies first if you're hungry. This is not a place for a quick lunch so adjust your expectation. Pricing wise it's a bit on the higher end considering the location but the quality of food can justify it.

This place isn't bad but one thing you have to know: for a place called congee king, their congee isn't really congee. It's just watered down rice - lacking the actual congee consistency. It also can become pretty pricey once you add all of the stuff to it esp. if you opt for premium seafood like crab. On the upside, their dim sums weren't bad and were definitely cheaper than the actual dim sum joint next door. So worth coming for those if that's what you like.

Food was really good (we ordered a basic fish based congee with no extra proteins). However, the wait time was terrible. I feel like we waited about 30 minutes. I would definitely do a take out order in the future, but I would be very hesitant to dine in unless I really had a lot of free time.

Price is a bit expensive but for Cantonese style: fresh is everything, it was great. Marinated Pig Ear $8.99: crispy and soft Marinated Pig Trotters $8.99: soft and delicious, we ordered seconds. Spicy Pig Ear Salad $9.99: not that spicy, similar to the marinated pig ear but mixed with hot sauce. Spinach with Garlic Dressing $15.99: ok nothing to write home about, skip. Thai Chicken Feet $9.99: pretty spicy with a kick, definitely tasty We ordered $88 Roe Crab + 3 congee flavor (mixed mushroom $16.99, snakehead fish $16.99, dried scallop & shrimp & clam $16.99) and cooked all together in a large claypot. It was delicious, the congee is a mix of regular and glutinous rice so it was creamy. The seafood was fresh and my friend like so much she got a snakehead congee takeout for midnight snack. For 90% full dinning hall only 2 waitstaff and 1 platestaff so service was a bit slow. The restaurant decoration is clean and simple just like the dishes. Chowbus is running a gift card promotion: Buy $300 gift card get $30, $500 get $60, $800 get $100, $1000 get $150.

New restaurant in Fremont specialized in Congee. It is in Soft Opening mode. It was busy when we arrived and we have to wait about 30 min even at 2 pm. It is small restaurant with specialty on live seafood Congee. Yhey slso hsve frozen seafood and meat. Beside Congee, it also have appetizers. We order 2 of Dried Scallops, Shrimp and Clam Congee with additional small crab with roe. They have large size crab with roe too. Beside mud crab, they ahve lobster, Dungeness crab and geoduck. We also ordered Chinese donut and pig ear. The Congee takes a while to be ready as Looks like they prepare it based on order. The Congee is not like the regular Congee I have where for this one you can feel like half cooked rice and Congee. It tastes very yummy. The Crab is very fresh even though it is pricy even for small one. the pig ear is bit tough and smell a bit. Chinese donut was good. I am just wondering with all the nice plate, mug and chopstick, why they use paper cup for water. it just not right. Overall it was good meal but quite pricey.

We ordered a variety of dishes, and all of them were fantastic. As my friend mentioned, a little bit saucier than you'd typically find in China, but still good. And we ordered everything extra spicy. The "Premium stir-fried beef with yellow peppers (with broth, Angus beef with brisket fat)" was a great saucy start to the meal, it had a nice sour flavor to go with the mild-medium heat and was very fresh tasting. "Husband and Wife Lung Slices" was good, standard and a smidge oily, but tasty. The tendons (there are no lungs, just beef and beef tendons) were cooked nicely, with just a hint of chew but tender. Again mild-medium "Stone Pot Flavored Frog" is where things started to get really good. This was one of the best dishes of the night, and the best frog I've ever had. So tender, with a nice crispy exterior, and so much flavor. This was delicious. If you've never tried frog, this is the one to get. A nice break from the heat was "Braised Pork Belly with Preserved Mustard Greens". I was told that this was a bit leaner than what you'd expect in China, but for me the meltingly soft, rich pork belly and chewy greens made into little mantou-tacos was great. It has a nice sweet/sour flavor and zero heat. Now, by far the spiciest dish we ordered was "Double Pepper Chicken Noodles". Delicious noodles, fresh chilies, great almost crispy texture from the wok, but this was firmly in medium-hot category. Everyone started to sweat and get runny noses eating this one. But the flavor was addictive. Some notes - the parking lot is big, but you may have to walk a bit. This is because this restaurant on a Saturday night was absolutely packed. I came around 6:30 and there were 9 tables on the waitlist ahead of me. I wouldn't say it moved quickly, and the area to wait in is cramped. So best bet is to come early or go wait somewhere else. They have an online waitlist that sends a text when your table is ready, so there's no need to stick around being jostled by people entering and exiting. Service was efficient. My friend ordered (in Mandarin) so I didn't follow what was happening, but the food arrived very hot and very quickly, and they nicely pack up your leftovers themselves. Overall - fantastic. I found some new favorites, had some good versions of things I already like, and while it certainly isn't cheap it was worth it. Oddly enough they added an 18% tip automatically. Fair enough, I would normally tip 20% for dinner but if 18% works I'm not complaining. Unfortunately the location isn't convenient for me and the food would be a bit challenging for most of my friends, so I probably won't be back soon. But anyone who wants some authentic and spicy and interesting Chinese dishes would be happy coming here.

