Delicious custom made food. Tortillas were fresh and high quality. All ingredients were fresh. Large portions. Margaritas were also tasty and strong. Staff were friendly and service was fast. Building small, tight seating but clean. read more

In the Dillon/Silverthorne area there is a Chipotle and a Qdoba. Both are fine fast casual Mexican food options. But whenever I'm town I come to Chimayo simply because it's better. Far and away better, actually. The fish tacos are incredible. Chimayo is comparably priced but you get so much more value. It should be your default option for Mexican in Summit County. read more

This place was a absolute gem, my girlfriend loved the shrimp tacos & fish burritos. My steak burrito was delicious you could taste how fresh all the ingredients were. We also got the nachos & let me just say if they bottled the queso dip good lord could them make a killing, it was absolutely delicious. I wished I had asked for it in my burrito. The food was great & fresh and at a very reasonable price! This place is a must visit, we'll definitely be back when we come back to Silver Thorne read more

My boyfriend ordered steak fajita tacos, and somehow the employees heard fajita fries. They asked what meat he wanted, he said steak, and then he ended up getting no meat. We ordered chips and queso which were decent. My carnitas Taco was alright but it didn't have much flavor. read more

I love this place and the food but geeeeezzz these employees have the worst attitude! I eat here at least 3 times a month and make a point to go out of my way after hikes or sking to eat here and EVERY time people are rude and just have terrible attitudes. Get it together because you have a great opportunity to have a very successful business! read more

I don't give out 5 stars very often. But this deserves it. I was visiting a friend in CO and stopped by this awesome little Mexican grill. I ordered the baja fish tacos (fried) and it was some of the best tacos I've ever had in my life. They didn't skimp on the meat, cooked perfectly, amazing tasty crunchy breading. I can't wait to go back!! This is a must stop for sure. read more

Waited a looooong time because this place is busy af, but for good reason. Reasonably priced and delicious fish tacos. So filling and tons of great topping options. Great queso, too! I'd definitely go back! read more

Five stars for the food, about 2.5 for service. Delicious build-your-own Mexican fare. My favorite is getting a salad with carnitas and plenty of toppings and salsas. I had the cajun shrimp once and they were also quite tasty. But the service is sloooow. You'd think that since it's a fast casual joint similar to Chipotle that the line would move fairly quickly. Um nope. I've been here 3 times, and every time the wait is 15-25 min, even when the line isn't super long. I get that the food is made to order, but when you're looking for a quick bite before hitting the road, waiting 20 min for a handful of people in front of you just isn't acceptable. Also the staff seems pretty indifferent to serving you. And last time they ran out of onions and cheese (yes, cheese)... but they were still prepared to charge $2 for queso. I was told fajita veggies on top of my carnitas were an extra 60 cents too, even though I wasn't getting the taco shell or any rice or beans. And if you get a burrito, guac and sour cream are both extra. So while I love the food and it seems like the perfect stop-off before getting on I-70, I'm just not willing to wait forever. Going to look for another go-to spot. read more

Fairly decent food but one of the servers treated you like a child. If you didn't choose your condiments quick enough or couldn't decide fast, she was pretty growly. The seating and atmosphere were mediocre at best but, hey, it's fast food. The only thing saving this place is the food, it's good but everything else doesn't equate to a great dining experience. A rating of 5 stars would be generous. Wait time was 30-45 minutes for fast food. read more

Yes Yes Yes Yes!!!! Oh my.....I read the reviews and was convinced that we needed to go here! This place does have a Chipotle feel, but better! The people here give off a good vibe! Friendly faces! Great staff for sure! :) The Fish & Shrimp is awesome.., I can't say anything for the grilled variety... but the fried & battered stuff... yup, a definite winner! Hubby got the Baja Fish Burrito, The Kiddos got a Bean & Cheese Burrito (kids meal), and I got the Baja Shrimp Tacos and Chili Relleno (a la Carte). Wow! It's been awhile since we've had something so delicious. The crispy, crunchy, battered shrimp and fish, so flavorful and fresh... wow. Really good stuff. The kids loved their burritos too! So glad we decided to stop by and try this place. I'm debating which Burrito to get next time... hmm Fish...Shrimp... or Chili Burrito? (I'm sure any of those three will do!) read more

