This will be my last meal at Chimayo. Manager refused to complete my order after I had paid - and was then tried to use covid protocols as an excuse to not complete my order. Summit county local here - used to absolutely love this place but it has gone very far south in the past six months. The 'manager'/girl bossing everyone around was not only extremely rude but flat out refused to give me my entire order. I ordered a chicken quesadilla and chips and queso. I was extremely polite (I know things are hard for small businesses during covid-19) "yes, ma'am" "no, ma'am." "Yes, please," "thank you very much!" And even tipped 15% to entitled 'manager'. Here's what happened: I got pushed through the line quickly - my box of chips and queso was up but I was still waiting on my quesadilla (which only had chicken on half btw). I was asked to pay and then was asked to wait 6 week away. I told the manager that the guy next to me was my roommate (we came into the store together) and that I still hadn't gotten to tell them what I wanted with my quesadilla (pico and fresh jalapeños and chimayo sauce). The manager got enraged that I spoke back to her and immediately went unhelpful. She refused everything I said and refused to give me pico, jalapeños or sauce - saying if I wanted them I would have to go back through the line and pay for them. Now, for a place that advertises 'build to order entrees' I would assume I could, well, build my order. Charge a couple extra bucks for premium items - I get that. But I spent $20 here today and couldn't get some pico and jalapenos with a QUESADILLA?? A $10 quesadilla only includes cheese and meat? That doesn't seem like a built to order entree to me - and is contrary to every other experience I've had here; but okay? I've eaten at this place probably a hundred times and never had an issue until this woman started working there. Always rude. Always a bad mood despite trying to be polite. This is my second bad experience with her and I'm done. I get that covid is stressful for restaurants - but using 'protocols' as an excuse to give terrible service and bully customers is a sure fire way to make sure I spend my money elsewhere. I get it, be safe - but we didn't violate any order and we complied with everything the woman said; but, she refused to listen to me or acknowledge me after she told me to get behind the line WHEN I HADN'T EVEN RECEIVED ALL OF MY FOOD YET. Not to mention the lady in line with us pulled her mask off for the entire time she was in line and was sticking both her debit card AND her fingers in her mouth - both of which the manager handled and then (without changing gloves) handled food and drinks. If y'all are gonna rip people off for 'following the rules' at least follow ones that make sense. RIP CHIMAYO read more

Chimayo Grill - The bland, underwhelming representation of the service here - Mexican Near Me - Dillon, Colorado

Fantastic food. Recommend! Had a selection of tacos. One of my favorite places in Dillion.

Best Fish Taco in the state. Colorado is known for a lot of things, but "fish" anything is terrible here... This place does fish tacos right. I have been coming here for years, and I cannot get enough of this place. read more

Chimayo Grill - Baja Fish Taco - Mexican Near Me - Dillon, Colorado

Come hungry!!! This is the best fast food style Mexican food I have ever eaten. We ordered for a late lunch and I was full until the next afternoon. The choices are plentiful. There are several options for your tortillas too. I had the grilled shrimp burrito. Who would have ever thought that garlic shrimp would be so good in a burrito but it is AMAZING!!!! The nachos are totally worth every penny to order. They are warm and lightly seasoned and the guacamole is an added bonus. If you are in the area and want a wonderful, reasonably priced meal then Chimayo is a must for anyone that loves Mexican food. read more

I haven't never dealt with the rudest customer service in a restaurant before this. Unbelievably rude service from the person who takes your order, to the person who makes your tacos, and to the rudest bitch who checks you out. Here are three more reviewers who also think this place has the worst costumer service ever! read more

Fish tacos are fresh and tasty. Nice people too. I think I'll try the burrito next time.

