This review is solely on the host and the estimated wait time. My husband and I have tried coming here twice without a reservation, and the most recent visit was on a Thursday evening. We have yet been able to sit down and actually try the food because we've walked away. For a table of 2, we were told the wait would be 30 minutes. We can easily see there were plenty of tables in the dining area. We were hungry and put our name down, but we decided to walk away and visit another restaurant that also served seafood. This is a disappointment because 5 minutes after we put our name down, we received a text saying our table was ready. This would've been a great wait time if we were honestly told how long it would be. Even if they told us 15 minutes, we might have waited longer! But we were already sitting at a nice restaurant across the street. We are in Carlsbad Village after all. There are other restaurants to choose from. The first time we tried, it was for a table of 4 on a Saturday evening and we were told a 2 hour wait. The wait times are so long, but is it even a good estimate? The food was very good! I really enjoyed the trout where you can ask for different sides if you didn't want the scallops potatoes and green beans that it comes with. I don't love green beans so I substituted it for sautéed spinach. The fish was cooked to a nice temperature and it was moist and flaky. The complimentary sourdough bread with butter was delicious. I came here with my family on a Thursday afternoon. We were a party of eight and they were able to see us a little bit earlier. Sitting outside is lovely and there are umbrellas for shade. However, the train does come by every now and then, and it can get a little bit loud. The server was very attentive and was checking up on us consistently. Now... onto the food. The food was amazing. We came during happy hour, and we ordered the poke nachos, the crab and artichoke dip, and the fish tacos. Everything was incredible. The fish was very fresh and prices are reasonable. Another star of the show was the shrimp tacos, which are not pictured. The calamari was super crispy. I also got the fish and chips which were delicious. I've been coming to Bluewater for years now. I have to say I've had some good experiences and some not so great. This night was bad. I arrived to meet friends who were already seated. They had bread, but ordered more for us late comers. It was a while before a server came to the table, long enough that when he came to take our drink orders we had viewed the menu and were ready to order our food too. He was friendly and patient though. We again requested the bread that never came prior. They were somewhat busy as it was happy hour so we waited a bit. We just chatted and caught up. After a while we once again requested bread as it still hadn't been brought to us. Third time was a charm and we were finally brought bread. The bread was the highlight of the meal. Served warm, it is soft inside and crunchy out side with a soft butter accompaniment. Shortly thereafter, our food arrived except for one of our party's orders. Two people ordered firecracker shrimp and they were cold upon arrival. One decided to send it back. Sadly my scallops were so rubbery that the provided fork and spoon could barely cut through it. (You can see my picture from the last time I had this dish and the drastic difference was clear) I hate sending food back so I ate it but it was pretty bad. The missing order arrived and it was supposed to be blackened fish tacos. The ratio of cabbage and salsa on top to the small amount of fish in the taco was disappointing, as was the lack of seasoning. Also, we would have liked more water but it was never offered and we didn't see the server until we waved him down for the check. I've tried a lot of items on their menu over the years but the lack of quality and consistency I experienced on this night may have me rethinking that choice, unfortunately. read more

I appreciate the Bluewater Grill Seafood. They have a decent happy hour, with a good selection of food specials and drink specials. The interior of the restroom was clean and inviting. The service staff was very attentive and checked regularly. The regular checks was a plus, because we kept ordering more drinks. We ordered the steam clams, a sushi roll and crab cakes. What stood out of the most was the steamed clams. The garlic broth was delicious, so save some sourdough bread for dipping. We also ordered oyster shooters. The "islander" containing tequila and the the "shucker's choice" containing vodka. The hard liquor was a bit over powering and was abrasive. A month prior, we visited the Coronado location and had the "michelada" oyster shooter and it was decent as the beer didn't over power the oyster. There's a lot of potential in creating a non-alcoholic oyster shooter, and hopefully smaller in size. I would recommend a mexican flavor approach with a tomato base or even a Japanese approach with ponzu. The "shooter" size was about a "single" glass, a bit much but gosh trying to down it was abrasive, just to get to the oyster. Overall, I'll stick to the oyster on the half shell as they have a special for that at Happy Hour. I appreciate the staff that served us and this establishment as a whole. I've been thinking about the trout for a month so when I got off work, I drove straight there. I work in San Marcos. When I arrived, I got great parking. I walk in and the hostess is seating me at a table and to the right there's one booth open against the wall and two booths dirty, nobody in them.
