Though simply cooked in butter and spices, they tasted fresh, on par with large scallops I had bought at Whole Foods in the past and cooked at home, perhaps even better. But it struck me when I looked at the menu, seeing a Vietnamese section, that the owners aren't your typical Texan cooks. They're eclectic. When when I see originality, I have to try it. The green beans were also fresh, simple but well put together, without bacon, the way they should be, because that's how my grandma used to cook them (grandma is always right, sorry not sorry.)
