Was in the neighborhood and came across this butcher shop that serves food. I was so excited to try the homemade old bay chips and my chicken sandwich. Everything was fresh and delicious. I wanted to buy some items while there, but I was stuffed so I plan to come back soon. Next time I will try a pizza. The menu literally has something for everyone. The service is warm and efficient. I went on a weekend during lunch time so it was a bit quiet, but as soon as I sat down to eat the people rolled in to buy their meats and cheeses. Great atmosphere! Holy "cow" I mean "beef"... it's been years since I wrote my review of this place. If I could give 6 stars then I would... but 5 stars is tops. I wanted a few slabs of cow for Christmas dinner but I was procrastinating in ordering and shopping. A few days before my Christmas dinner I walked in and was greeted and served by an amazing staff member. She educated me on how to cook, what to buy and even gave me a small discount. The cuts of meat purchased are all Prime cuts. On Christmas Day, we enjoyed our "cow" slabs as they melted in our mouths and no knives were needed. The Prime Standing Rib Roast was outstanding. The NY Strip Roast was perfect for the one person who enjoyed it. Finally the Lamb Chops were devoured by a few people even though it was purchased for one person. This shop has survived times of COVID when people were not in store shopping. The community rallied together to keep this gem alive. They now offer Pizza special notes, kids crafting and taco Tuesday's. They offer pre packaged fresh meats, wine bottles, drinks and other ready to make products. We had been there before shortly after they opened and found that it wasn't really a butcher shop; rather, they offered a variety of marinated meats. They did have a decent burger, but it was priced at a higher level than comparable offerings elsewhere. We were in the mood for a burger, and other local restaurants were crowded so we decided to give them another chance. We were greeted by a prominent sign on the door announcing a surcharge for use of a credit card, which set the tone. However, we didn't get a chance to try the food this time as nobody working there seemed to be interested in waiting on us. The ambiance is that of a disorganized warehouse. Also, the floor was dirty, and tables had not been bussed. The restrooms looked like they hadn't been cleaned in days nor had they had a deep cleaning in months. I doubt we'll be back. read more

Went here on a date night and both of us ordered steaks. Mine was the NY strip and it came out beautifully cooked with a great crust. The meat was flavorful and didn't even need sauce, though I still enjoyed the chimichurri on the side. Fries were crispy and seasoned well, and we had a Caesar salad to start that was fresh and tangy. Service was quick and polite, and they didn't rush us. Great food and great people! Love the casual environment and being the first time there they gave us a large sample of their chicken salad. The chicken salad was light and a wonderful taste! I made chicken salad sandwiches with it and loved it! We also ate the steak tip hoagie and the steak burger and the meaty pizza. Passing by the area and stoppped in for quick sandwich. I checked in on Yelp and it said there was a gift to claim. So I asked the young man at the register who directed me to the manager. The manager was at a momentary loss but after looking through the cooler came back with a $30 package of marinated steakhouse tips (!!). My reaction was gosh I can't take that. I was thinking free soft drink or chips? Well I just cooked these up and oh my gosh, so tender and flavorful. I will make a special trip back to try some of their other cuts. The Italian sandwich was a joke. It was a half a sub (6") for $15. That's fine if it's great or is hearty. No it's half a sub cut in half, the bread is fresh but the meat is minimal for the cost. Also it's not fresh, had no taste, no dressing and the chips were plain. Who charges $15 for this, NYC, Boston, Philly, NJ, etc, actually ever where is better then here; anywhere makes a better sandwich with flavor and still can charge less. Why does NOVA think they are that good. Stop people, you're all a mess. Very unfortunate and disappointing, but that's what people want in Nova. The other items in the counter were not touched and looked old and dried over. The prices are very high for low quality. If you're expecting sliced meats that's not here, it comes out of a covered meat counter that's been sitting there. Never had an Italian sub that was tasteless until here. They have a lot meats in the butcher area but I was thrown. Why are they all vacuum sealed?? Apparently it makes sense because they don't get enough business to sustain fresh meats. The store front is a decent size for a butcher with a great layout. You're also able to dine in and eat here as well but did not have a chance to when we stopped in. I had heard so many good things about this place and finally got to