    Peach Milk Punch with Bancha Green Tea

    I came to try their chefs counter inside Molino Chido called Mas Chido. Only 5 seats for 3 seatings at 4pm, 6pm & 8pm on Fri & Sat. The 5 course experience is $85 + $55 for non-alcoholic pairings. Their regular chefs were involved along with Executive Director/Chef Michael Diaz de Leon formely with Bruto in Milk Market. I expected an exciting event. It was. Each course was creative and Javier P, our server created customized non-alcoholic drinks for me. First course was an Aquachile, a cool tomato & plum dish with carbonated strawberry juice accented with nori crisps and nori "caviar". Nori is a edible seaweed and the caviar is powdered nori with chia gel. It was a bit salty as you would expect with real caviar. Javier created a Peach Milk Punch with Bancha Green tea. Wonderful & refreshing. Second course was Momo. This was a soup style dumpling filled with smoked tofu and esquite. Javier presented a unusual Mexican beverage, sparkling Tejuino. Tejuino is fermented corn masa with cane sugar and water. It acquires yeast from the air naturally and provide a very low alcohol, sweet & sour tangy drink. Carbonation reduces the alcohol. Third course was Empalme, which means stacked. Here was a crispy tortilla with a layer of melted queso panela, a layer of fatty pork collar and ice lettuce. Ice lettuce is an edible succulent. Visually interesting. So it's a form of mexican sandwich, but not a tortas. Javier created a Sangrita Verde with honeydew & lime juice with Serrano peppers for heat. Fourth course was Verano. The was Kampachi Al Pastor. This is yellowtail tuna marinated in a al pastor adobo with chiles, achiote and pineapple juice, then seared. It rested on Mole Chabacano with a leaf of bibb lettuce. A side plate had a white Sonoran tortilla with squash butter. Two ways to eat: Butter the tortilla then place the tuna, Bibb lettuce and mole and eat it like a taco or not. Javier created a honey mustard apricot gimlet. I could taste the tang of the honey mustard and the sweetness of the apricot. For dessert, we got a cinnamon sugared churro with a black sesame chocolate caramel sauce with edible leaves that tasted like anise. Javier created a cold creamy Chai with foam on top. The dining room has lime green tables with plenty of green palms with a Cantina atmosphere. The courses were brought out by a separate chef for each guest for maximum effect. The chefs counter includes a 22% service charge. No additional tip is required. I got an additional drink before dessert for free. It was a sparkling non-alcoholic wine from Suri of Copenhagen, Denmark. Good palate cleanser. Happy Hour is Tues-Fri 4pm-5pm. A wonderful experience.

    I am honestly so impressed with Molino Chido. I've never tasted tacos like these before. The flavors were complex in such a beautiful way that I almost cried after my first bite of the lengua tacos. I ordered four tacos, lengua, al pastor, campechano, and mushroom and every single one was incredible. The lengua was unbelievably tender and literally melted in my mouth. The al pastor was juicy and perfectly marinated, and the sweetness from the pineapple made the flavors pop. The mushroom tacos were packed with umami, and the mole paired with them was absolutely beautiful. The campechano was salty and fatty in the best way just perfect, honestly hard to describe because it was that good. The service was excellent as well. You can tell these tacos are crafted with serious skill and intention and the chef's high standards really show in every bite. This place completely blew me away and I'll be thinking about those tacos for a long time.

    This spot comes from 2 famous names in the Denver food scene, so my expectations were very high. The food is delicious, as are the spicy margaritas. The service was friendly and prompt. If I lived in the area, I'd come back again. I'm not entirely sold on the decor: I understand it's meant to be an homage to the taco stands in Mexico, but a metal folding chair doesn't really invite you to sit there for 2 hours. I imagine it might be even more difficult to get a kid to sit in it for any long period of time. It's not exactly a comfortable/cozy space -- that's all. The best dishes were probably the things other than the tacos -- although the steak one was juicy and fantastic and I'd get it again. It's not that they weren't good; it's just that I don't think they were particularly different or better than any other tacos in Denver. I would recommend the tuna/watermelon Aguachile Rojo (so refreshing and beautiful), curried potato Flautas (like samosa rolls), grilled branzino (the perfect fish dish), and carne asada steak (huge portion of super flavorful beef). Pricing? You be the judge: - tuna aguachile $22 - steak taco $12 - whole branzino - $48 - carne asada steak (16oz) - $58 The do have a weekday happy hour, so that helps!

