Best bbq hands down in Whatcom county. Some of the best brisket I've ever had, including in Kansas City and North and South Carolina. I don't eat pork, so finding a bbq place with good food is hard enough, and finding one with good non-pork options is even harder. Even though I don't eat it, none of my friends have been disappointed by any of the options I wouldn't go for. And Rick and Linda are amazing. Sunday we were looking for a place to sit in the sunshine to have a beer and landed at K2 ~ you never know what food truck is going to be there. Very delicious BBQ, we ordered the combo plate, Texas Reuben, Burnt ends, corn bread and a few Irish stouts. The beans could be described as heavy on the vinegar as could the slaw but as such cleared the palate nicely. My wife liked the density of the beans and I would say they were slightly soft and probably the least favorite item of the meal. The kale veg in the slaw made it memorable and gave a textural contrast I enjoyed. My wife wanted the corn bread more moist and warm, but we might have a different opinion if we didn't eat it last. The ribs were hands down the best of the meats, brisket second and pork belly just over the pulled pork. My wife preferred the burnt ends after scraping off the excessive sauce that came with the plate. The Texas Reuben didn't taste like a Reuben and definitely needed the bun toasted or changed for rye or sourdough bread. Overall the brisket was so good I didn't care what they called it but did look for the cheese and sour kraut to be sure it was actually there. read more

Confession: I love Texas barbecue. I have been all over Texas sampling the highest-rated places as well as the lesser known, out of the way joints. I love the taste of it and the smell of it and the ambience. I love the culture, the fact that it's craft food, carefully made and never quite the same two days in a row. Good Texas barbecue can only be made by a fanatic; it's just too demanding. I've eaten barbecue in San Antonio and Austin and Lexington, in Arlington and Marathon and Dallas, in Luling and Taylor and Llano and Driftwood, and all three famous places in Lockhart. I love it. This is true, excellent, authentic, delicious Texas barbecue. I have eaten here twice in the last month, and they are making moist, tender brisket with a peppery bark and perfect smoky aroma. I have only had the brisket and the ribs. They are both great. I spoke with Rick the first time I came; he takes tremendous interest in his product. I plan to eat here often. I'd been dying for BBQ, found this place. It was not good. The ribs were cold, with only dry rub on them. Like the were pulled out from the fridge and cut.. the cornbread was cold, dry and flakey as well. The mac n cheese was home cooked, warm and very tastey. It saved the meal, which was very expensive for an afternoon lunch +27.00 for myself with no drink. At 1:30 pm I thought the ribs would be fresh, warm and fall off the bone, not so. I won't return. We just tried this Food Truck this weekend while grabbing beers at Stemma Brewery and it was SO GOOD! My boyfriend and I each ordered the slider trio; all three sliders were tasty and flavorful. I especially liked the classic pulled pork & slaw slider, and my boyfriend raved about the brisket & bleu cheese. Our friend ordered a one-person combo which comes with a ton of food. I am a food critic and pit master. I only give a review if I find something to give a good review about. I feel it is better to build a business than to tear it apart. That being said . Big Stick BBQ was fantastic smoked meets. I picked up combination for two. With and extra side. The brisket is spot on. Flavor was incredible. The pork ribs were meaty and juicy. And the pulled pork had great smoke flavor and ring. The rub choice and design truly compliment the meats. Bravo to Big Stick on knocking it out of the park. Took my mother-in-law here for a birthday lunch at her request. Everything we had was generous and delicious! I had the brisket with cornbread and mac & cheese. Some of the tastiest brisket I've had. Mom had the Texas Rueben sandwich with black eyed pea salad. She said everything was great. My husband had a pulled pork sandwich with mac & cheese. Already looking forward to going here again! wow, best bbq we have found up here! Went to lunch at Big Stick yesterday and it is great! I had the brisket meal, the brisket was so tender you didn't need a knife to cut it! I had the mac & cheese with it which I loved because it wasn't all goopy with cheese sauce, was more my style being a little drier but very good and I think there were little pieces of jalapeño in it and gave it just a bit of a bite. Just perfect! The only thing I wasn't crazy about was my husband had the baby back ribs and I thought they were tough. Pulled pork extremely tasty and tender. We will definitely be back! read more

On Father's Day we tracked down Big Stick BBQ at the Kulshan Brewery. Many of our friends had told us you have to eat here. I'll sum it up. The best BBQ in Bellingham. My wife and i are picky too. Had lunch with friends. I'm always on the hunt for good barbeque. I had a pulled pork with coleslaw, and it was very good. I liked that it had the sauce on the side so you can add your own. My friends had A combo and Mac and cheese with pork belly. We were all very happy with our meals, and would certainly go there again. Nothing like amazing BBQ and great beer! The hubs and I were psyched to see their food truck at Stones Throw brewery yesterday. We ordered a rack of ribs, the burnt ends (WOW), and their coleslaw. It came out super fast and the hubs said we might need some foil to bring some home. HA! He dug into the ribs like they were going out of style while I obsessed over the burnt ends. They are spectacular! They are pork belly rather than brisket, so I almost didn't order them - but on the wise advice of the owner, I decided to order them before they ran out. The ribs were perfect; and the coleslaw was tangy with a little spice - lemon juice based versus mayo so really balance the meat. read more

The ribs had the right texture (they're not supposed to fall off the bone). I humbly suggest that adding a little salt would be good for the pulled pork and ribs. All in all, definitely worth a try. The barbecue aroma when we walked in was appetizing! The food was not. First, the woman taking orders said you get about 1/2 rack of ribs in 1 lb. So I order the rib plate thinking I'm going to get 1/2 rack. To my surprise the plate shows up with 3 ribs. The meat was tender but not "falling off the bone" because there wasn't enough meat to fall off. It was mostly fat. Second, I never knew you could ruin beans. The beans were much too firm and in a watery sauce that had a strong vinegar flavor. The Mac and cheese was okay although I wished I had realized I could have ordered plain. Didn't read the very fine print on the chalkboard menu. Finally, it's over priced. We spent over $70 for two and left hungry. Extremely disappointed read more

This is the classic hidden away gem. When ever I try BBQ the brisket is my measuring stick. Oh did big stick hit it out of the park. My wife and I shared the BBQ plate for 2, everything was great. The slaw Was a big surprise, my wife usually passes it up, it was a different flavor blend that Ms. Gina raved about to family. Yes! Macaroni and cheese that isn't a solid life-form and has a kick of jalapeno! A sandwich called a "Rissa" that satisfies my sweet and salty craving - pulled pork, brie cheese, jalapeno jelly, good lord. Big Stick is another local food truck that I stalk online to see where they are at for the day.
