We came across this patisserie while wandering the fabulous gourmet food hall at Galleries Lafayette. The food hall offers a dizzying and eye catching array of the most beautiful and colorful treats you would ever want to stuff in your mouth. But what caught my eye the most amongst all of the colorful offerings from all of the vendors was the beautiful simplicity of the golden, flakey croissants at Yann Couvreur.
In France, when you see a straight shaped croissant, you know that the croissant uses 100% butter, "croissants au beurre". Croissants that use partial butter and partial margarine, or "croissants ordinaire", by law, may NOT be straight but must be the curved crescent shape.
The croissants in the display at Yann Couvreur were not only magnificently straight but were perfectly golden.
They were amazing.
