Been here a total of 4 times now. I've yet to try the pizza, but I have tried the hamburgers, wings, key west shrimp, bacon wrapped scallops, steakhouse tips, wraps, panini, and fries. I've been extremely impressed with everything except the hamburger. Too dry for my taste. The Key West Shrimp and Jack Daniels Wings will keep me coming back. They sell Boar's Head meats and they are at least 1-2 dollars cheaper than Harris Teeter. I have yet to venture into the higher priced cuts of meats, but picked up a pound of their hamburger meat for Memorial Day. Excellent. It is a very solid 4-star in my book. The only negatives are the location and that I've had sub-par service during one visit (granted, it was during their soft opening) Update 7/18: Gave their burgers another try. The best place to get pre-marinated meat for your BBQ's. I love spicy and their firehouse burgers and steak tips are to die for. It's to the point where I've contemplated getting a job there for a week just so I can learn the recipe. It's been my secret where I get the marinated firehouse steak tips and burgers to serve to my guests so they can compliment me on my grilling skills. I moved from Ashburn shortly after The Wine'ing Butcher opened. It was a true tragedy. When recently back in the area it was only natural I visit one of my favorite little markets. They are sort of a grocery/deli mix. Their specialty is marinated meats (the steak tips in particular), and they are darn delicious, but they sell many cuts of meat, not all marinated. They have dry aged steaks (I think both 30 and 40 days) that looked delectable, as well as seafood. They offer a small selection of cheeses, and I noticed chocolate raspberry and fig cognac chèvres that I really, REALLY would have loved to try. There was also lard, a little produce section, and house-made ice cream (eggnog and Irish cookies and cream flavors!). They used to have a fairly decent selection of baked goods and sweets, but that seemed somewhat diminished. I didn't see the homemade Oreos, which sort of broke my heart, but maybe they just didn't have any that day (if you ever come across some, don't hesitate, just grab a bag or two). They had much more wine than when I'd been there previously, some refrigerated. Besides all these products they also have a deli with some prepared salads as well as sandwiches, burgers, and soups. There are tables available to eat inside, or you can take your order to go. I was flying home the day I visited, so I really couldn't buy anything, but I kept finding myself saying, "Oh, if we were home I'd get this," and "I'd definitely stop by the store a couple times a month if we had it where we live." The building looked so appealing when we drove by, that we needed to come back and check it out. The menu had an option for everyone. Loved the variety and creative twists on traditional food. The honey habanero sauce for the Mac n cheese fritters was DELICIOUS! The Burgers were Large and delicious. The table next to us ordered Pizza and we were admiring, and kicking ourselves for not trying one of those also!!! Hidden gem in Ashburn. One of the best swordfish I've ever had. Went straight home and put it on the grill. Delishhhhhh! So good even the little ones were eating it. I even got some filet mignon to try. I'm not really a meat eater, but it was on same level as delicious as swordfish. The deli also had an assortment of sides , desserts,wines, cheeses, and fresh produce. I didn't have time, but noticed some small tables to enjoy a glass of wine. The butcher was extremely friendly and helpful suggesting sides and meats. In general great vibe, so worth the visit. It doesn't even feel like a butcher place, music playing in the background and could be a great place to just chill. This was my first, I'll be back to have that glass of vino for sure! read more

Each time we've dined here the food is consistently flavorful and prepared as asked. I like the Firehouse Jammin' Chicken sandwich and get it on sourdough and toasted in the panini press. Delicious with the bacon jelly. My wife likes The Works pizza. Soft and buttery crust with al dente vegetables and three flavorful meats. Always enough to take some home. Best. Burger. Ever! I came here with my wife, just hoping to get away from the kids for an hour or so with no expectations whatsoever. What I found was a pretty cool butcher and wine shop that just happened to have a cafe as well. The menu had maybe 20 items, but one immediately jumped out at me. Firehouse Jammin Burger. The patty itself has a bit of a kick itself, but pair that with bacon jam, a delicious blue cheese sauce, and onion straws on a brioche bun and you've found yourself a taste of heaven! The service was fast and friendly (cooked just for you fast, not fast food fast...about 10 minutes). The burger was oh so messy, with bacon jam and blue cheese sauce dripping out with every bite, but man oh man was it delicious! My wife got the steak tip sandwich and that was really tasty too. I highly recommend this restaurant. Definitely the highlight of my week. read more

