Let me start off by saying I am not a bbq connoisseur, so I don't have a lot of places to compare this one to. The baked potatoes are huge, literally huge and pretty good HOWEVER the level of customer service is so subpar is actually surprising. I have ignored the line servers attitudes for a few years now but the latest new hire took the level of attitude to another level and threw away 2 baked potatoes because I did not understand why she had split my potato the way she did (might I add there is a language barrier). When I proceeded to speak with the manager I was met with complete disregard and either he has heard ppl complain a lot or her was just not in the mood today. Man, has this place gone downhill. It used to be a great place to go, especially if you just needed an excuse to go for a drive. The employees were friendly, the line moved quickly, food was good and although not cheap, a decent value. Last 2 times I went it was bad. They had 2 ladies working the line during lunch time and the line moved slow, they were really rude, they now weigh the meat portions carefully (and the portion size is smaller) and the prices went up. I asked what's up with the weighing, and was told, "the damn owners getting greedy. They watch us on cameras and someone just got fired cuz she didn't weigh the chopped beef on a sandwich". When I went to pay, the lady in front of me had a Groupon and the cashier said, "how do I know you just didn't make a copy? I'll take it this time, but never again". Was $40 for two people to eat and the food was terrible. My fiancé had a three meat plate. The sausage was dry, the pork was a mushy strange tasting mess, and the brisket had no flavor. The BBQ sauce had no real flavor. The potato salad and pinto beans both pre-made with no seasoning. Beans seemed like they had been out all day they where very dry. I had a stuffed potato. My advise is to keep on driving. You are not missing out on anything. I scored Waller County Line BBQ a 67 out of 100. This is Bum Steer BBQ. Smoke: Oak. Under the banner "The Pit Crew" is a fenced off area with big black steel pits. Large stack of Oak wood. The billowing blue smoke leaves no doubt this is wood fired something. Brisket: Poor. No smoke ring. No bark. My first thought was "Did they cut it off?" Closer examination revealed it was never there to begin with. Pre-sliced big hunks of brown beef. It look like roast beef and ate like roast beef. Are the pits for show? Overcooked way past tender, it dried up and crumbled on my plate all by itself. One of the worst excuses for Texas Brisket I have ever had. Drown the plate in sauce. They should refuse any requests for sauce on the side. They should only sell chopped beef. Hell they should just take brisket off the menu. Ribs: Fair. A thin spare rib with zero smoke ring. There was a paper thin bark and grey pork beneath. I had to wait a little in line as they did not have any ribs ready to serve. First bite was cold! Yep, these are re-heated left over ribs! You have to try to be this bad. They were overcooked past tender and dry. They had a rubbery texture from spending the night in the frig. Little flavor except pork. Little smoke again begs the question "What is inside those pits!?". Use the sauce and demand your ribs are re-heated fully. Sausage: Very Good. A course ground mostly beef link. Great traditional spice with mild after taste. A great smokey dark casing (Oh! the pits are for the sausage, I get it now). No sauce needed. Get the one meat plate and save some money. Sauce: Very Good. I guess Waller is too close to Houston because they follow the Houston formula: Great Sauce + average BBQ = Houston BBQ. They serve two sauces, one mild and one spicy. They are equally great. The mild is a thick tangy sweet ketchup based sauce that could make liver taste great. It coats the meats well and hides how bad the BBQ is here. The spicy sauce has a little heat and its a little thinner than the mild. Use either one generously and drown the whole plate. read more

It's worth driving across to Bucees. Food is mediocre, Ladies are to busy pow-wowing, and they closed restrooms down at 8:15 when the store doesn't close till 11pm. The lady cleaning the restroom turned me and another guest away, a lady with a little girl just walked in and the cleaning lady gave her crap , a man and his little girl walk in and she tried to go to the restroom and the lady tells her there broken, then a friend of theirs walks in and they tell him to go ahead quickly. I have really mixed feelings about this bbq joint at a gas station. I was so hungry I couldn't wait to go to Carl's bbq so I decided to give this place a try. I ordered a chopped beef sandwich with a side of potato salad ($7.78). The meat was tender and moist, and the portion was huge. I give the meat 4 stars. The sauce, however, sucked. It was overly sweet, like warm molasses and ketchup. And it was supposed to be spicy, which it wasn't. The service on the other hand was great. Since I try to eat wheat bread instead of white, I asked if I could have wheat bread. The server said all they had was white bread, but she opened a loaf of wheat bread just for me. It wasn't the cheap bread either. It was the whole wheat bread with all the grains and nuts. Nice. Also, she let me sample their sides before buying. Note: The macaroni salad is disgusting. The dressing tasted sour like it had gone bad, and the macaroni wasn't fully cooked. Also, the server disclosed that they don't make any of the sides. All the sides are ordered from some large warehouse salad making company. Augh. As I was eating, the general manager started to hit on me, aggressively. He commented on my "big, thick legs." I asked if he thought I was fat. He asked when he could take me on a date. I said, next time I'm on my way to Houston and want some bbq, I might see him again. How this place managed to get three stars is a miracle. Let me start by saying that this was the worst BBQ I have ever had. I make the drive from College Station to Houston pretty frequently and see their signs every time I pass by. Their sign states "Best BBQ in Texas", which is a complete lie. It's false advertizement because I doubt any person who knows a lick about bbq would ever label this place as 'good' let alone the 'best in TX'. Let me enlighten everyone for just a second. I smoke my own bbq very frequently, and I'm pretty damn good at it. When you advertize that you have smoked brisket you are advertizing two things: 1. That your brisket will have the smoked taste that comes from meat smoked in oak, pecan, mesquite, or hickory. AND 2. That the meat will have a bark and smoke ring. This is absolutely crucial to the taste and is a clear indicator as to the quality of the smoked meat. MEAT: When I ordered the brisket and ribs I was sorely sorely sorely disappointed. The brisket had no bark, no smoke ring, and worst of all; NO TASTE! It literally tasted like a roast smothered in an excessive amount of low-quality barbecue to mask the lack of taste. The ribs were garbage. I literally couldn't finish them because they were so bland and tasteless. I asked the woman at the register if the BBQ was indeed smoked and she replied "all night long". I believe that this meat had never been inside a smoker. It was clearly cooked in an oven, which is why it didn't taste like real barbecue. SIDES: The beans were literally just Bush baked Beans out of a can and warmed up. Same with the green beans. It's all the same low-quality crap that you can get in a can at wal-mart and warm up in a microwave. MY RECOMMENDATION: Drive an extra 30 minutes into Houston and get some REAL barbecue. If you're heading west or north, go up hwy 6 and stop at Hill Country BBQ. They don't lie about their barbecue being smoked and have authentic sides. read more

