Dave explained that everything at Von's is made from scratch, and he talked about the menu the way a good tour guide talks about a city: with enthusiasm, insider knowledge, and just enough charm to make you trust every recommendation. He steered us toward an appetizer of clams in tomato sauce. For the main course, he suggested the pasta with salmon. Both were excellent. Throughout the meal, Dave checked in at just the right moments--never hovering, never disappearing, always making sure we had what we needed.