I always recommend WB to all my friends/family. Their products are normally excellent and service stellar! Normally I purchase my organic turkeys from another vendor. And, I usually prepare my own specialty brine. But because of the WB's reputation for excellence (of which I can vouch for) - especially their chicken-I decided to go with WB this Thanksgiving. And when I was told they brine as well; I decided to give that a try too. Sadly, for this turkey, I was totally disappointed. I don't know what they consider brining, but if this turkey was brined, it must have been for about 10 seconds. Nothing. No flavor, no taste. And, this bird was tough (nothing to do with my roasting process ) And the price????? $135? I didn't realize the cost until I picked it up. But that's my bad because I should have asked before. No turkey is worth that much. I have bought organic farm turkeys for years for half the price. As I said--I still recommend WB and it is, without a doubt, a great place. This rating is solely on the organic turkey. And, I may be the only one that has had this experience. read more

I grill a lot of meat and the prices here were a bit high compared to Costco meat, which is the same quality. The deli meat was a little more expensive than Harris Teeter and it's Boars Head which is also what Harris Teeter sells. They did have a small selection of wine that was reasonably priced. We went in for sandwiches and possibly a pizza, but it seemed like such chaos with only 15 customers in the store and we couldn't find prices for pizzas or sandwiches any where. The staff wasn't helpful at all, so we ended up leaving. No reason to go back here for anything. read more

I finally managed to make it out to the Wine'ing Butcher. What a great little gourmet market with a nice selection of meats (fresh and deli), seafood, produce, cheese, artisan breads and so much more. I found the wine selection a bit small, but had just left one of my new favorite wine stores so perhaps my judgment was clouded. Regardless, I really love this place. I couldn't resist taking home a loaf of their sourdough and to be honest I haven't had sourdough that good since leaving CA. I was sorely tempted to take some of their steak tips with me, but unfortunately had other errands to run so that will have to wait for my next visit. Our stop here just happened to be right around lunch time so we decided to stay for a bite. One look at the menu and neither of us got past the Steak Tip Sub; basically an Italian roll filled with their tender steak tips, caramelized onions, roasted peppers and mushrooms all smothered in provolone - my new favorite cheesesteak. Really delicious! They serve wine and beer in addition to non alcoholic favorites and have a small area with a few tables where you can sit and enjoy your meal. I really look forward to trying some of their other selections. I found service to be friendly and accommodating. Everyone was doing their best to take care of the customers in the shop timely and with a good attitude. One young man even apologized as we were clearing our trash that he hadn't gotten the trash bag put back in the can quick enough. Not necessary, but indicative of employees who actually care about their customers. At any rate - I will be back. I can't wait to take some steak tips home - I think I will start with the Firehouse marinade. Bison tips are tempting too. I want to try one of their brick oven pizzas - namely the Butcher's blend which is topped with....you guessed it...steak tips. And, their thick cut steaks look amazing - one of those just might make it on to my grill for Sunday dinner! Once I found this gem I wanted to eat here every day! The steak tips are more expensive than buying meat from the grocery store, but oh are they good! The firehouse steak tips are my favorite... but be prepared they are SPICY! Put them on a sandwich and/or pair with a good horseradish and they tone down nicely. The Firehouse shrimp are also delicious! I love the variety of homemade sausage they offer. It's hard to find boudin in other stores in the area! I love the cafe in the back of the store. I've had a handful of different sandwiches which all were excellent. My favorite is the Northerner which is basically their take on an Italian sandwich. The dressing on the sandwich is superb. Half the sandwich is plenty, but I'd often get a whole so I had some leftovers! The french fries have a delicious seasoning on (a bit garlic-y perhaps? ... which i LOVE). If you enjoy your fries crunchy like I do, ask them to make them crunchy. I'm a big sucker for some homemade ranch to dip my fries in... and they certainly deliver! They have a good amount of wines in the store, but as I'm not much of a wine drinker I never explored it much. read more

