Second time stopping in and did not disappoint! I ordered the Baja fish tacos, my husband the fish burrito, and my in-laws both ordered the chicken burritos. We were all satisfied with our food to the point of licking our plates. The tortillas are fresh and absolutely to die for! Ordering style is like chipotle, but with more protein options and more sauce / salsa options. The kitchen is open, so you can see what is being cooked and everything is made to order / made fresh. I'd highly recommend to anyone coming up to the mountains for a weekend! read more

Sunday 3/31/19 - Food is great, but good heavens some of the staff are the most unfriendly, unwelcoming service staff I've ever come across. The guy at the cheese/salsa station was very rude and scornful. The little guy at the register was yelling, audibly cursing, and unnecessarily slamming down customers' burritos on the counter. He couldn't count change and he messed up a few peoples' orders and generally looked like he was in really rough shape. Can't beat the Baja fish burritos, but expect to be treated like absolute filth. read more

This has to be m favorite place. Shrimp tacos are my go to, Baja style. The fish tacos are amazing as well. They also make their own tortillas chips for the nachos which are unbelievable as well. Great, fast and fresh Mexican food near keystone resort. I got the Baja fish burrito bowl with added fajita veggies. The fish was fresh from the fryer (hot!) and the breading was the perfect balance of flavor and crunch. My wife got 3 tacos...2 meat and 1 chicken. They were good - but not as good as the Baja fish. Solid option on the burrito/mountain trail. Visited on a friday afternoon in the summer after a day hike, so decidedly off-peak. The fish and shrimp tacos were legit - very distinct and tasty. The meat (carnitas) option was just fine, but suffered a bit waiting for the fish to be done - next time would just go with the fish ones. Items made to order, so take a bit, but worth the wait. Nice to have good veggie options in the mountains as well, my gal enjoyed her veggie burrito made to her specs. Staff was chillllll but effective. This place had pretty decent food but man it was so slow. There were only guys working here and they all seemed pretty high. You know how you just LOVE the food in the taco trucks owned by families? Well, the food here is kind of like the great food in taco trucks, only with MORE CLASS! I ordered chicken tacos. Got three, with double tortillas. Fresh fresh food! I ordered hot salsa on mine, and OH BOY, my sinuses are now cleared! I agree with someone else. FRANCHISE this! Might be a bit dicey to get an RV up here, as you have to make a sharp turn off US 6 and go uphill. If you can get an RV up here, plenty of room to park. But I think it's too dicey to try to turn an RV up this hill. read more

Chimayo= the best local, chipotle-style, fast-casual, Mexican spot west of the Mississippi! A friend told me about this hidden gem, and I could not be more happy about it. The place gives off that authentic, hole-in-the-wall vibe, with an incredible staff to accommodate your any need. Most importantly, the food was an absolute slam dunk. Ingredients were all fresh and delicious; while they also had a couple extra ingredients that you usually don't see at similar style restaurant (different flavor tortillas, fresh jalapenos, refried beans). GREAT Mexican grill with a staff who cares that you get it right (great recommendations), fresh ingredients (they battered the fish right before cooking it to perfection), a fun atmosphere (only issue is they have too many high-top tables, perhaps), and about 2 minutes from the interstate. Goldmine - I could see this being franchised to the moon and back. Fish (pollock) is freshly battered, cooked to order and placed in a burrito with typical fix ins and the Chimayo sauce. Garlic shrimp tacos / burritos / quesadillas are top notch. This is a no frills order at the counter Mexican-style restaurant known for their fish tacos/burrito and it did not disappoint! So yummy! For those of you who have lived in the Front Range, this place has a very similar feel to Illegal Pete's which is basically a less corporate version of Chipotle or Qdoba. Which is great -- support local! Now back to the food. We ordered the baja fish tacos with all the fixings and also the nachos with carnitas with all the fixings. Everything was spot on, we loved the unique sauce recommendations for the tacos, like salsa verde, chimayo sauce and white sauce, and the fish was perfectly fried and tasty. Really good guac, too. I wouldn't necessarily recommend the carnitas or get that again - that was the one thing we thought could use improvement. I can't wait to go back and try the shrimp the next time I am in the mountains! This is a great place to stop apres ski. Extremely filling with generous portions, so delicious and cheap! read more

We stopped here for lunch as we were on our way to Keystone for our friends wedding and the food is awesome! It's fairly small and you order kind of like Chipotle-style. I got the smother burrito, with grilled veggies, rice, and beans, and it was amazing. It is extremely filling and I pushed myself to try to finish, but didn't get there. The ingredients are fresh, the staff is extremely nice/helpful, and they have a lot of toppings/fillings for you to choose from. We also ordered the Mexican fries, but barely ate them because we were all full from our food. They were tasty too, but it's hard to eat fries with so many toppings on them. Overall, a highly recommended place for some delicious Mexican food. read more

We hit up Chimayo regularly, but after today not sure if we will ever come back. The person who takes orders was busy cooking so we slide 3 feet past the ordering station to check out how the ingredients looked. When he came back, he took the person behind us order. When my wife politely said we are still waiting to place our order, he shot back "while you moved." Seriously, you can't see we where next in-line and you where rude? Think of Chimayo as a local alternative to Chipotle. The baja fish tacos are excellent but I wouldn't recommend the baja fish in a burrito - the flavor of the fish is too muddled by the other ingredients. Their chicken burrito is pretty good. Exceeds expectations. It's conveyor style like Chipotle, yet our shrimp tacos were as good as any upscale restaurant. Hubby got the Cajun shrimp burrito and I got the same but tacos. Portion was generous and the flavor was fresh and very delicious. Service is friendly and efficient. We were there at 3pm (not a busy lunch time) and it's so popular we saw a line (it moves quickly). Two outdoor tables are outside as an option. Called for their location and a real person answered the phone which is nice (across from City Market, next to the hot tub store and connected to Starbucks). Our meal including chips and salsa (no drinks, we had water) was $21. Great value for the quality. Will be back! read more

I will never go back to this place again... I basically got harassed by some douche working there for asking for a side of sour cream because I guess I thought their white sauce wasn't "good" enough. Also, I assumed you could get a refill from the soda fountain that is right by where you sit.. But when I filled it up I heard some bullshit smirks from the same guy. When I tried to apologize and ask if it was wrong to do that he just wouldn't look at me and ignored it like a little girl.