Shame on me for not reading all of the Yelp reviews first regarding their service. I unfortunately was not able to try the food as I was to appalled at how rude I was treated that I walked out. I'm here on vacation from the Kansas City area, so I'd never been to this restaurant before. I saw online that they are carry out only right now, so I called ahead and placed my order. I should have just hung up when the guy on the phone said "what do you want?", but I gave it the benefit of the doubt and went ahead. I placed my order and the man said it'll be ready in 5 minutes. He didn't ask for my name or anything, which I thought was odd, but whatever. Thankfully my condo is less then 5 minutes away, so I hopped in the car and drove there. There were two doors to enter. I enteref the one on the left first and looked around, I then noticed it's a similar format to a well known chain of fast casual restaurants where you go up, place your order and they make it while you tell them what you want included in your order. I realized there were 7 other people in line at the other entrance ,so I walked out and walked back in the other entrance. I waited in line about 10 minutes and noticed that the back of the house looked pretty disorganized and there was a lady yelling at everyone. When I got to the front, I told the gentleman that I called in an order. He then told me that I was supposed to go in the other door. I told him I didn't realize that. He told me to go ahead and proceed to the check out. I cut in front of the 5 guys in front of me and got to the man at the check out. The man I'd previously talked to handed him my order. The man at the checkout then looked at me and said "you're late". I told him I had been waiting in line, he said "you were supposed to come in the other entrance" I asked how I was supposed to know that he said "there's a sign". I said "well, I didn't see it" He then told me again "well I'm just telling you you're late" I then asked if that meant I wasn't getting my food then. He then said "no, you can have it, you're just late". I was so appalled at this point at how I was treated that I walked out without my food. I didn't want to give this establishment my money at this point. I see that the manager has been very defensive on here with most of her replies to reviews similar to mine, so I don't expect much. I just want to give other people the heads up that they'll probably be treated poorly if they go to this restaurant. Just some advice though if she read this, it's called customer service. If you want for people to keep frequenting your restaurant and keep you in business, treat people like you actually appreciate them supporting your business, especially in times like these. Don't tell them three times that "they're late". You may also want to tell the man at the cash register that the mask has to go over the nose too. No point in wearing one at all if it's just covering your mouth. read more

It's a mountain Chipotle but better. The salsas are great and I like their meat choices better. The food is good and it feel nice to support local business. We would absolutely go back. read more

I was definitely looking forward to trying Chimayo after driving 60 miles from Denver. What a total let down. The attitudes of the manager and some of the employees were so bad I just walked out. It started with the Manager who identifies himself as Mark who asked me to step out of the entryway with an attitude, he proceeds to straighten the carpet and then just under his breath says ok. I get to the register to order and ask for Pork Green Chile and the guy just looks at me with a blank stare and then asks a female but she had no interest in helping and just walks away ignoring both of us. I ask the guy helping me will it be available later and he can't even answer that and really doesn't have much interest in finding out. At this point there is no way I'm going to support this business and ask for the manager who again is Mark which started my experience off so bad. It floored me that we was in management and just had the worst attitude you could imagine, then proceeded to mock me when I advised that there would be a review of my experience and throws his hands up giggling. This would be a hard NO for me. read more

