Every time I come to Eureka, from Tulsa, I have to eat at Bubba's barbecue at least once. I have traveled a lot and I have yet to find a place that has as good as ribs and chicken as this place. We had the loaded fries, bbq sampler and pulled pork sandwich. The ambiance is nice but the state of the food was bland to say the least. In fact, I don't believe I've ever had BBQ as bland as theirs. Not only was it devoid of any seasoning but it barely had a smokey flavor. In all fairness, we visited Bubba's just a few days after the new owners took over. So. Hopefully the items that I mention that needed attention have been taken care of now. Bubba's is an institution in Eureka Springs. I had a SLICED Brisket sandwich.the meat was more chopped than sliced and was quite dry. It did have a good Smokey flavor and the sauces were good. Bubbas is a neat spot. Staff was friendly and the dining room was comfortable. The BBQ sandwich was to be expected and the BBQ beans were pretty good. The BBQ nachos however disappointed. BBQ brisket nachos are amazing. Real cheese. Good meat. Homemade chips. Love it! We had plenty of food in one order of nachos with a side of cheese dip, which was real, full-flavored cheese instead of the watery thinned out stuff from other places. We sat out on the deck for a very comfy experience, out in the fresh air, smelling the aroma of smoked meats... Traffic noise was minimal and not at all off-putting. Friendly and accommodating wait staff is on par with expectations. It's also right across the street from the Tree House Cottages, so extremely convenient. I love checking out BBQ restaurants on my travels and we chose Bubba's for our stay in Eureka Springs this week. With my wife ordering the chicken and rib plate, I decided to go a bit out of character and order the Bubba Link sandwich - two split hot links with chili and cheese on ciabatta bread and fries. A big regret. An impossible sandwich to try and eat with your hands, It should have been served in a bun to hold the chili in place. Hot Links - average; smokey and tender but a tough casing. Chili - probably some of the worst I've experienced at a BBQ restaurant. Bleh - no smokey meat morsels or sweet and tangy sauce; just very below average diner style chili. Fries, plentiful but way undercooked. I sampled a rib and a bit of chicken from my wifes plate - again just ordinary and non-memorable. I did enjoy the sampling of coleslaw from her plate. If Bubba's were in the Kansas City metro, it wouldn't crack the top 40. The place does have a great little rural touristy vibe and the service was adequate but I wish we had chosen a different place. read more

Friendly staff, good prices, ample portions. Homey atmosphere. I had the Cluck & Squeal (sounds like a good time!) 1/4 chicken and 1/4 slab of ribs. Both were well smoked. Ribs displayed a prominent smoke ring. Both had good smoke scent and taste. However, both also lacked noticeable seasoning. The sauces were unremarkable. The "hot" seemed to be red-colored vinegar, and the mild was workmanlike at best. Side beans and cole slaw also unremarkable. Ciabatta bread was fresh and soft. Special Gal had a Cuban sandwich, which she didn't much care for until she added the mild sauce. read more

This has always been a "HAVE TO STOP" when we are in Eureka Springs but today the ribs were some of the best I've ever had anywhere. That is saying a lot because I rarely pass a BBQ place without indulging. And don't skip the fries, my normal diet doesn't include potatoes but I only make it to Bubba's a couple times a year so I cheat.! Great little place away from all the craziness of downtown. We were drawn in by a sign we saw the sign for a smoked Bologna Sandwich. We went back the next day and they did not have that but they did have a smoked bologna with pulled pork sandwich and that is what she ordered. I ordered the 3 little pigs and both were wonderful. If you like coleslaw, I DEFINITELY wouldn't get your hopes up because it is practically just lettuce and pepper, was so boring i couldn't eat more than a bite. I'm hoping I was was there in an off-day. Got lured in by the wonderful bbq smoke/aroma rolling across hwy 62. Had Sample Combo W/ Chicken; all meats were pretty dry and not fresh. Ribs were good, but a bit dry. Brisket and pulled pork were dry - and some of the meat was cut in odd shapes. Chicken was the worst - never have I had chicken with thick leather-like skin. I had to peel the dry meat out of the skin, and the thick skin stayed intact. Sides were good, but in small cups. Wait staff was very good. read more
