First of all this is not a Mexican restaurant. The food resembles Mexican food, but the staff is more like what I've seen at Illegal Pete's in Boulder (young white stoners). The staff was friendly though and the value was very good for a resort town dinner. The fish burrito was HUGE, delicious, and messy. The fish tacos looked very good as well, but I did not try them. The kid's quesadilla was a bit small, but my little one was happy enough. I will definitely return. read more

Good flavors for the fish and shrimp tacos (garlic and cajun). All ingredients were fresh. Cinnamon churros were nicely made.

Food was excellent! Customer service was not excellent unfortunately, they were rude and aggressive to my friend as well as at least 5 other customers we saw in line. Additionally, when I asked for more limes the man running the cash register used his bare hands (no gloves) to hand me lime wedges directly into my hands. read more

Was really excited about finding this place. Ordered the steak tacos and they were seriously the worst tacos I have ever had. Perhaps the other meats are better but I will not be returning to find out. What a disappointment read more

Love love love Chimayo! Tacos with the Baja Fish are amazing. White sauce! Mmmm. Quick and easy ~ customize to your liking, good options. read more

This is for the stand in the Bluebird Market in Silverthorne. Terrible tacos. Carnitas and chicken served cold! And since I took them to go, I couldn't throw them back at the idiot that served them. Salsa has corn in it. read more

Had some Cajun grilled fish tacos which were amazing. Totally loved it! My husband had the fried fish tacos and he enjoyed them just as much. The Cajun seasoning did not disappoint. Most think of Cajun as blanket spiciness, but it's really more about the complexity of flavor. They totally got that. These guys also know how to make a sauce and pair them well with the proteins. Totally recommended! read more

I'm not sure why I never thought to give them a review as I use Yelp a lot while on the road. I spend a lot of time in Summit County and almost always come here at least once a trip. This is my go to after skiing or hiking. Everything on the menu is fantastic and they even started a breakfast menu during the ski season. Check out CHIMAYO! You won't be disappointed! read more

Tacos are not legit. Thank god they serve beer. You need the beer to mask the tacos. I had the beef plus the famous Baja. The Baja had the right ingredients just a bit stale. The grill was frightening. They must of had an inch of sludge scraped to the back. My friend got the grilled fish. There was maybe 2oz of fish between his three tacos. And lastly .... I ordered the BEEF tacos. Don't put chicken on my tacos then tell me "you said chicken". Want to know how I know I didn't say chicken? Because I NEVER order chicken tacos homeboy. P. S. You should have fresh white chopped onions with cilantro mixed in. This is common taco knowledge 101. read more

Food is absolutely gas and it's not too expensive. The portions are great too. The staff is beyond rude. There was a girl ahead of me who coughed in line and the burrito guy snapped on her and said he wouldn't serve her if she coughed again. If you want chips you better tell them ahead of time because if you ask at the register, you ain't getting chips. All in all I would still recommend. read more

Just had a shrimp taco at the Taste of Colorado. Amazing flavor! Can't wait to stop in at the Dillon location next time we are in the area.

Pretty good. Not a lot of place to sit. Prices are comparable to Chipotle. It's pretty busy. The shrimp and fish tacos are a must.

We have eaten here multiple times, but this is our first time since COVID hit, and we were disappointed with my food, but even more disappointed with the service afterward. One piece of the Baja fish was absolutely rancid. I took a bite and I almost threw up immediately. My husband asked what was wrong, so I asked him to try my food, he did and had the same reaction - immediately spit it out. He went and talked to the manager about the fish and the manager didn't believe him. After a minute of talking to him about it, he reluctantly said sorry and insinuated for us to move on so he could help with other customers. Not very impressed with the service. I will say my husband's burrito tasted great. Just sad that mine was awful and they didn't believe us. Won't be back, sadly. read more

Perfect post skiing/riding lunch. An entire Yelp star added for yummy food in a resort town (usually hard to find). The nachos are kickin. The salsas are fresh. The burritos are fully-loaded. The fish burrito is kickin'. read more

This place used to be one of my favorite spots in Summit.... but my last couple visits have been ruined by the shitty attitudes of the staff, who act like they're soo put out by doing their JOB? Makes it pretty awkward for customers. I get it, I work in the food industry and sometimes we all have bad days, but I mean.....don't work at this place if you hate your job so much. Really disappointing. I was gonna say something nice about the food, because sometimes it is actually awesome, but all the food we bought was cold and I didn't even feel like dealing with the staff to try and fix the issue because they already made it clear that taking someone's order annoys them too much. Won't be coming back here, you're better off going to Chipotle or Qudoba. read more

This place was fantastic!! Stayed 1 night in Silverthorne on our way to Aspen and the shrimp did not disappoint. My girlfriend got the grilled shrimp tacos w/Cajun seasoning and the portion was HUGE. I ordered the Baja shrimp burrito and it to was fresh, delicious and generously portioned. Check them out! read more

Skip the other fast food Mexican places give this place a chance and you'll not regret it. I deducted one star for $1.75 guacamole up charge

I came to this place at 2pm on a weekday and there was a sign out front saying it was closed even though the posted hours showed that they should definitely be open. I dunno about that. Anyway I highly suggest going to Jimmy John's that's right next door instead. They're always open when they say that they are. read more