We had the Baja fish tacos and the chille relleno burrito. Both were delicious! We got to select from a number of fillings and sauces. Both of our entrees were customized to our taste. 4.5 Stars! This place is awesome, the day we were there they had $1.50 pint PBRs on draft... *rubbing my eyes* Yes! $1.50!! So we're driving back from our weekend getaway to Aspen and got hungry halfway driving on Independence Pass coming back to Denver. Looked up reviews as soon as I had cell service and narrowed it down to 2 places. I'm so glad we picked this place because the other place had cold fries... and there is no way I was about to go check out a place that can't even make their fries right. Like Fletcher mentioned in the review, the sign outside said Best Fish Tacos.. but now they added a new one on their sign. Best fish AND SHRIMP tacos in town. (I think they can even claim best fish and shrimp tacos in the mountains since they are maybe the only taco place in Dillon... lol.) We decided we're going to get an order of Shrimp Tacos, soft corn tortillas of course @ $8.25 and an order of Fish Tacos, soft shells as well @ $8.00 before taxes and tips and PBRs. An order comes with 3 tacos. They were plenty! I could only have 2 and the bf smiled and ate the extra tacos I had left over. Even though both were amazing, I must say I prefer the shrimp over the fish any day if I HAD to pick one. I guess Chimayo has just outdone themselves with beating their best with a new best! I think that they have the best shrimp tacos I've ever had... granted I haven't had that many but still... they were jaw-dropping delicious. The difference in the shrimp compared to the fish was that you can taste the shrimp flavor and a bit more chewiness that I love. The fish was really good as well but I could only taste the fried batter and soft meat.. It didn't feel like I was eating fish... The batter was tasty, crunchy, light and airy on the outside of the seafood. I will make a point to stop here when I drive through the mountains again. I truly enjoyed every bite. They found out that I couldn't have dairy and they were very accommodating... even thinking ahead. Their creamy white sauce for the fish taco and shrimp taco is sour cream based and one of the gentleman working there said right before he was about to slather the sauce all over our tacos, "I wouldn't recommend this sauce if you're lactose intolerant, it's sour cream based." Since we are sharing, I asked for it on the side so the bf can try how it's intended to be. I was offered, by the same guy, additional salsas to try at no additional cost. Their hot charred habanero salsa was amazing and their mild salsa that had a lot of corn was equally delicious. We didn't get to try the medium salsa. Took away half a star because on my way to the bathroom I felt like I was on a slip-n-slide, it was very greasy to walk on but the floor looked rather clean. *shrugs* Even though this is pretty much a 'fast-food' place, the service was great and so were the prices. Most of all, the food was delicious. If you're really super hungry, ask for the Catastrophe. :) read more

Think Chipotle, seafood version Date of Visit: 6/22/16 Stopped into Chimayo for a quick takeout dinner while in the area. The concept is very similar to Chipotle/Qdoba, with a leaning towards seafood; i.e. their top sellers are fish and shrimp (grilled/fried) tacos and burritos. I went with the classic fish tacos and a steak burrito to go. The fish was nicely fried, and the slaw/sauces they recommended paired well. The burrito was so-so; the beans, rice, and veggies were very under-seasoned, making for an especially bland burrito. Long story short, go for the fish tacos, but skip the rest. read more

YUM!! This place rocks! It is like a Chipotle times 100 and everyone loves Chipotle. The flavors are incredible. They have excellent fish tacos and also the burritos are awesome. This is a great place to come after a long day snowboarding or skiing at Keystone. I definitely recommend coming here hungry because they give you plenty of food. This place has gotten better and better. They will do any burrito chimichanga style and they are fantastic. The fresh dips are perfect with a spicy baja salsa, a fantastic 3 cheese queso dip, or fresh corn or tomato salsa. You can customize everything to your flavor. And the kids eat for $4 including a drink. To top off our meal, they offer a savory green chili with and amazing amount of slow cooked pork and hand peeled roasted green chilis. It has just the right amount of spice and flavor. I rate this as the freshest and best Mexican food in Colorado. read more

This place came recommended by a friend. Unfortunately, this is where Yelp can be a detriment because I've overlooked this place several times due to the average rating. I'm a huge fan of fish tacos and living in SoCal over the past decade I've been to the best of the best. In this visit, I opted to pass the Baja style fried fish for the grilled option. I wanted to mix it up with shrimp but they were too slammed to accommodate my request. For the ingredients of the taco, I think they nailed it. The fish was also fresh and hot off the grill. I was willing to wait a couple minutes to get that in my taco. The big failure here was the fact that all the tortillas were cold. Come on guys! Arguably the main part of a taco and you dropped the ball! This would have been an amazing fish taco in a hot tortilla but would have been lights out in a homemade tortilla. It's amazing how many places become complacent with factory made tortillas. It's night and day. I digress (but hope they improve on these things). I like the casual dining feel for a quick bite (and go). Over all the service was good and friendly. Just remember the customer is always right. If you accommodate them they will be willing to be repeat customers. read more