To be fair, this is a solid 3.5 review. And here are the reasons why: Yelp absolutely loves this place, so I had to make the stop on our way home from a nice hike near Breckenridge. The line was out the door when we came - always a sign of some good food. So the line was long, no biggie. I don't mind waiting if my food prize at the end of it is worth it. But let me tell you, this line moved soooooooo slow. We were in that middle foyer area for QUITE some time. Do restaurants have foyers? You know the little space between two doors that they have in some restaurants? That place. I would say a good 20 to 30 minutes in line and though the line was actually out the door, it really wasn't that long overall. Anyway, line aside, I ordered the Baja Fish tacos (the menu says Best Seller, so I had to). One order comes with 3 and I got mine on corn tortillas with lettuce, pico de gallo, corn salsa, cheese, cilantro and some Chimayo sauce (a creamy chipotle sauce). The fish was fried fresh - hand breaded Allaskan Pollock. This plate looked absolutely phenomenal, but man I just didn't love it. It was fine - no complaints, but the fish wasn't as crispy as I thought it would be ( I get it, it was covered in sauce and a million other things, but even the parts that weren't were just not that crisp). I also really wanted more from this Chimayo sauce - more kick perhaps? Hmm, just something. The tacos overall were fine, but nothing I would ever drive two hours away for. The bf ordered their Carnitas burrito chimichanga style. This was huge and he packed it with all the fixins possible and then smothered it in green chili. Fried crisp and he liked this okay, but again, nothing that even attempted to blow our minds. The carnitas looked so flavorful and it was good, but was just lacking something. Forever a chimichanga fan, he liked it, but again, nothing to write home about (just Yelp). Not a bad place by any means, there was a tv or two inside, so come in for some Mexican food in the mountains and watch some football. I'm sure good seafood is hard to come by up there, so I definitely get the hype. My favorite part of this meal was for sure the chips with queso, salsa, and guac - get all three, even that salsa is pretty yummy. read more

We love Chimayo! I always get the vegetarian taco salad (freshly deep fried shell and free guac) and my partner loves the Cajun grilled fish in any form (tacos, burrito, etc). And they have cabbage you can sub for lettuce so it's still crisp and perfect for leftovers! Ps: the one star reviews of this restaurant are suspicious read more

Flavorless version of Chipotle, with fewer options. The reviews are rediculous to give this place anything beyond 2 stars. With such high reviews we thought it might be a better version of Chipotle... but not even close. I suspect this is where the high school kids go for filling up but not good for anything else. read more

My daughter got married last weekend, and she wanted a laid back dinner at our home the prior night. We planned about 10 guests, but cooking was overly ambitious, so we checked with Chimayo on catering options. They nailed it. We had an assortment of burritos cut in half, a chip/guacamole/salsa bar, and Chile rellanos with tomatillo sauce. Everything was clearly labeled and presented neatly. All good was ready and hot when we picked it up, and it was a crowd pleaser. Communication and payment online was super clear and easy. Do this. read more

We stopped here on our way home from a long Colorado weekend. The atmosphere is cool: a more edgy Chipotle operation (I only make the comparison because 90% of people would). I got the fish burrito and honestly was a little dissatisfied. The fish by itself was good and the corn salsa was good (but not as good as chipotles) but over all I felt like my burrito was less than outstanding and the ingredients were not as fresh as I'd like. read more

I have no idea why this restaurant has been named one of the best 11 Colorado restaurants outside of Denver. To me, it was a much, much lesser version of Chipotle. It's an order at the counter restaurant. Your order is passed down the counter and you select your toppings with the counter staff. This specific counter-staff (during lunchtime on a Thursday afternoon) was not friendly. All of them appeared to dislike life at that very moment (perhaps they just received some bad news or just finished up a large lunch crowd?) I ordered the Veggie Fajita (soft) tacos & my husband ordered the chicken burrito & chips/salsa. The tacos came as a set of 3. They did allow me to modify from flour to corn tacos. The veggie fajita, a mixed of bell peppers & onion was less than room temperature and flavorless-same with the rice. My husbands burrito was large & filled with chicken, black beans, cheese, & corn (& some other goodies). When I asked him about his burrito he described the burrito as "basic". The salsa however was excellent & was served in 2 options- a spicy paste like option & a chunky pico de Gallo. Both salsas were excellent. The chips could have been excellent had they not been Disgustingly salty. They serve Pepsi products/foundation drinks but also provided the option for a bottled coke, etc. The restaurant appeared to be clean. Overall, I enjoyed very little, if anything about this restaurant experience & food. I do not recommend it and will not return. read more

Food was amazing! It's kinda set up like a chipotle or something similar, but much better food. The spicy stuff was defiantly more on the legit spicy side, but I really enjoyed it still. I got chicken tacos on corn. read more