The food at Chimayo is very good, great take on tacos and it is a local favorite. But it has the absolute worst customer service. There is a short overweight man, with curly black hair that works there and every time I see him I just turn around and walk out the door. Shocking this man has yet to be fired because he truly ruins the place. Didn't hear him ask you if you want cabbage or lettuce don't worry he'll just yell it at you and everyone else in the place. He just seems like he is talking down to you and will be irritated if you can't recite your order quick enough or the he wants you to. So if you have never been to Chimayo, good luck if this guy is there! It truly amazes me every time how he is just never in a good mood. Maybe chimayo can just get away with it because their food is good, but if you have to deal with this guy be ready to end that experience feeling like you want to talk to the manager. read more

I really enjoyed this place. Plus it's locally owned and operated. My wife and I both got a "classic burrito" and we were both very pleased/satisfied. The options on the menu all looked good, but I love burritos so I'm glad I went with that option. There's a QDOBA just down the street, but this is better, and it feels good to know you're supporting a local entrepreneur. read more

The best fish tacos I have had. A little off the beaten path but worth it. Every time we're in the area we make a stop.

Amazing tacos all around. Chicken, steak, shrimp & fish are all great. Cabbage replaces lettuce with a creamy white sauce & choice of salsa. Cajun seasoning mixed with the hot salsa is HOT & I'm from the south so I can handle hot!! Grab a PBR on tap for $1.50. Service is impeccable. Enjoyed going later in the day & our purveyors spent some time chatting with us. Local spot that makes you wanna come back again & again..... read more

My husband and I both ordered one of each chicken, beef, and carnitas tacos. Out of those three, I enjoyed the beef the most. Overall, I thought they were a little bland. I had the mild corn salsa, so I asked for some of the pico and that livened them up a little bit. I didn't like that the crema was extra. If I went back, I think I would spend the extra couple bucks and get the shrimp tacos. I wish they all came with chips and salsa. I didn't feel like it was a great deal. read more

For what ever reason the local press raves about this place. Me...not so much. The fish tacos are dry & the fish quantity could be improved. I am not sure what I expected, but it's basically Qdoba style with servers that could use more experience and probably less dank. (And yes Heather, I have worked in the service industry. I'll skip the emoticon.) All in all the experience left me flat. There are plenty of other places to eat in Summit County, though not so many close to my house in Dillon. read more

I had the Baja shrimp burrito and it was amazing!!!! Prob one of the best burritos I've ever had. Every bite was amazing. I would have given this place five stars but what bothered me was that their was extremely loud rap music playing. Now I don't hate rap but I don't like it when every other word is the "n" word and lots of cussing. If u don't get offended easily by music like that then u will be ok. I just hope they either turn it down so customers don't hear it, or change it to something more acceptable. read more

I've been coming here for about 10 years now, since I was a kid, and they have gotten to be so rude and make me so uncomfortable. Their food is obviously yummy but seriously they are SO condescending! I told the cashier everything I had ordered, and I guess he forgot to mark down that I got a chile relleno (how am I supposed to know?!) so I walk away and we start eating. He comes up to my table, furious, and said "ummmm you gonna pay for that relleno?" So I did, but was met with rudeness and condescension. Not my fault you didn't hear my order, buddy! Might want to be a little nicer to people-you never know when you're letting a frequent customer down. read more

It's a shame to see other reviewers ragging on the employees, and comparing Chimayo to other chain fast food Mexican restaraunts. That's like comparing a great local coffee shop to a large chain store. We found the Chimayo employees very friendly and helpful. The shrimp burritos were excellent. The quality of food and service far exceeds that of the chain fast food Mexican restaurants. read more

Super yummy!! Like Chipotle, but tastes even better. They even have different kinds of tortillas to choose from. 10/10 recommend the Baja fish! I'm not even a huge fan of fish but this was delicious with the Chilé tortilla. They're not as fast as Chipotle, but they don't advertise being a fast-food place so I don't know why people would expect their food super quickly. They also have a fairly small staff, which adds to that. If you're looking for some delicious, customizable, authentic Mexican food then this place is for you. read more

Its good if you are craving some tacos or burritos. The multiple chefs are friendly and helpful with suggestions. The food is good not fantastic. Breaded fish is bland but you can spice it up with hot sauce. Seemed pretty hygielinic, which is a consideration when planning to do outdoor activities all day. Large servings, but line moves slow. read more

ok let me start by saying this food is actually amazing. the crispy chili burrito is like the best thing ive ever eaten in my life. they said their building a location in denver soon and i most absolutely will be going there at least once a week. but the service....is just sad. we walk up and the dude literally says "jesus f**cking christ" and turns around to his co workers talking about how busy it is while were standing right there ready to order? okay secondly the same guy rings us up, i accidentally forgot to pay because i thought he rang it up on the same check and my boyfriend had paid, i walked away for like 20 seconds? the guy literally yells at me and starts rolling his eyes and saying YOUR ORDER IS 11.75. 11.75 OKAY? i apologized and he didnt say anything, just rolling his eyes and shaking his head. ok i understand i was in the wrong but this was a very inappropriate way to handle things at a customer service workplace and made me feel extremely uncomfortable... read more
