We stopped by Cimera for pre-dinner drinks, mainly to check out the rooftop, and it did not disappoint. Even though we came just for cocktails, it was *very* hard to resist ordering food after seeing plate after plate come out looking incredible. We grabbed seats at the bar, where the bartenders were not only quick and attentive but also great at offering recommendations. We ended up ordering the Chicha Morada Pisco Sour and the horchata cooler--both were perfectly balanced, strong yet smooth, and honestly a little too easy to drink because we finished them in no time. The real star, though, is the view. Absolutely unmatched--especially around sunset, when the whole atmosphere levels up. They've also got outdoor seating with fire pits, which makes it cozy enough to enjoy the rooftop even when it's chilly. Whether you're stopping in for a full meal or just a drink, Cimera is 100% worth the visit. Even a quick stop here feels like an experience. read more

In town for the weekend and ate here, as the people I was with had a credit to spend there since the hotel (the source hotel) that it is located in was terrible, they gave them credit towards Cimera, Temaki and Safta. They chose to use it at Cimera since they had a ribeye. We had a 9pm reservation and went on a Sunday. When we came in there was an unpleasant smell since the entire hotel smelled like sewer (part of the reason of the credit). The smell wasn't as pungent as the rest of the hotel and I didn't really smell it anymore once seated at my table in the back near the patio. Our server was initially friendly (James/john one or the other) and then it was like a switch flipped and he wasn't as pleasant as his initial greeting. He seemed annoyed and ready to go home. Anyways, I enjoyed the ambiance a lot, it's really nice and a lovely spot for dinner or drinks. They have rooftop seating which I'm sure it's nice to sit out when it's nice out. The food was AMAZING! We came during HH to experience Cimera. We were told that we had to sit at the bar for HH, but then a couple walked in behind us about 10 minutes later and were seated at a table. Not sure what that was about, but they should allow HH customers to sit at a table, especially since the bar is so high and the stools are difficult for short people to sit on. At least two people were working behind the bar the whole time we were there, and they were pretty attentive. We ordered margaritas, the guacamole appetizer, and the pork belly skewer to start. The Pork Belly skewer was amazing. If I were hungrier, I would have ordered more. We follow up with the ceviche, which was flavorful and interesting in both the texture combinations and flavor profile. A cute roof top venue. Have been here a couple times. The scenery is terrific with sweeping views of the mountains. The menu is a bit limited and the wine selection leaves a lot to be desired. They also have private space for groups. Worth checking out at some point. read more

I have only visited Cimera for drinks so cannot comment on the quality of their service or food. I love taking customers or friends here because although prices are mid to high for most drinks, the views make up for that. It is very nice to be able to head up to the rooftop, grab a beer, and have a conversation while enjoying the sunset and mountain views (see pictures). I have only stopped by during weekdays so cannot speak for the weekends but when I've visited, I haven't had to wait to get a table or anything. Cheers! read more

I always find The Source a little confusing on which restaurants are where since they have a couple of different buildings. This is in the hotel building. You also have to pay for parking there. It's a beautiful restaurant with great views if you step outside onto the balcony. They have some interesting cocktails like a Horchata cooler. We just ordered a couple small plates like the empanadas, tacos, and esquites which were all good. The server was able to divide up our check amongst the two of us, but she got it wrong, so my friend ended up paying for one of my dishes. read more

Came here with a few friends for dinner on a Friday night and started with a few drinks. Our server was very sweet and gave us a rundown of their popular items. We started with a round of drinks, which was actually really good and called for the ceviche, pork belly skewers and-beef skewers along with the al pastor tacos and some potatoes. I wished the pork belly was sliced a bit thinner so it could be softer. The tacos were good. For mains, my friend got the squash and the portions were as good as an appetiser. $30+ for a squash appetiser was ridiculous honestly! The salt noodles were good but then again $40+ for that did not seem worth it at all! The mains really disappointed us. Overall, I would probably come here for drinks and apps. On the top floor of the Source Hotel, you will find Cimera, a newer rooftop bar and eatery in the RiNo area. Luckily, the weather was phenomenal for our visit this past Sunday and the view and temperature was perfect. The plant/tree decor is very prominent at Cimera as it lines the walkway from the restrooms, pool, elevator, to the host stand. The cocktails were creative. I had the Prickly Pear Margarita (comes frozen only) and it was quite tasty. I look forward to trying some nibbles the next time we head back to this area. Our server was so kind and friendly and checked on us quite frequently. The service and her kindness added to the wonderful Sunday afternoon on the rooftop in Denver. A great time! Oh my god. This place is one of my absolute favorite. We went for Denver restaurant week so we got to try a little bit of everything, and I'm so glad we did. The Peruvian ceviche was easily my favorite. The white fish with lime was so fresh. It also had different textures and flavors that made it easily the best. One of the surprises for me was the Pork Belly Anticucho. I don't love pork but it was amazing. Melt in your mouth. If you're thinking of the carne asada for the main meal, you should. It comes with fresh tortillas and chimichurri I can still taste. Oh, and don't forget to order the sopaipilla. Rooftop views, great service and will definitely be back. read more

