I got the half and half bowl Which includes half salad base & rice; did a superblend greens blend with brown basmati rice With a scoop of hummus & tzatziki. Chose chicken as my protein. But you have an option of: chicken, lamb, beef, roasted veggies & I think meatballs. Then added lettuce & tortillas strips along with cucumber tomato salsa, cabbage slaw topped with a siracha yogurt dressing. And it was so good. The other bowl consisted of Saffron I fused Rice, lentils, chicken, roasted pepper hummus and some type of Chile paste, with lettuce, chips, pick onions, cabbage topped with lemon dressing. I love Cava it is my go to spot, I love the braised lamb, it is soooo good. The only thing about this locations it is always busy, sometimes they may run out of lamb which has happened only a few times. I recommend ordering your food via the Cava app, that way you can avoid the line if you have a Marc train or Amtrak to take, or just to confirm what you want is available. I typically get the grain bowl with lamb. The braised lamb cost extra, about $1.45 on top of the $10.47 but worth even penny. I also suggest using the app because of the reward points, I previously paid with the "Level Up" app but today I discovered they do not utilize this any longer. I tired to pay with my Cava app but I was experiencing further difficulties. The manager ended up taking care of my meal, this is why I will continue to support this restaurant. Not only do they provide amazing fresh food but also excellent service. My favorite part about enjoying the grain bowl is how I feel afterwards, I don't feel lethargic. My go-to order is super greens and arugula, lentils, hummus, eggplant, and either harissa or roasted red pepper hummus, half chicken and half veggie, and almost all the toppings!! I can't get enough of the harissa, it's spicy but salty as hell, so I try not to get this every time, especially if you're going to be trapped on a train or bus for hours and the water supply is limited. My husband and I wanted to grab a quick bite for lunch after our visit to the Postal Museum so we stumbled upon this place. Although the line was long it moves fairly quickly. It is a fast casual Mediterranean restaurant. It pretty much follows the usual do it yourself format. Chose a base, either a salad, grain, rice, or mix and then start adding to it. I decided upon a spinach salad grain mix, for my protein I opted for their fresh vegetables. There is a sign indicating that some of their proteins like lamb have a small upcharge. From there you can add other unlimited Mediterranean toppings along with a dressing. I remember getting some eggplant dip as one of my sides.You also get a slice of pita bread. You can get drinks from the usual machines and pay for a small or large or get bottled water. I had a difficult time hearing due to so much noise but went pretty much with what the folks who were putting together my dish. Believe me this meal did not disappoint and I was glad I was able to get something healthy. I was literally blown away by this place. Prices are reasonable and table seating is directly outside. This eatery is located near the main foyer of Union Station. Union Station gets quite busy over the lunch hour with all their shops and eateries. UGH why Cava must you betray me- I came back here and did the order ahead option as I was there during prime lunch time. I picked up my meal, a greens and grains bowl, and dug in. Instantly disappointed. Grains, you say? Oh, not visible to the naked eye. The only way I noticed there was even ONE grain was because every bite or two I was crunching down on something incredibly hard. At first I thought it may be from the super greens but no, from "rice". This "rice" was so either over cooked or maybe not cooked at all, it was rock solid. I may need to call my dentist after, that's how hard this stuff was. I honestly almost feel lucky they didn't give me much of it I would need to realign my jaw. I need many more visits to hone my selections. The variety of greens, grains, proteins, spreads, toppings, and finishes had my head spinning at first. Variety being the spice of life is wit large here. The staff and menu boards do a wonderful job explaining the process. Similar to Chipotle or Roti (all in the same area), you pick a base like greens or rice, up to three dips and spreads like hummus or tzatziki, a protein like falafel or spicy lamb meatballs, an assortment of topping like slaw or olives, and a drizzle of dressings. Since I did not know what any of the prepared ingredients tasted like I just went with what I thought it would taste like by the name and look. Perhaps I should have asked for a sample of each unknown thing but I am sure the Union Station lunch line would shot nasty looks after my 10th sample or so. So I guessed. I roll those edible dice. I hit a seven on the first roll. The combo I chose tasted fresh and very Mediterranean like. The savory with the tart, the spicy with the sour, the sweet with the pungent...you get the drift. My problem is that I cannot remember what exactly I added. I only remember arugula, lentils, hummus, and falafel. On return trips I tried to recreate that perfect bowl but to no avail. I'm a big fan of this CAVA location and get lunch from here 1-2 times per work week. Typically, I order ahead on their awesome app to skip the line and get points towards free food. While the line can look insanely long sometimes, they move fast! I like that they are very upfront about their nutrition facts, offer a good variety of vegetarian/meat options, and consistently have my order ready at the pickup time. The one improvement they could make is on the consistency of the dishes. Depending on who makes my food, I get wildly different amounts of ingredients. There have been a couple of occasions now where my dressing cup is only a quarter or third full and I either have to ask for more or don't realize it until I'm back at my office. YALLLL why is this place not in Dallas?! My friend suggested me to try this spot and I was so down for it because​ I was craving for some fusion Mediterranean​ meal. And she couldn't stop talking about their delicious falafels. I was a bit​ hesitated because some places I've tried just overcook it or its just not good by itself for whatever reasons. And she was RIGHT, that was some BOMBB falafel I've ever tasted in a while. It was sooo good by itself but with the other ingredients​ I combined with made it that 5 stars experience. I had a bowl with a base of spinach and brown Basmati​ rice then topped with hummus, tzatziki, harissa (very hot), falafel, pearl couscous, diced cucumber, tomato + onion salad, and a lemon herb tahini dressing. SERIOUSLY BOMB! I can't​ explain but its that good. I was sad that they only gave me four falafel into the bowl, so I wonder if they charge for more (if that's​ the case, charge me more for all you can) or I should've been vocal to request more. My first time at a Cava, and was just what I needed right before my Amtrak ride back to NY (which was supposed to take 3.5 hours but ended up taking 6!) So many choices and they're all so flavorful. Be a baller and fork over the extra $1.75 for the lamb meatballs. They're wonderful. I did a salad bowl with the lamb meetballs, roasted red pepper hummus, harissa, eggplant dip, and a bunch of the (unlimited) veggie toppings. Everything was super fresh and extremely tasty. And for $11? Crazy! Wasn't expecting something like this in a transit hub. But so glad we chose it! Happy to see there are a few locations in New York -- and a few more on the way! Glad to see more places like Cava popping up that offer quick, healthy, cost-friendly options. We shouldn't have to spend crazy money for healthful meals! I'm glad Cava gets that. read more