    Award-winning chefs, Michael Diaz De Leon & Tommy Lee, paired up for Molino Chido, a taqueria based on the taco stands found in Mexico City. Behind butter-yellow subway tiles, you can see the molineras hard at work making the perfect corn tortillas, which serve as a vessel for the many taco creations. You will walk past cement troughs filled with bags of corn and flour as you head to your simple but colorful green-and-white metal table and chairs, transporting you to the streets of Mexico. We went for their Chido Hour (Happy Hour), which runs Tuesday-Friday, 3-5pm. Our server asked if we had been in before, and since it was our first time, she gave us a rundown of the menu and some of her favorites. I started with the Paloma, which is made with Mezcal and lacto grapefruit, so it is less acidic. It went down easily. I switched to the HH Chenin Blanc. Molino Chido is curating a selection of natural wines to accompany their tacos. The HH choice wasn't a natural wine, but it does use natural and sustainable methods in its production. Now, the important part, the food! I tried two different tacos, the Al Pastor and the Lengua. The Al Pastor had tender meat and a pineapple flavor that wasn't too sweet--the lengua of bison, definitely my favorite. The only issue I had was that the frites on top were overly salted. That was easily tempered with the miso frijoles I ordered, since the creamy texture and the cotija and chili Colorado countered the salt. Thinking I had enough food, I was tempted into trying another small dish and was glad I did. The ceviche was excellent! In addition to the puffy corn tortillas for the tacos, I got to try the crispy corn tortillas with fresh ceviche, the delicious leche de tigre, and apple pico. As I walked out, I saw another customer with the Milanesa (fried chicken cutlet) with rajas con queso. I will be back, Molino Chido!

    Excellent place! Molino Chido is located inside Stanley Marketplace. Molino Chido offers a small menu with delicious Mexico City style cuisine. The concept of this restaurant is unique and very fun. It takes you to the streets of Mexico City. Highlights of the menu for me were the verduras taco, ceviche, frijoles, and margarita. So, so, very good! Servers were on top of their game for a Friday afternoon and our food was out to our table in mere minutes. Can't wait to return!!

    We just got back from Molino Chido and were blown away. This was easily one of the best meals we have had in a long time and we dine out often. We ordered the potato flautas, the gringa al pastor, and the mushroom taco, and every single bite was packed with flavor and tasted incredibly fresh. The trio of salsas was chef's kiss and perfectly complemented everything we tried. You can tell how much care goes into the operation. The kitchen was visibly clean and well organized, and the presentation of the food was top notch. The service was friendly and attentive. The hostess mentioned that some of the chefs have Michelin restaurant experience, which absolutely shows in the food. We will definitely be back. Highly recommend.

    Molino Chido did not disappoint. The food was flavorful, fresh, and clearly made with care--but I have to call out the spicy margarita . When they say spicy, they mean it. It definitely burns on the way down... but somehow it's still delicious and totally worth it if you like real heat in your drinks. That said, I did find a hair in one of my tacos, which was disappointing. I mentioned it to the waitress at the time, and while things like that can happen, it did take away from the experience a bit. Great vibes, solid food, and a margarita that doesn't mess around. I'd absolutely come back (and yes, I'd order the spicy marg again--pain and all ).

    Molino Chido, the new taqueria from Denver chefs Tommy Lee and Michael Diaz de Leon, completely blew me away. From the moment the food hit the table, it was clear how much care and intention goes into everything here. The homemade corn tortillas alone are worth the visit. Warm, fragrant, and clearly made fresh. Every single dish we tried was excellent. This place really feels like it was born from two worlds coming together. There is deep respect for tradition, but also creativity and playfulness in the flavors. It feels thoughtful, welcoming, and very community driven. What we ordered included al pastor tacos with pineapple, a pavo taco with recado negro and egg, prime strip loin with lujo peppercorn, a queso chihuahua quesadilla with mushrooms and salsa macha, an aguachile rojo with chorizo spiced bluefin tuna, and curry potato flautas. Honestly, there was not a weak bite. I rarely say this, but everything was great. I am already planning my next visit to try more of the menu. Make a reservation and go as soon as you can.

    I was excited about this place. The previous Mexican restaurant in this spot was not great. They really renovated it and it's really bright and casual. I'm not sure that's a great thing for a 3p-close restaurant? A lot of cement so maybe meant to make you feel like on a street? The tables are kind of metal casual remind me of the card tables you fold out. The waitstaff was attentive and the menu is not huge like a few different type tacos that are definitely "street taco" size and some other items. The drink menu has more items than the food. They have an array of drinks and I got the Carajillo which was like an espresso martini meets tequila. It was very good. As far as the food, I did not like any of it. They have a heavy spice hand and while I realize they are going for "Mexico city" style street food, idk I just wish it could appeal to all flavors. We tried the following: Aguachile with hamachi yellowtail - very spicy Flautas - remind me of like Indian spices in a flauta with a mole and crema. Also very spicy. The burrito was chile Colorado with beans- spicy Beans- surrounded by peppers and red liquid which was spicy. Steak taco- peppery spicy Al Pastor taco - not spicy the only thing really not having a ton of spice. While it may appeal to some besides quesadilla that's all a child could eat and those not able to handle too much spice. Not sure what they would eat. Probably wouldn't return here.

