Beginning with delightful staff that greeted us and took our order, service was fast and efficient. I had a simple bean burrito, which was just what I wanted to start the day. It's a simple restaurant -- order at the front. Sit, wait for your meal that comes to your table quickly -- nothing fancy but a very nice neighborhood ambience to it. Look forward to returning for lunch or dinner to try out other items that look very good.

That should have given me a clue as to the heat temperature! I couldn't finish my meal as it was too spicy for me. I know I don't tolerate heat very well, so just offering this as a warning to others that might be in the same boat. Luckily they offered sopapillas and honey for dessert. The sweetness of the honey helped to soothe the sting. This location is in a strip mall and they have done a very nice job of decorating it. It looks clean and well maintained. You will need to order at the counter and then they will bring your meal out to your table. It seems to make sense that you would offer meals for all people, even ones like me that cannot manage the spice. I have to give them a lower rating only due to the fact that I know I won't be able to go back since they don't have a non-spicy option for their meals.

Although some tables were occupied, the restaurant was far from busy. After the receptionist sat us in/at one of the spacious booths, our waitstaff immediately came to us to greet us. What we got tonight were: -Spicy Mango Ceviche ($17) -Bean and Cheese Burrito ($9) -Crispy Sweet Potato Tacos ($16) -Brown Sugar Caramel Flan ($9) for to-go If I go ahead and rank them from the best to the least good (LOL) here it is: 1. Crispy Sweet Potato Tacos - Simply exquisite. Vegetarian (possibly vegan) dish which you don't have to compromise your satisfaction or craving. Not only what's inside the tortilla but the tortilla itself was also amazing. It's a corn kind. We have never tasted anything like this before. 2. Spicy Mango Ceviche - Good portion for the price. The spiciness is noticeable but anybody can handle this level of heat. A visible amount of shrimp was evident in it. The mango pieces were diced a bit smaller than what I would want to see and taste but all in all, this is a solid dish as well. 3. Brown Sugar Caramel Flan - I took a bite of it later when we were home. Candidly stating, it wasn't as great as I hoped would be as it somewhat lacked that typical flan flavors. It also wasn't dense enough. It was passable with adequacy and acceptableness is the best way to describe it. 4. Bean and Cheese Burrito - Was my least favorite dish for the night and yet, this too, wasn't a bad dish. If you are vegetarian, then this definitely is one of the safest bets you can choose from the menu. If I am to order this again, however,I will ask for a little modification: add cilantro rice to it. I am pretty sure this should easily be done at a place like Blanco; I have no doubt. The restaurant is spacious in both the main dining area and the bar. The bar was empty except for one solo guest that sat in the center of it. For some reason, this image created an incredible ambience where I was compelled to take a photo of it (I uploaded it so please make sure to view it.)

The green sauce was vibrant and fresh and really a balanced the rest of the dish. The tuna empanada like thing was also good. Love the blue corn shell. The sauce had ants in it though which kind of freaked me out, but it did taste good. Although I knew this was a tuna dish, I didn't know what to expect. Kind of wish the tuna was maybe seared or was something different, but I did like the dish. The short ribs were so tender and delicious. The tortillas were fresh and wonderful as well. The tres leches dessert was also really tasty and had the perfect ratio of cake to milk without it all falling apart from being too wet. In terms of drinks, the corn sour and beet spritz were absolutely amazing. The Negroni was good as well but I think I prefer a classic Italian one. Service was good although sometimes I felt like our server was watching us too closely and I felt weird. In addition on two separate occasions, the cooks that brought the food out touched the food on our plates to make it look nicer. I want to trust that they are clean, but in this day and age of new food poisonings happening all the time, and the fact that they had to open the door since we were outside, I just felt kind of gross about it. Nevertheless the food was absolutely delicious and honestly was worth the price for sure. The food here was much better than some top restaurants in nyc for a fraction of the price. Waited 45 minutes as walk in on Friday night around 8 pm and was definitely worth it.

We walked in and at first it seemed like it had a decent vibe. I had actually been to this location before when it was a different restaurant. Seems like this spot changes ownership pretty frequently, which in hindsight probably says something. Right away we noticed a bunch of tables, especially the booths, still hadn't been bussed. We were told to "sit anywhere," but the only clean tables available were high tops and we wanted a booth, so we waited for the busser, who moved at a pace that honestly felt unbelievable. He seemed to be clearing tables one cup and one plate at a time, walking each item individually back to the kitchen. It was painfully inefficient. It was obvious both he and the girl at the bar saw us standing there waiting for a booth to be cleared, but nobody seemed concerned about it. Eventually the table was finally cleared, but then it sat there dirty for a long time without being wiped down. At that point we just sat anyway, assuming someone would quickly come over and clean it once they saw guests sitting there. In most restaurants, that's standard. Not here. After waiting even longer, I finally asked for a rag so I could wipe the table down myself. The response I got back was rude: "Why don't you just sit at one of the tables that's already clear?" That pretty much sealed it for us. The vibe was off from the second we walked in, and you could feel the lack of care throughout the whole place. At that point we didn't even want to order food because it already felt like the experience was headed downhill. We got up and left. Honestly, I'm glad we did. Service and atmosphere usually reflect what's happening behind the scenes, and I had zero confidence the food experience would've been any different. After leaving, we went to El Centro instead and had a much better experience. I'd recommend choosing that over this place any day of the week. Giving people a good dining experience really isn't that complicated. Sometimes it honestly feels like restaurant staff have never gone out to eat themselves and experienced what good hospitality actually feels like. Unfortunately this place completely missed the mark. We won't be back, and I wouldn't recommend it.

There are plenty of Mexican restaurants to choose from, but finding one that genuinely reflects our Mexican roots is much harder. As a Mexican from California, I've always believed California sets a very high standard when it comes to Mexican cuisine. This time, however, El Colima proved that Colorado absolutely has a place serving real, authentic Mexican food. The portions were generous and satisfying, the ingredients were fresh, and every dish was full of flavor. You can tell they take pride in both the quality of their food and the overall dining experience. The service was outstanding, and the atmosphere was warm and welcoming. From start to finish, everything exceeded my expectations. Thank you, El Colima Mexican Food, for such an amazing experience. I look forward to visiting again the next time I'm in Denver!
