Our mixologist was named Talon; he was very friendly and knowledgeable. He started by asking us what we usually like to drink (spirits and flavor profiles). Once we gave him the information he needed, Talon proceeded to make us some amazing cocktails. I absolutely loved mine and could have drank them all night. I tried some of my friends' drinks and they were all excellent as well. We ordered several appetizers to share (guacamole, wings, empanadas, and mojo chicharrones), everything was very tasty. Talon came back over to ask us what options we'd like for our second round or drinks, so we all went with something different than the first order. Every cocktail he served us was really good and based on our individual tastes and preferences. I wish I lived in the area because I would go to Odd Birds regularly. The night we were there, they had a secret disco going on in the main dining area which sounded like a fun idea. I loved everything from the drinks, food, and interior decor. Long waits are common for this spot. The interior is the old Ice Plant so it has great character. Not super large so limited dining spots within. I went classic Old Fashioned, presentation AND taste were on point. We split the Crab Beignets order of 4. The breading on them was light and fluffy, the Crab tasty and they were cooked appropriately, no burns or underdone spots. For our main course, we elected to split 2 of the specials of the day so they may not be there when you go, but judging by the quality of the specials, any dish would be great. We had the Caesar Salad (which is like calling the Queen Mary2 a "boat"!). It is next level, 7 minute eggs, homemade croutons, Anchovie forward, all good! We also split an order of Shrimp Cake Sliders. These were huge, and the slaw that accompanied was the perfect match to the shrimp without overwhelming them. My spouse and I checked out the self-guided tour right before we grabbed dinner at The Ice Plant. The tour isn't particularly long but was filled with information. After the tour, we headed upstairs to the restaurant. The restaurant feels really spacious with its super tall ceilings. There was lots to look at reminding us of the previous use of the building. We ordered the hand cut fries, strawberry and beet salad, and the gochujang marinated pork chop. I also ordered a few of their drinks, each one featuring different types of ice to fit the drink. Honestly all the food and the drinks were so good, but the easy standout of the night for both my spouse and I were the pork chops. These might have been the best pork chops I've ever had in my life. The pork chops were incredibly tender and juicy, not dry at all. I was expecting it to be a little dry, as I feel like pork chop can sometimes get overcooked, but no. These were so juicy and tender. I asked our server how the pork chop was cooked. Our server said that the pork chops were cooked sous vide, which makes a lot of sense as to how they were so tender. I've already told my spouse if we are in the St. Augustine area again, I would make a special trip just to get these pork chops again, they were that good. I really enjoyed this restaurant.