Yeah, the people working here are super-rude jabronis. Hey, if you hate your job, whose fault is that? Be nice to your paying customers, it takes way less effort than being rude. I felt so uncomfortable the whole time I was ordering. I should have walked out when the taco-assembler put in a lot of effort to be as unhelpful as possible. I didn't know what my options were as the toppings had no labels and the guy just pointed and grunted at things. Ok, message received. Cashier was just as rude too. After I paid and waited for my order, I watched the staff mess around with the orders... moving baja fish and grilled fish among different platters.... dude. Work on your communication. Just wow. When I finally got my order, they were so saturated with sauces and overall the bad service left a terrible taste in my mouth. I won't be returning ever again and I used to come here for years. read more

Some of the best fish tacos I've had, along with the WORST "customer service" (if you can call it that) I've ever experienced. We visited yesterday, 1/13 around 4pm. It wasn't busy, there was no one in line ahead of us. The first guy working the line who we placed our order with couldn't be bothered to make eye contact or respond to our "how are you doing" comments. He just grunted and groaned as he begrudgingly got our tortillas ready. The guy working the line and adding the toppings to our tacos and burrito also didn't acknowledge us - not a single word the entire time he was haphazardly assembling our orders. When I asked for onions on my tacos, he acted like it personally offended him and threw them on the top with an eye roll. I didn't ask for the remaining toppings I wanted because I simply didn't want to deal with his attitude. Finally, we get to the register to pay and hope to find some relief there. Nope, my husband greeted the cashier with another "hey how's it going?" Only to be ignored and given an eye roll while this guy counts the money in the register for several minutes before ringing up our order. We *had* planned to buy drinks, too, but when we got to the register, both of us said we just wanted water. I laughed to myself and when we left, asked my husband if he also decided to forego a drink because he didn't want to give this place any more of our money. He said "yep!" It's amazing that the terrible customer service is mentioned in several recent reviews, yet, obviously, nothing has been done to remedy this. It's unbelievable that we paid $20 for a meal and we were not acknowledged once, but were instead met by eye rolls, grunts and passive aggressive behavior. read more

We were in Silverthorne for a week and enjoyed this restaurant so much that we went there for two dinners. It has a layout and ordering style very similar to Chipotle. The fried fish tacos were amazing, and the kids couldn't get enough of the fajita fries. My wife is a vegetarian who got a chimichanga with beans, rice, and cheese, set atop shredded lettuce and smothered in white sauce, and she was very happy with it. Their white sauce and Chimayo sauce were excellent. The first time we went, I made the mistake of going by myself to order food to take back to my family of six. It was chaos! But at least the food was great and the prices were low. read more

Sorry. After many frequent visits here I've come to the conclusion that every person who works here despises paying customers & maybe their job. Every time I roll up to their counter for fresh & yummy tacos, I get met with a bad attitude not from one, but almost all employees. This quality of service may be the status quo in this place, and maybe they get away with it bc the food is pretty legit, but it's not right. I'm just trying to go about my day & get a nice meal, not deal with hostility. Sorry if you're craving your next cig or bowl hit and I got in the way, dude. Be kind. read more

I've noticed a lot of bad reviews concerning the customer service at Chimayo so I decided to revisit. On a Saturday 5pm, pretty busy and I was hungry as hell and slightly on edge. Any dumbass could have tipped me over at this point, yet the Chimayo staff were absolutely PERFECT. As in they did their job correctly and made my party's burritos all perfectly. Nobody's going to bend over and make you feel like a princess here and no ones going to be a condescending jerk like every other food establishment I've been to in this town, as well as Frisco, Vail, Breck. These tourist towns typically have crap food with crap service because everyone hates everything in these towns that's not the actually slopes, makes sense I guess. But let me tell you that Chimayo is A DIAMOND IN THE ROUGH. You will eat here. Grilled shrimp is soo dank, Chimayo staff are real ones.