I've been wanting to try this place since it was The woods and saw the menu online. It looked good so we went on Saturday at 1:30pm. When we got there we were just given a brunch menu of 5 items on it the breakfast tacos, granola, tacu tacu plate, chilaquiles and some stuffed potato Thing. It got the Tacu tacu because it sounded interesting and my guest got the breakfast tacos. They had no kid items, no plastic utensils (for smaller utensil for a kid) at first we got just water in a heavy mug type for my 5 yr old son. The manager noticed and asked if we wanted a kids cup and we said yes. When I checked the menu it said they had tacos and salads and tortas for lunch served daily but when I inquired they said not on weekends. I wish they had it clearly on the site because I drove all the way from Parker for lunch. At any rate the Tacu Tacu was ok it was odd like a mushy rice and some chorizo patties to egg and a grilled plantain. The tacos my guest got was egg, some crusty bacon crushed up on top and side of pico de gallo, very basic. I wouldn't recommend the breakfast I wish for brunch they'd add maybe just a few taco options like on lunch. The place is very nice being on 8th floor of the source hotel. My bf and I were visiting Denver for a few days and decided to check out the Source Hotel, which was walking distance from our hotel! We checked this place out, which recently opened and it was beautiful from the decor to the amazing views! Unfortunately, it was too windy to sit outside, but the views are stunning. Yerba mate cocktail: (5/5) I'm not a mezcal fan, but this cocktail was very well balanced and refreshing! My bf ended up ordering 2 of them! Crushed mash: (5/5) WOW. There were so many amazing flavors in this dish including pomegranate and bacon, like what?!? We devoured this with the delicious, thick tortilla chips that come on the side. $17 for this dish, but honestly worth it. Pork belly: (5/5) Melt in your mouth pork belly and they were bursting with flavor. I just wish it came with more because it was so good! $13 for two small skewers. Papa rellena: (3/5) This wasn't my favorite. I was expecting it to be juicier and bursting with flavor, but it was lacking a bit. It was too much breading not enough meat. Having already eaten at another restaurant in the hotel, we did not partake in the Pan-Latin cuisine, but did enjoy some of their cocktails. Cimera offers specialty cocktails, sangria, frozen, N/A, wine, and beer--plenty of options to suit a group's needs. I chose the Oaxacan Old Fashioned, a blend of Mezcal, reposado tequila, agave, and bitters. It was perfect for sipping and enjoying the view. Our server was attentive and checked in frequently. I'm absolutely blown away by the entire experience. I've visited a lot of restaurants and had good food and great food, but this right here was absolutely exquisite. Starting with the decor, the aesthetics were completely perfect. They were great for photo ops. The vibe of the entire restaurant and even the downstairs lobby was not only cohesive, but it was mellow and inviting. It truly felt very peaceful. Don't even get me started on the views. They were almost 360 views of the entire city. Now down to the food. I had the Horchata cooler. This was dang near a perfect drink for me. When I saw the description that had line in it, it had me a little bit worried to tell the truth. But the lime is what brought the drink to life. The flavors were so balanced, and it had just a very slight hint of smokiness to it. The only thing that I did not like about the drink was that it had a little bit of chalkiness to it. The bite that I chose to eat, was the pork belly small plate. Hands down in all the time that I've been reviewing food, I think this is the best dish I've ever tasted. It was smoky, a little bit sweet with the sauce, fatty but not overly so, and tender. An overall dynamic dish. I wish I could taste it for the first time over and over again. The space is nice and will definitely be a great spot for happy hour in the summer, thanks to the deck and mountain views. That said, the service was terrible. Our waitress, while nice, seemed like it was her first day on the job. She didn't know which dishes had certain forms of dairy that we don't eat, she was never there when we needed her, like for a drink refill or to give us clean dishes, but she would show up right as the food arrived and ask how it was, before we had a chance to take a bit, then she would clear dishes before we were done. The food: The Taradino was fine, but nothing special. The empanada was freshly baked, but it was so dry, and it came with aioli, which didn't pair well. The tacos: the mushroom ones were the best dish of the night. The steak ones were OK, but again, nothing special. Given our experience, I don't think I would take a chance on the mains; I would likely not be impressed. The place was also dead by 9 pm, which is disappointing for the neighborhood and being a rooftop restaurant and bar at a hip hotel. read more

