A small, young restaurant near the oldest bridge of Brugge, Bistro Bruut offers 1 carefully developed menu, which changes every 2 to 3 weeks. The menu has either 3 or 4 courses and a dessert. The waiter provided excellent wine pairings. Delightful amuse-bouches and excellent bread were served as we waited for the first course.
Each dish was complex and contained a mix of often unexpected and uncommon ingredients: vegetables, fruits, herbs, flowers, seafood. Each ingredient burst with freshness and flavor and was married with other flavors in a dish that we would eat slowly, savoring every bite. There was ample time in between dishes to enjoy conversation and sip wine at the long rustic ("bruut") table. Servings were intense but not filling. We still had a good appetite when we got to the main course, a pork dish. Even the dessert was not heavy or filling: a delightful fruit and carrot dish high in taste and low in sugar and fat.
Dining at Bistro Bruut is an all evening experience. Take your time to enjoy your company, your food, and... the time in between. The quality of the ingredients paired with the chef's imagination and an impeccable service made this into a true 5-star experience.
