The coleslaw, unfortunately, was pretty bland and disappointing, especially considering the large order cost $18 and looked more like a small 10-ounce serving. We also never received the cornbread, so I can't comment on that. My husband did enjoy the mac and cheese and said it was very good. Our total came to about $195 with food, tax, and tip. Based on our experience, I'd recommend ordering the meat from here because it's excellent, but making your own sides at home. Well all I have to say is yum! Well that's not all I have to say. Doing a not so strict keto, but I still tried the baked beans (just a taste) very different. In fact I'd like them better then Texas beans. Texas Does a Charro bean which to me is not beans.. The brisket was flavorful moist, mostly lean with a very thin fat cap. Pulled pork was finished up perfectly with a touch of Carolina vinegar.. The ribs were awesome. Had a nice labor. I got the end of moore center cut guy, but they were still good a little dryer than I like because of the end but I guarantee you if I would've got the center they would've been beyond perfect. I was craving for BBQ and in Bellingham, there are only two restaurants that offer it. One of them is closed for half of the days of the week, so I was left with no choice but to come to this one. The inside of the restaurant is spacious and clean. There are ample parking spots available at the front of the restaurant. Their menu is posted along the back wall, and once you're ready to order, you walk up to the counter. They will give you a number after you pay for your food. I tried their ribs, chili, and cornbread combo. The ribs tasted like they were boiled and had no flavor. Worse yet, they were served lukewarm and soggy. For the price of $30 (only 4 pieces), it was definitely a complete rip off. You are better off getting ribs from Applebee's. Their chili and cornbread were marginally ok. Very friendly person behind counter and was fast to bring out my morsels! Let's start with coleslaw, I think it had too much spice in it for me. Yet the beans were hot & terrific tasting a winner. As for ribs well meat fell right off the bone and you can see the smoke ring. Smoke ring is a signature for any pit master worth his smoker, yet didn't think ribs were the best I've ever tasted. Maybe it was his rub I'm not sure. I thought kinda dry but can't pinpoint my contempt. Again my opinion is subjective so try it for yourself. I had the chance to try their food truck on a Friday evening at Stemma. Given that I've spent a disproportionate time in the Gulf Coast region, I was initially hesitant to venture into the world of PNW BBQ, but boy, am I glad I did! What initially drew me to this food cart as a frugal foodie was the excellent price point. $13 for x3 sliders of BBQ meat and varied toppings is hard to beat in this area. I was impressed with each of the slider flavors and thought that they were memorable in their own way, which I will wax on about below. The brisket blue came with some yummy blue cheese and the brisket was cooked wonderfully - I can honestly say I have never really thought of mixing blue cheese in with brisket like that, but they managed to pull it off. The "rissa" option was also fun and fresh, mixing pulled pork, brie, and jalapeno jelly. Once again, a unique cheese theme adored by turophiles everywhere such as myself! This slider, coupled with tasty jalapeno zing, was another winner. Lastly was the more classic pulled pork with coleslaw, which really hit the spot. The brisket in particular is really good - tender yet has good consistency. The BBQ sauce is great. The ribs are also really good. Pulled pork is so so but maybe I don't really like pulled pork. Left several messages. Never did get a call back. My Dil called and spoke to Rick, who claimed to be the manager. He apologized and stated he wanted to make it right. He offered to give us a gift card to replace the meal ( very generous). We told him we would be out of town and he said "no problem and I will let everyone know. It's now 2 weeks later. My Dil called to order the replacement meal and he said he had to double check with the owner, who was at a funeral. An hour goes by and no call. My Dil calls back again and he advised that they changed their minds and said that was it. After exchanging words he said as far as they were concerned, they have settled this and would do nothing. I then wrote an honest respectful review. They saw it and immediately called my Dil and stated they would be having their IT person remove my review and accused us of trying to get free food. Never did we ask for a full replacement, that was his offer. He then said they would refund us for the ribs and beans. Too little too late. Shameful behavior for a business. I already had BBQ in Walla Walla this week, but I was in town for a birthday party and was hungry on my way home. I did a quick search for BBQ because I was still hankering for some hefty protein. This place was not too far off I-5, in an industrial area, but what a pleasant reward to arrive at this joint. The restaurant is clean with a great atmosphere. I understand they have live music. I asked for a recommendation, and the combination plate was decided on along with a side of pork belly burnt ends. Holy smokes (pun intended), this meal was phenomenal, from each of the proteins, the coleslaw is unique but tasty, plus the roll was a great compliment to the plate. The pork belly burnt ends were mouth watering with just the perfect amount of sweet/tangy/heat. I loved the brisket, maybe the best brisket I've had at a restaurant (a friend makes killer brisket). Hi again Big Stick Barbecue, We were famished coming off a long hour road trip and got one plate to share and 1lb of brisket to go. When we got the plate to share, the brisket was severely overcooked. My friend didn't mind the texture, but I thought it resembled slimy canned tuna with the flavor of dry pot roast. The table barbecue sauce tasted like watered down apple pie mixed with ketchup. The highlight was their macaroni and cheese, it was very good. We finished the plate, but didn't want to take home an additional $26 worth of meat-mush, so we canceled the order with the kid up front. Another guy came out and said they cannot cancel because it was cut and cannot be re-sold. Totally understandable. I called out the overcooked food online and got an emotionally charged review from the staff: "Your one star penalty for us kindly sharing with you our policy regarding refunds on ordered prepared food, is offset by your obvious enjoyment of the plated meal and wine you had consumed while at the restaurant" I guess I wrote the review because I secretly loved the food, and couldn't bare the thought of an additional pound of heaven in my fridge the next day. Big stick offers sauce but I went with naked (meat). Each had the right amount of moisture. Then came the Beans, cole slaw and a house made biscuit. Coke slaw was either tangy sweet or sweet tangy with a nice citrus taste. I finished it all. Now in fairness dear reader I am on Keto diet so I don't usually eat the beans nor bread. My husband is a BBQ connoisseur, I am not. And we both really liked this place. We both had the brisket - it was tender, flavorful, and moist. Their sauce was great - not too sweet. Sides were also great - more on the savory side and not over sauced. We had Texas pinto beans, BBQ beans, coleslaw, and black eyed pea salad.