Best Mexican in Summit county. Bold claim but the service and flavors are top notch. You could get Chipotle down the street. Some burrito at the Keystone area. Look no further than Chimayo in terms of quality and cost. Burritos. Tacos. Cerveza. The staples but it's all done so well and in a chill environment. Minimal lines, great amount of seating inside, fast from ordering to payment. I don't taste that copy and pasted generic "Mexican" experience. The staff is friendly and happy. Fish options galore. They make more chicken or beef when it's needed, not just topping off the same old container in a warmer all day. Big plus! I'm a veggie, but it all just tastes better. Not the same generic and pepper mix Qdoba has. Chipotle recently added the sofritas but I'm actually stoked to get veggies as my "protein" here. Bottled and draft beer. Jarritos. Frozen Margaritas too. Even a separate gluten free menu. It's pretty great to grab a fat burrito after a long day of riding or snowboarding. Come in and give it a shot the next time you are in the area. The local mom and pop vibe and the excellent food will make you a regular! read more

Came after a day of hiking (and getting lost while hiking). Shortly after lunch, and the place was packed! Very popular and for very good reason. Gave off vibes of a fish taco place you would find on the west coast, and the employees gave off the famous care-free vibe you would find on the west coast. Food takes a little while, which makes the whole walk-up counter, a little confusing. Lots of waiting for the person to get their fish cook so you are just staring at whatever you eat on the counter wishing you could eat now. Side note - the frozen marg here is amazing! A perfect treat with the food, and a perfect treat after hiking 10 miles. read more

Not sure why this place isn't rated higher. I visit chipotle frequently in my hometown and Chimayo blows them way out of the water. I have been here a few times now and today was very disappointing and offensive. I ordered first with the woman at the cashier 1 shrimp taco and a quesadilla. Then I moved down the counter to tell the woman making my taco what I'd like in it (you tell them what you want) The latina woman who was making them asked me a question I couldn't understand, but I also noticed she also had 3 taco shells in front of her so I said "Oh I only ordered 1 taco..." She acted like I had insulted HER, rolled her eyes, acted dramatic as heck and actually pushed my tacos back to the cashier and walked away. I was really embarrassed not knowing what I had done to warrant her behavior. Plus she just refused to make my food and I was just standing there super confused like what just happened??! The cashier then told me I couldn't get just 1 shrimp taco (Ok, but when I first ordered it the cashier should have told me that). I was talked to like I should have known this and the woman making the food at the counter was extremely rude and didn't even try to communicate with me. Also why couldn't she just have tossed the 2 shells and made 1 taco??? The cashier had to tell her to come back and make my 1 taco which she did with full annoyance and hostility. I couldn't believe the attitude. I will not be returning because I can't support a business that treats customers like how I was treated. Reading other reviews, others have also been offended by similar hostility. Think about the people you choose to give your money too...this restaurant does not deserve your money until they take responsibility for the numerous offensive acts towards customers. And if it's just this one woman I dealt with, she most certainly does not deserve a job here. You shouldn't be allowed to treat people like that and still have a job. read more

Chimayo is always worth the stop on the way back to Denver from the mountains. Food is tasty and reasonably priced and the portions are super generous. If I could give this place a 0 I would. The food maybe gets a 3. It's not life changing by any means, but the service was out of this world horrible. Everyone was rude. Literally 5 people working and none of them were nice. Fine you had a bad day it happens to all of us, but they also proceeded to mess up all 3 of our orders. They put the wrong protein on all our bowls. Most places would start again from scract but not this place! They just growled at us. Expected us to pay for their mistakes and told us to figure our shit out. Thankful they caved and decided to fix our order, except their did so in the worst way. They just picked up the fish. Wiped off the sauce with their gloves. It didn't even get all the sauce off and they broke each and every fish. Amazing service! They also close promptly at 8. Even if you are the only person in line at 8 they will turn you away. read more

My favorite place to eat in Dillon on the way to and from the mountains. Don't let the often long line deter you from stopping in. I recommend the Grilled Shrimp Tacos. I get them Cajun, but the other option is Garlic Seasoned which also sounds sublime. Among the many taco toppings, I love the Chimayo sauce -- think Chipotle Mayo. My fiancé also loves the burritos. He always comments on how they massage the toppings into the burrito so every bite is equal. YUM! read more

It's fish tacos Qdoba / Chipotle style. But oh so much better! I had the Baja fish tacos with many trimmings and I just couldn't resist a chile relleno. Everything was fresh and tasty. The local staff was friendly even joking with my 5 year old grandson. -1 star for the relleno it was good, just a little too much breading. More like a popper. I can't believe that it took me so long to try them. It will definitely become a go to for a quick quality meal when we are in Summit County. read more