I was pretty skeptical about this place since my experience with other assembly line food prep places has been hit or miss but I was pleasantly surprised. You cannot beat the speed and efficiency at which the staff is taking orders and keeping the lunch rush crowd from getting anxious. Even though they moved folks through quickly, they still made eye contact and smiled when asking what you'd like added to your bowl at each step. I appreciate the variety of tea and lemonades as well as alternative fountain drinks to the normal cola products. Favorite combination so far is the grains and green bowl using spinach, brown rice, roasted vegetables, chicken, humus, beans, tomatoes / cucumbers, and finally the lemon tahini sauce (yum)! read more

But, this time, I arrived to the station early enough to go on a little adventure and tucked away in a far corner is where I found Cava. I've been to Cava a few times, and while I love the concept and Mediterranean food, I just haven't enjoyed it as much as one of their competitors. That is still the case, unfortunately. Don't get me wrong, Cava is good, but they just don't have as many topping options that I'd like to see. Hey yo. Cava is freaking amazing! I was looking for something somewhat healthy around Union Station after a long 6-hour bus ride from NYC and I found the most legit place. I'm probably already biased because I love Mediterranean food, but I believe this place gives the biggest bang for the buck in the station. Thrilled to be the first review of Cava's new location--Union Station debut. Cava didn't disappoint. I've been to the Cava in Baltimore 4 bottomless brunch, but this is a different cava. Where making your order is from a line similar to chipotle, roti, shophouse, etc. You know the drill. But this. This, my friends, was fantastic. My bad for ordering at the very end of the night, but this was by far the worst Cava I've ever had (and Cava is one of my favorite fast casual options). My pita was literally as hard as a rock (could not even break off a piece; husband and I did find amusement wacking it against counter though) and my salad had much smaller portions than usual and didn't taste fresh. I threw away my entire meal. Previous meals at this location have been fantastic and their employees are SUPER friendly/helpful, so I'm just chalking it up to ordering at the end of the night. But maybe consider closing at 9 like the rest of Union Station restaurants if quality is going to be low after that. read more

The high price of rent in Union Station has weeded out all the restaurants that aren't chains, I believe. CAVA seems to be thriving in the besided a skilled competitor in Roti. I hadn't been to CAVA in awhile and since I'd hit Roti a week ago I felt it was time for a change. The three people I interacted with (two food prep gentlemen and the cashier) were the highlights of visit. The place was clean but I attributed this to CAVA's recent move into the space. I started my Grain Bowl right with Black Lentils and ordered Falafel as my protein. The falafel added to my bowl was the last they had ready so I was wondering what the people behind me got, because they didn't wait for more to be prepared. I forgot to mention that my visit was a 4:30, weekday visit. That is something key which I will return to shortly. So, outside of the Lentils and the Falafel, my bowl was pretty bare because all the green stuff was either wilted or turning brown. I did get Cucumbers which weren't brown and were good. I also liked something I got with Currants but other than that, I paid 10 bucks I should have spent at Roti or at the even newer CAVA on H Street. Now, this wasn't the worst meal I've had but the lettuce and the like was trifling. I'm not a student of Union Station economics but I am guessing that the move is to make the money off the lunch crowd, after that, go through the motions and clip any stragglers here and there. But I'm going to posit something, quasi revolutionary; instead of operating without purpose, why not close and rent the space out to pop-ups or even a non-profit serving meals to those in need. My first time trying CAVA and just as the rest of the reviews state, it's just like a Mediterranean Chipotle's (speaking of which, Chipotle's is located right across from CAVA at Union Station ). I had the greens and grains and all the different toppings with the "spicy" lamb meat balls (not spicy at all IMO). It was a very tasty salad with fresh ingredients. I thought the measly 4 pieces of lamb meatballs would not be enough, but after filling up with all the added ingredients of the salad and a pita, it was more than enough! I also had the watermelon mint juice and I liked it. I know some people who don't like mint, so it is definitely an acquired taste. I'd definitely recommend this establishment for a tasty feel-good salad type meal. read more

When I found out there was a CAVA in the union station, I got so excited! I stopped in after my train ride. It was not busy at all. The employees were extremely helpful and pleasant. I picked the ingredients to go in my bowl and it even came with a free pita! I'm not crazy about the falafel but it's not the worst. Came here at the lunch hour during the week and this was one of the only places with a LONG line. Naturally, I gravitated towards this place. I mean, if there's a long line it must be good? Right? I was not disappointed. The service was SO FAST and the food was SO DELICIOUS. I highly recommend the chicken as your protein and the harissa sauce (spicy but good).