Went here for restaurant week to give a new place a try. All the dishes were overly salty and I'm a salt-alcoholic. The main course was inedibly chewy beef. There was an accidental $200 extra charge on our bill. (Which after we caught it was removed) I can only guess that restaurant week in Denver is designed to entice you to come back to places you have never tried. I definitely don't have that desire. The best thing about this place was a nice view. decent service, and a tasty cocktail. I just don't think I'll be back. It's a shame. It's a beautiful location. read more

The restaurant itself had a cozy atmosphere. Summer would be a phenomenal place on the rooftop deck. But it ends there. Server had to have been new. Walked up in interrupted what was a pretty detailed conversation. Talked over me when I was discussing something with our friends? Did it again after we told her to come back? She told us the places family style that the plates are huge and that we should probably share for the eight of us. Being skeptical looking at the menu I asked how many tacos per plate and she said 2 ? I asked her about the skewers and she again Rep replied 2 We asked her how many ounces of steaks were thinking they were going to be oversized and they arranged from 8 to 20 ounces hardly family style? We were not impressed with the food and that's all eight of us. Sauces weren't complementary to each other overdone with the sweet. Steak skewers were overcooked and undercooked, depending on who had what? They messed up the order and delivered the wrong food to the wrong couples? And them not knowing exactly what was what didn't realize until after they ate part of it. They did bring a replacement.. May come back in the summer for a happy hour on the deck, but definitely won't be back for the food read more

If you go for a drink and a bite or to impress a client, or dinner date, this will do. I went for a business lunch and we did t have much time. The Host recommend something other than chicken if we needed to leave in 45 minutes. While that initially turned me off because I don't eat beef or pork, and the recommendation of salad is honestly insufficient as a meal without protein, we had walked to one place that was closed already. Anywho, the view of the restaurant is nothing less than amazing! The server came quick to take our drink order (i had water) he was swift and against the recommendation I ordered the caesar with chicken. (Sorry no pics for this one.) The salad was beautifully presented with chicken sliced on the side (dark meat). The chicken well seasoned and the salad was fresh. It came with thinly sliced parmigiana. The others order was for the pork tacos no side, he said they were very good. They have an extensive wine menu with many selections over $100/bottle. If you like wine you'll enjoy this spot. They also have a full bar and rooftop outdoor seating. I would like to come again before giving 5 stars but the view deserves a 10. read more

The great views are still there of course, but the decor is a notch higher and the food many notches higher. Great pan-Latin menu with a focus on Peruvian cuisine. Great cocktail options and interesting wine list with emphasis on South American wines. For three of us had the smashed avocado which in actually a really innovative and tasty variation on guacamole, the Peruvian ceviche, papa rellena (which is sort of large potato croquette filled with meat), one of the anticuchos (skewered meat), esquites, and the carne asada with chimichurri. I came for lunch after going to BarberX on the 1st floor. This space was formely The Woods. You take the elevators to the rooftop on the 8th floor. Plenty of room with views to the north and west. A large wraparound outdoor shaded patio with infrared heaters and garage doors that can be opened when it's warmer. I started the bar and was served by James. They opened just last week on October 30th. The food menu is Pan Latin. There is additional options available for dinner after 5pm. I started with a Guava Negroni for $17 made with mexican gin, sweet vermouth, campari and guava juice. James said it was a sweeter entry version of the regular cocktail. But not to sweet. I ordered the Yucatan Fish Tacos, 2 for $14. Very nice fish. I then got the Papa Rellena, a potato croqutte with beef & cheese for $16. I added a 2nd drink, a Red Sangria with Mendoza Malbec, pisco, blood orange, acai and triple sec. A great cocktail. James was attentive. I met another server when I arrived + the director of food operations. No dress code and no automatic service charges. For dessert, I got the Pina Colada Cachanga for $12. It had passion fruit creme, roasted pineapple and 2 scoops of coconut sorbet on a crispy cracker. Nice and sweet. read more

The table we were seated was kind of cramped next to a table in a corner by the window. The busier the restaurant became, we kept getting bumped by servers accessing the corner table. Our diner stuck in the crap seat had to carefully time when he'd take a sip of his beer lest he'd be bumped, again, and spill. The busier the restaurant became, our waitress started getting overwhelmed. The timing of our order was very off. So bad we had to flag down a busser to get our server to find out where our other entrees were. We could have forgiven all of this if the food was worth it...it was not. The food had an egregious lack of flavor! For 2.5 hours we spent $300 (that's even with a meal removed from the bill-4 people) on a very disappointingly bland meal. Will not return. read more

Our server, Charly was lovely and very helpful making food selections. Everything we ordered was delicious.