visit. It did not disappoint! The staff was extremely friendly and welcoming. The place is really clean and offers a wide variety of things from craft beer to desserts. It is like an upscale deli inside with a few tables outside and inside (although inside tables are not available right now due to COVID-19). It is pretty wide inside with high ceilings so I felt comfortable with social distancing. Everyone wore masks. I bought some steak tips from the butcher side so we will see how those taste after I cook them. For dinner to go I got a Butchers Blend pizza which was delicious and very generous with toppings! It's like a meat lovers and it was soooo good! I always order extra cheese but didn't need to here!! I am not a fan of spicy or peppery sausage so I made sure mine had their sweet sausage. Their large pizza is pretty huge so my husband and I had leftovers. The crab poppers were tasty with their yummy dipping sauce. For dessert I got a slice of plain cheesecake which was good. Definitely come by if you want good quality meats and/or a yummy meal. I should mention this is a high end place with premium meats, food and drinks in Ashburn. My go to butcher shop in Ashburn off Ashburn Rd close to the firehouse. I'm a big meat smoker and they have an excellent selection of meats but what they are known for are steak tips. They have at least 9 different pre marinated flavors. My favorites are smokehouse, firey, maple and I usually like to get a couple packs that aren't marinated so I can do a rub and grill them. I love the prime burgers and dry aged ribeyes. They sell beer and wine and have a nice little bistro. The sides are good not Balduccis good but they have a nice selection. It's a bit pricey but I will pay for the quality. Grilling out or smoking no matter they have a better quality and it comes from local farms. I recommend them to everyone. read more

Butcher me this, I love when a lunch plan comes together. I typically do not run a lunch caper when its raining out but today was an exception and the Wine'ing Butcher came all the way through!!! I can tell i had not been here in a while because the space looks totally different in the inside. The main deterrent before was that the seating was limited. Now the seating is A game strong!!!! There is plenty of seating, new lighting and what looks like a revamped wine set up. I was impressed while thinking how long has it realllly been since I have been here. After looking at the menu and seeing not much has changed, my fav was still there, the Mexican Chicken Wrapped, warmed!!!! I get this everytime I come, they had me at guac!!!! The chicken is well seasoned, some pico and black beans and a healthy smothering of guac!!! Listen you can not go wrong. You have to get it warmed and yes guac tastes great warm!!! I could not leave out the fries because they were just like I like them!!! Crispy bu tnot too crispy so they still retain their potato interior. You know fries are good when you need no ketchup or barbecue sauce (my personal fav for a dipping buddy) It may have been cold and rainy outside but this wrap had me warm on the inside!!! So filling too, you could really eat it alone and be okay but I am greedy and need my fries too! I like the new open concept, it reals roomy and like a good place to hang out and catch up or pop open a bottle and slow sip your cares away. Do you see now how I found my way back here? First time ordering from here and it was disappointing. We ordered a Margarita pizza and a cheese pizza. The Margarita pizza had half of a thin piece of tomato on each overly crunchy slice. The cheese pizza had burnt cheese on the majority of it and was dry. Would not recommend at all. Margarita was $20 and the cheese was about $15. Total waste of time and money. Do not order anything for the holidays from this place. We ordered a smoked turkey for Thanksgiving and they didn't have what we ordered. We had to settle for something we didn't want because we had no other option at that point. The customer service was lousy and we we offered no explanation as to why they didn't have it. It would have been nice to receive a phone call from this establishment to let us know they made a mistake before it became to late to make other arrangements for our Thanksgiving meal. I have been a loyal customer of this place for years. Throughout the years, I have never had the pleasure of speaking or interacting with the owner. Well, today that changed and let me tell you, the guy has little care for customer service. I'd like to say that this review is geared towards customer service more than the food. I've always ordered wings from this place, the creole rub ones, and I'd say they are really good. I normally request them in all wings/flats as I am not a fan of drums. It's never been a problem until today where I requested them in that format and the owner made it clear that they shouldn't be doing that and if I wanted it, would charge me $4 more. He also made it clear that he would talk to his