The niku tama is more of a thicker soup base similar to egg drop soup, however has a more slightly sweet umami flavor. The kakuni udon had a lighter broth with braised pork belly. Their chicken "posolé" is solid, and I love the large hominy bits along with the clear but green tint of a broth.