    Molino Chido hasn't been open long, and I've already been twice. We've enjoyed bites off the "Chido Hour" menu, as well as tacos and the frijoles from the regular menu. My guy reports the spicy hibiscus margarita is really good, and the regular marg is also solid. I haven't tried the cocktails, but who doesn't enjoy a nice, cold Mexican Coke? Everything has been enjoyable, but our favorites are the Al pastor ("I could eat 100 of those things. I don't even like tacos." -My Husband) and the Pavo taco. I don't think I've ever seen a turkey taco before, so it's interesting and a nice combination with the jammy egg. I also really enjoyed the molé in the verduras taco, but the squash was pretty firm and I was unsure if that was intentional or not. I thought it would have been better if it was cooked a little longer so it softened more. The makeover to the interior gives this space a whole new look that feels open, casual and inviting. I love the tile and the different shades of green. Service has been warm and welcoming, and servers are happy to answer any questions. If they don't know the answer offhand, they don't hesitate to go ask the chef. As a person who asks too many questions (due mainly to dietary restrictions), I appreciate that!

    I liked this place so much that I came back for the new chef's tasting menu, mas chido! Everything was delicious, inventive, creative, and beautifully presented. An excellent meal at a reasonable price point. Five courses for only $85! I also got the drink pairing for $55, and it was well worth it. Some very unique and tasty dishes! 10 out of 10 recommend.

    I saw that's it's a rising restaurant on the Resy app articles and rightly so, having just opened 3 months ago. The vibe gives off an unpretentious Mexico City inspired taqueria. I love the green space, low tables & chairs -- just very inviting. It's located on the 1st floor of Stanley Market. Since it recently opened, there are ample reservation slots on OpenTable so snag them when you can! Came on Tuesday night which apparently is Tostada Tuesdays. We had the rotating tostada special of tuna tostada which was simply divine. The chunks of tuna reminded me of poke but garnished/ seasoned with the most amazing garlic looking tajin spices. This was probably my favorite from all the stuff we ordered today. We got the flautas as recommended by our server. It was good but not a super fan of curry potato. As for the tacos, the lengua (bison tongue) and frites definitely hit the spot. Topped with the spicy yellow salsa!! To die for. I also tried the mushroom taco but that wasn't doing it for me. The spicy margarita had some heat to it which I loved. Our server was so nice and gave us 3 shots of mezcal on the house to celebrate! We all hadn't seen each other for quite some time so it was definitely an occasion to catch up and celebrate milestones. It was interesting because it's not like a tequila shot but-- you "kiss" or sip on the mezcal, suck on the orange slice dipped in a tajin looking powder then eat a cricket! Would have loved if they served desserts on the menu though!!

    This is a new favorite restaurant in Denver and it makes sense why there is usually a 45ish min wait around dinner time, but it is absolutely worth it! Everything from the tacos to the ceviche to the quesadillas are amazing. They also have a strong selection of drinks too!

One of the tacos that we got was kinda dry but the flavor was there and nothing a little salsa couldn't save (especially the green salsa - it's so good). My favorites were the birria and the el pastor. So flavorful and tasty. The jamaica was super refreshing as well and perfect for these hot summer days. I will definitely be back!

Unfortunately, the customer service was disappointing. We were told our total was $32, but when I paid with a card, the final charge came to $34.93. When I asked why the amount was different, I was told it was because I paid with a card. I understand that taxes and fees may apply, but customers should be told the full amount before being charged. What bothered me the most was the attitude. When I politely asked for clarification, the person cooking responded in a rude and arrogant way, saying, "You know that in the United States you have to pay sales tax." I wasn't questioning whether sales tax exists, I was simply asking why the amount I was quoted was different from the amount I was charged. I also noticed that my receipt showed a Denver sales tax rate of 9.15%, even though the food truck was located in Aurora on Hampden, which added to the confusion. The food is excellent, but the customer service and lack of clear communication left a negative impression. I would return for the food, but I hope they work on treating customers with more respect and explaining charges more clearly.