I love The Wine'ing Butcher. The concept, the people, the food, and the whole store. The steak tips marinated in various ways are the best and what sets this store above any others in the area. You really can't go wrong with any flavor. I tried the Key West marinated chicken, which was okay, but still 'just chicken' to me. I will stick with the steak or seafood. The store has lots of meats, sausages, seafood, wine, cheeses, produce, frozen pastas and meat (burgers), and even sells beef marrow bones for dogs. LOVE! In addition, there is a prepared food section with goodies such as scalloped potatoes, crab cakes, mac and cheese, three bean dip, etc. It is quite easy to want to go overboard when ordering here! The cafe has great food too. I have gotten a soup that was obviously made in-store, the BEST Greek salad with homemade dressing, an awesome Italian sub, a fantastic pretzel bun burger (well seasoned and perfectly cooked), crispy and crunchy onion rings, and the French Dip sammy. The only thing I didn't like was the Cajun crab and corn fritter, it was too fishy, but in comparison to all the good things I have had, it means nothing. The owner is super friendly and I overhear him trying to get to know all of the customers. It is nice to see someone have so much pride in their work. I love this place, they have marinated steak tips that are as flavorful as they are tender. Not only are they a butcher shop, they have a great selection of wine. They also have a full kitchen that makes great pizza, wings, sandwiches and burgers. If you are lucky enough to stop by when they have their Cuban sandwich as the special for the night make sure to get one! I lived in southern Miami for 2 years and the Cuban at the Wineing Butcher is the best I have ever had! I'm really sad that I'm only discovering this place a week before moving 30+ minutes away. Got the yelp deal, which decided it for me, because I really knew nothing about the place but kind of wanted to try it. If I had to give a quick overly-simplified summary of what this place is, it's almost like a condensed Trader Joe's with a more catered experience. Great meats to choose from, dozes of cheeses, fresh organic vegetables, a huge selection of crackers - this would be the perfect place to stop to pick up some things to cook dinner for a date (or...uh...your family?). Staff was super friendly and helped me make a decision efficiently. I had seen the reviews about the steak tips, so I got the Burgundy Steak Tips and brought them home to cook with some broccolini and paired with a rosé (a recommendation from the guy working behind the meat counter). I cooked the steak tips to medium rare, and the flavor was magnificent. The meat was extremely tender and juicy. Heaven on a plate. While I would like to chalk this up to my cooking skills, it's pretty obvious that at least 80% of the credit goes to the amazing quality of the meat itself. I'll still be working nearby so maybe I'll be able to convince my coworkers to grab lunch here one day, but I'm still glad I got to stop by at least once! I really, really really wanted to like the Wine'ing Butcher when they opened in Ashburn. Their meats are fantastic - especially the steak tips. Problem is the service is atrocious. Every single time I have shopped here (and dropped about $100 or more because they are pricey) I have had terrible service from what seem like high school or college aged kids who didn't look too thrilled be waiting on the public. They are also always out of just about everything I will go out of my way to go by there to get - pasta salad or potato salad for a cookout (pretty basic stuff). I stopped in there on July 3rd to buy steak tips and asked if they had pasta salad my family liked. They said no but come back in the morning because we are making some. I stopped in around noon the next day and it still wasn't available. Three strikes and you're out Wine'ing Butcher. I'm going to figure out how to make my own steak tips going forward and I'm going to save myself the agony of dealing with your incompetent and unfriendly employees. read more

