For reference, I worked the oven in a small bakery for seven years. Most small bakers are overly concerned about underbaking the center of their product. To compensate for thus fear they overbake. What they should be doing is turning the heat down and baking longer. Every oven is different. Experiment until you get it perfect and then do not vary. The top should be golden.

The staff is always extremely friendly and I have frequently positive interactions with them when I stop by. Prices are reasonable, and the food is very high-quality while also being consistently fresh. Parking can be a challenge at times, but it's always worth the effort. Not to mention a chance for a nice stroll around downtown Bend after my meal... just the perfect end to complement a perfect day here in this lovely place.