employee's about it which really sucks because I wasn't trying to get them in trouble. The guy clearly doesn't care about customer service or loyal patrons of this place. I usually take my colleagues here for lunch as a team and we rack up $100's for the bill each time. I've recommended many people to try this place out. Unfortunately that stops today. If you don't want to deal with a rude business owner who doesn't care about anything but a $, this place might be the place for you. I drove across town to check for a few items, which they didn't have, so I decided to take advantage of the trip and order lunch. It was my first time visiting so I wanted to try some items on the menu, which were really good. My biggest issue though was the gentleman behind the meat counter. He was helping a couple for awhile and I waited patiently milling around to see if they had what I was looking for. The couple left and I went over to the counter, stood right in eye view of the counter guy, he looked at me and then asked the guy behind me if I needed help? Um...I asked him if he didn't see me standing right in from of him? He said "oh, you're good"? I was just so put off with the rudeness and his complete and utter disregard for me being there. I used to come here all the time a few years ago when I lived in the area. I revisited this spot this past weekend craving something healthy and something not so healthy. When I walked in I went to order and as I spoke, the cashier abruptly paused me to slow down my order I guess, but not in the kindest way. I ordered 6 Hot wings and a Greek salad and it took a few minutes to come out. I noticed a man whom had been waiting for his food for a while before hand. He actually had to come back up and ask if his soup would come out before his sandwich because he wanted to eat it as an appetizer. Even with the remainder it STILL came out after his sandwich was there..how hard is it to pour pre made soup? Poor guy ended up just bagging it and taking it home. My own food review would say 5/5 for wings and average score for the Greek salad, which was nothing to write home about. The wings however were BOMB and the sauce was just perfectly spicy. So with COVID they've changed some of the set up of their operations. This place is sort of a cross between a market/sandwich shop. Overall, this place is okay. I like the location and the products are pretty decent. Overall, the prices are a high, but I get it because its a specialty type shop. One thing that really drives me nuts is that I used to get deli meat here from time to time, but the last 4 times I have gone here, they haven't had the prices posted anywhere. The board above the deli meat says what they have, but the prices are left completely blank. This drives me nuts. One week Boars Head turkey was $10.99/lb. then 2 weeks later it was $13.69. That's a massive price difference. What's more, every time I ask an employee the price- they have no idea and have to put the code into the scale. Please post your prices so that people know how much stuff costs. Also, I wasn't impressed with the price or the quality of the rolls/bread that they have. read more

I've been supporting the Wine'ing Butcher for several years now. They have a small restaurant that serves really decent food. Quality and taste is definitely good but on the expensive side. I really like that they are a small local business here in Loudoun Co. The shop has a small butcher area. They have a few cuts of beef and pork. Their specialty seems to be beef tips and marinated chicken... I can attest that the beef tips are decent. I take them home and grill them; they are always pretty good. I just have to say the last time I went, I noticed the price of the beef tips were almost $20 dollars a pound. The price of 1 pork butt was $90 dollars. 1 packer beef brisket was $195 dollars and just one rack of baby back ribs was $35 dollars. I'm in no way cheap. I don't mind spending my hard earned money on good quality meat. Nothing is prime...at least it's not labeled prime. Not sure sure about the pork. Could be Heritage but no markings on the label. I hope this place stays open and profitable during these challenging times but I can't support them anymore. Their prices are ridiculous. I can order the most amazing meat and pork from Snake River Farms--a high end meat producer-- for less than Wine'ing Butcher. You guys need to re-evaluate your prices or you're gonna lose support from local Loudoun Co fans. Just being honest! read more

Delishhhhhh! Came here on a Monday and I had a hard time plucking my boyfriend away from this place. He was in love with all the meats behind the counter and my plate of beef tips that I had ordered for lunch. The beef tips came with two sides, I got the Mac balls and Brussels sprouts and he got himself the teriyaki bowl. Everything was delicious and we were mad at ourselves for missing the $5 fat burger specials. I know this place would now be on our frequent list, who doesn't like quality meat?!