Their rustic feel within the shop is so inviting. The staff are very friendly and more than happy to answer any of your questions. Sometimes they offer samples. I ordered the Rajun Cajun hot sandwich and OMG it was amazing! Honestly, you cannot got wrong with anything on the menu. From the burgers, sweet potato fries, to steak tip sub, it is all so yummy! Really glad that we stumbled upon this gem near our home! We have passed it a number of times, always commenting that we needed to stop in to check it out, and finally made a special effort to pop in. The food and service is amazing! Upon entering, we were immediately greeted by Matthew, who saw us looking around and asked if it was our first time. When we said that it was, he proceeded to tell us all about their menu, their most popular dishes (depending upon what you were in the mood for) and made suggestions for what he thought we might like. We really liked this, as it gave us a starting point for what they were known for, or what their customer favorites seemed to be. His recommendations were spot on, and now we try to make a special effort to stop in on particular days to try their daily specials and weekly favorites. For us, the Turkey Tip Gyro on Wednesdays is amazing. I also hear that the French Dip on Thursdays is a must try, along with their pulled pork. We also follow them on Facebook, as they will post about daily specials and new things to try the next time you stop in. Beyond that, you can also sample / buy wine, fresh meat, cheese, breads, deserts, side dishes (the mac and cheese balls look amazing, and their chicken salad is great) and snacks. We highly recommend stopping by. Ask for Matthew, let him know what you're in the mood for and he won't steer you wrong! This is now one of our favorite local spots. This place has so much potential! Since they've opened I've been in twice to look around the place. I agree with the other write ups that the service needs to be more friendly and attentive. I am hoping they work it out because I would like to continue to be a customer. The first time I went in one of the guys we talked with behind the meat counter was very friendly and helpful. He told us all about their meats, where they get it from, what they are planning, etc. Very nice. However the other gentleman behind the counter was the complete opposite (both times we've been in he's been there and always seems kind of irritated). I heard a customer say to him something about a special deal on beef if they mention the Facebook ad, and the guy came back with a very snarky "That's what the people are saying." I was very surprised to hear this attitude from an employee of a place that had only been open for days. Today we went in to buy some beef. The filets were OUTSTANDING. High quality meat for sure. We also got some of the steak tips to try and dang were they good. I can see myself going every Friday night for steak tips. They were seriously the best steak tips I've ever had. Not sure what they marinade them in, but there is nothing else like it in Ashburn or Loudoun County. Welcome to the area Wine'ing Butcher. We will be patient with you while you work out for opening kinks, but please work on the friendliness, attentiveness and level of professionalism with your staff. I was excited to see a butcher shop in Ashburn, as I recently moved here from McLean, and I would only buy hamburger from the local organic butcher. I asked for ground chuck, but the owner told me that they only sell ground sirloin (which of course, is much leaner than ground chuck) and he guaranteed that I would like his ground sirloin better than ground chuck. As a very nice gesture, he gave me a free pound of ground sirloin and threw in some marinated beef tips. My wife and I also bought three sausage links: lamb, bangers, and something else I can't remember. We grilled the beef tips, and they were awesome. We also grilled the lamb sausage and it was quite good. The bangers, however, were way too lean. Hardly any fat content at all which made the banger somewhat dry. Now for the ground sirloin: for a lean hamburger, it was very good. But it was nowhere near as good as a hamburger made from ground chuck. Typically, I try to get ground chuck that is 80 or 85% lean. The fat gives the burger great flavor and makes it juicy. I will probably come back to this place for certain cuts of meat, but definitely not for their ground beef. The owner posted a response saying that he could add fat for a custom blend. Changing my rating from 4-star to 5-star. read more

Absolutely LOVE their Green Mountain Pizza! This is not a sit-down restaurant, but more of a take-out place with a small market where you can get produce, meats, gelato and other desserts, and more. The owner is really nice and even let my husband in to pick up meat when he stopped in one night, unaware of their closing time. Okay, now I have to give it 4 rather than 5 stars only because the first time we had take-out, we ordered burgers for a small get-together with friends. Being vegetarian, I didn't personally experience this, but everyone wasn't happy that their burgers were charcoaled--almost burnt on parts of the meat. We had contemplated just getting the meat and grilling ourselves, but to save time and enjoy each other's company we opted for getting the food already cooked. That may be the style of cooking and fine if you like that; our group just wasn't a fan. We've since been back for the meats and grilled with it, which I'm told is very good. Other than that, the pizzas are a little pricey. In my opinion, worth it because they are soooo good and loaded up with fresh toppings, but it's about the price you'd pay if you were eating out at a sit-down restaurant, paying for the experience. read more

Oh my! I'm very sorry it's taken me this long to try the Wine'ing Butcher, but then again my waistline and my wallet were probably better off before making the discovery tonight. My wife has ordered and picked stuff up from The Wine'ing Butcher before, but tonight was the first time we went there to actually sit down and eat dinner. The staff were very friendly and personable. It was actually one of the least expensive dinners out our family has had in recent memory. Very good burgers and good sweet potato fries. ...but then while we were waiting for our food, we started wandering... and sampling... and tasting... and buying. We made two more trips to the cash register after our initial dinner purchase and left with multiple bags of bottles and boxes of desserts and paper-wrapped steak-tips. I had a very hard time deciding on just ONE dessert. MAN that was some good stuff! Guarantee we'll be back, this place is awesome! read more

