Fries seasoned like somebody actually cared. And then my bowl showed up. That gumbo was dark-dark. The kind of roux that lets you know it's been places. Thick, rich, unctuous, and absolutely not here to be polite. Chicken and sausage swimming like they belonged there--because they did. The red beans? Creamy, silky, plump, and riding that rice like they've been together since high school. Let me be clear: You don't know fried chicken gumbo. You think you do. We haven't made it past that to try the chicken wings, but I have no doubt they'll be a winner too. Me-mild. Him-spicy. Hot biscuits with a bit of honey or dipped in red beans & rice. Such a delicious treat from that iconic Louisiana Kitchen. Fun fact: Red beans & rice are traditionally made on Mondays. Mondays were washdays and a pot of kidney beans with the trinity of vegetables (bell pepper, onions and celery) and spices could sit and simmer on the stove while the women washed and scrubbed the clothes.