The sausage though was a little dry but nicely spiced and better with the spicy bbq sauce. The brisket were dry and rough, and though the ribs were tender and sort of falls of the bone but they are pretty tasteless and didnt even look fresh... Another thing I have noticed is that all the meat were slightly sweet, so maybe this is another type of bbq??? In conclusion, Waller County Line BBQ has a very inviting facade and the location really made this place a great spot to stop especially for those cyclists and day trippers to the Hill Country that dont have a choice and was stuck here involuntarily, then in that case, I suggest to try the chopped beef sandwich and the cole slaw... This loaded potato is one of the best things I've tasted since I've been in Texas!! I love it! I only took one star off because of the bacon bits. Real bacon would make it so much better! I stopped by on 2/1 to get gas and a snack. I wanted to support the small business owner. Upon entrance, I watched an employee in uniform walking around with a cigarette hanging out her mouth. Not a good sign. I then picked up a six pack of beer, bag of ice, bag of beef jerky (Waller County Line brand) and $4 worth of gas. My total tab was $22.50 - surprising for the few items that I purchased. One of the gas pump stations was completely down. No signs saying so, just a tow strap wrapped around it. So I had to wait and jockey around the other cars. No big deal I thought, I'm glad they're busy. Unfortunately as I tried to pump the gas nothing would dispense. I told the cashier twice all she said was "I know I turned it on." No luck. I was not able to get gas. The line was long and she was not helpful so I just gave up. A wasted $4 and rude service! Now on to the beef jerky, it was the worst I've ever had. I'm surprised I didn't break a tooth. Also, there was no price tag and I wasn't given a receipt so who knows how overpriced that beef jerky. HORRIBLE! I wouldn't even leave it at my ranch for the coyotes. PLEASE DON'T WASTE YOUR TIME OR MONEY AT THIS PLACE. Go ahead and give your money to the big beaver across the street. Guess what? They're nice! The pumps work! The gas is much cheaper! The store is clean! The beef jerky is edible! The employees smile and welcome you! I went in blind after stopping up the street at the FieldStore BBQ and throwing it away. I was again served pre-sliced grey brisket. The rib was a little better. The only redeeming thing was the peach cobbler which was good and had the sugar topping. As far as BBQ is concerned Waller County Line gets it. I just recently moved back to Texas from Cali and have really been looking for some good BBQ. Since moving back I see that there are a ton of new BBQ joints, I've started trying them out and found my self getting disappointed time after time until I ran into Waller County Line. The chopped beef sandwich along with their HUGE baked potatoes are the best in my opinion. I'm a Tx gal with a pure love for BBQ, this was a waste of money. $17+ for a pound of chopped beef, are you kidding? Even the desserts were dry and bland. I got the 1 meat brisket plate with sweet bbq sauce, coleslaw and potato salad. I really liked the sauce and how tender the meat was. My husband said he thought that it was too dry, but I didn't think so. I think it might have been because it was cut a little thicker than most briskets. The coleslaw was really yummy. They chopped the cabbage and it was creamy instead of dry which I hate. The potato salad was a little off though, wasn't the best I've had. The interior is nothing special because it's actually a gas station and it's kind of confusing when you order because people will just cut in line if they are buying stuff from the gas station and you are buying food. It pains me to write this review as I used to highly recommend Waller county line BBQ. My most recent trip was disappointing to say the least. The staff was extremely rude, not just to me but to the customers ahead of me as well. I almost walked away from the counter with out ordering.... I did decided to place my order for a sliced beef sandwich, we also got some mild boudin and two medium drinks. The total at the register was 22 dollars, their prices have increased significantly since my last visit. They don't give itemized receipts so I am still not exactly certain how much I paid for each item but it still seemed expensive for a quick stop lunch. The food was just ok.... The chopped beef was a little dry on the sandwich. The boudin was not great for me, it tasted very smoky and was a little burnt on one end. The best thing I had at the stop was the watermelon sweet tea, it was great. If you are a tea lover I highly recommend it! read more

I believed the hype and went here, I could've BBQ'd better at my house. The briskest was tough, didn't taste any smoke, tasted like a roast. This was the lean version. The chicken looked bbq'd but didn't have any smoke flavor either. The only thing that was half decent was the potato salad and the sausage.