Great place to stop by for a quick lunch. Food is served fresh and relatively high quality. I had a burger and fries but also checked in to take home some steak tips which are delicious! Customer service is great as they really try to cater to you in hopes of repeat business. Note that it's a ma & pa kind of shop here the prices are a bit on the higher side for lunch and also if you're shopping for groceries etc. You get what you pay for - quality. I love the Wine'ing Butcher! The store is quaint, customer service is excellent, and the staff are always willing to help and provide suggestions. This is my "go-to" gourmet market for quality meats and cheeses, and an overall good experience. The Steakhouse Tips are my favorite - seasoned to perfection - and they taste delicious whether grilled, baked or made in the slower cooker. The brick oven pizza is also really tasty. They offer select ready-made items, so if you're feeling comfort food, try the mac n' cheese. To compliment all of the other fantastic purchases, there is a nice selection of wines and beers (and almost every time I've been there, a friendly helper providing samples). Stumbled upon this after my wife had a friend who liked it on FB. Great little place! We went in for lunch, my wife had the special that day which was a Ny style Rueben sandwich but the lady working the counter suggested I try the steak tips sub, omg, soooo yummy. I have thought about that sub multiple times since I left, it was so good. Menu had lots of choices to suit any palate. While waiting we looked around at the store. Wine, relatively cheap in price so we got a few bottles. We also picked up some nice Gouda cheese, some salsas, homemade smoked bacon (which was soooo good), and some homemade beef jerky for our daughter. They had all kinds of pre-marinaded meats and fish in the cold section which I wish I had of gotten (including those steak tips), buffalo wings, different types of chicken, fish. Service was excellent, I am not sure but it might have been one of the owners (the one who suggested my meal and later rung us up) was very interested in what we thought and how we heard about the place. Love the idea of the business. I love the idea of a small wine and food market with prepared foods and fresh cooked meals. Their wine selection is great for such a small place. Lots of local vineyards represented. The food you can order is pretty good too. The hamburger isn't as good as I hoped but the steak tips and chicken are good. The salads are great too. The market isn't somewhere you can do your grocery shopping but hopefully as the weather improves, so will the selection. My main problem is their hours. I primarily order food from here, I work late and just want to order food sometimes. These guys close SO EARLY! If they were open an hour or so later.. they would be raking in so much more of my money. read more

I pulled up yesterday at 7:05 not knowing that they close at 7:00 on Monday-Wednesday. Well, the guy at the door asked what I came to get and and I told him I just wanted to grab some prepared foods for dinner (and it would save me a trip to Wegman's). He let me in and they gave me everything I wanted ribs, mac'n cheese, potatoes, lemon cookies and a huge salted caramel whoopie cookie. I was very appreciative of them serving me even after they were supposed to be closed and going home themselves. Great food everytime I go and I'll be back many, many times. We have patroned the Wine'ing Butcher for several years now. Their location is in the historic district in Ashburn, there is plenty of indoor seating and abundant parking in the area, in addition to the butcher area which sells a lot of different meats both marinated and plain. They even have a few tables outdoors for seating. The wine selection is fairly large and has an interesting selection. We love their brick oven pizzas, the Steak Tip Sandwich is always a hit (delicious, tender steak, flavorful, and huge portion - enough to share), and the kids favor the chicken tenders and fries. The twice baked potato had NO flavor, but we liked the crispy Brussel sprouts. It is a bit on the pricy side, but we are fine to pay a little more to support our local businesses. The service is never fast, so expect a wait - even for basic orders. My biggest issue is the actual servers/cashiers. We have never had a friendly or exceptionally nice person. Rarely do I feel "appreciated" for visiting their deli. The last time I ordered a Protein Bowl and three people behind me received their orders before I did, and I essentially just ordered a salad. No apology or explanation. Sad since the Protein Bowl was a complete disappointment. I was looking forward to finally trying the key west chicken (a lot of locals rave about this chicken), but found it to be very bland and didn't detect any of the Italian marinade. The spicy quinoa and crispy Brussel sprouts were the best part of the Bowl. I may give it one more shot and update if the service is better. read more

The Wine'ing Butcher is a welcome edition to the Ashburn culinary scene. It's a bit more than a market and a bit less than a restaurant. They carry a very nice, upmarket selection of meats, cheeses, chocolates, etc. They have prepared foods and marinated meats as well. It's not cheap, but it's good quality. The booze selection was pretty good as well. We've had their carry out twice. While the Mister was disappointed by the lack of seasoning on his steak tip sub, he was a fan of the wings and I enjoyed my turkey sandwich on our first order. We returned for more wings and pizza this evening. The small pizzas are still pretty large. The crust was very good and the toppings were plentiful. I had the BBQ chicken and it had a nice amount of kick to it. The Mister was very happy with his butcher block pizza. I see some people have complaints about the service. When I went in, the place was quiet and it did take a few minutes to get the attention of an employee at the hot food counter. However, once I did, they were friendly and helpful. When my food was ready, the high school age guy who had rung me up offered to carry my two pizzas, wings, and a six-pack of soda. Maybe they're taking the feedback to heart? Excellent, fresh food. I had the steakhouse burger, it was delicious along with fries. My buddy had the jammin' chicken and he also liked, but didn't care for the blue cheese. Has a wine cellar style, and feels cozy. Staff was friendly, I'll be back to eat here more and try other items. read more