If I were to sum up my meal in one word, I can do it easily: salty. Every dish I've tried today was…read moreincredibly salty. Though I prefer my food a little bit more flavorful, Ping's Bistro really shot every single flavor up. The Steamed pork belly with preserved vegetables was served first, and without a doubt, is one of the spiciest. It's a good size for sharing, but the preserved vegetables on the bottom was mushy and came in a very small portion. Though supposed to be a part of the dish, seemed to be thrown in just for some extra flavor. Though I selected mild spiciness for the Spicy Boiled Fish, it was still REALLY spicy. Maybe it's my spice intolerance, but this dish lights a fire in your mouth. Also, this dish is mala, so it numbs your mouth. Some people may enjoy this sensation, but it's a pass for me. The fish was really soft and tender though. The fish was my favorite part of the Spicy Boiled Fish. Not only there is fish underneath, it was surprising to see other ingredients like lotus, vermicelli noodles, and much more. The salted egg covered pork was extremely salty and oily. I was surprised to know it was boneless, and I felt like the salted egg crust is too thin, which let the taste of the pork overthrow any type of salted egg taste. The Country Style Sautéed Pork with Eggs and Black Fungus was again one of my preferred dishes, though it was extremely oily. I really liked the egg, black fungus, and bell peppers in this dish. The eggs and black fungus were soaked with flavor and the bell peppers balanced out the heaviness. The pork was also alright, but more on the tougher side. If you were to come to Ping's Bistro, I would advise you to order the Country Style Sautéed Pork with Eggs and Black Fungus. The floors were really sticky, but other than that, everything was alright. The water was poured messily, but I guess it's no big thing. The staff were really quiet and avoided interaction. When they serve your dish, they never wait an extra second before they leave for any questions or requests. They just drop the dish and zoom away. From my review, just remember: saltiness. I'm not convinced that I'll come back again, but I'm glad I tried it out.

While I understand that this is the new way for restaurants to serve guests post-covid, the vast menu items you have to scroll through makes me long for physical menus of the past - but that's just my boomer take for the day. There were a bunch of other items like rice and noodle dishes that looked interesting to pair with the meats, but we were only craving bbq so we skipped out on the carbs. We ordered a BUNCH of skewers, from the standard beef, lamb, pork belly to chicken skin and a fried quail. All of the skewers had the same type of dried chili powder spice seasoning mix so unfortunately there wasn't too much of a diversity in flavor profile but on the flip side, it allowed us to focus more on enjoying the meat quality itself (this is where rice or noodles would definitely help cut through the richness). All of the meats were incredibly well-cooked and charred. It is on the drier side, so be aware if you are looking for a juicier, plumper cut of meat that some other restaurants have. Paired with the Chinese vinegar, soy sauce, and chili oil, they were super delectable. My personal favorites were the pork belly, chicken skin, and beef. We had some leftovers to go and the staff provided us some extra sauce to go so that's a big plus. Great food here and definitely will be back to try more of the other menu items for the full experience.
