I love a good chophouse especially one in walking distance from where I frequent during the week. I stopped by with a friend and we tried the filet mignon, some options from the raw bar, we got a few appetizers, and tried some of their signature cocktails. The filet mignon was absolutely delicious, and the fresh tuna tartare still lives rent free in my mind. I was told the fish supply is chosen fresh daily from Long Island. The Caesar salad was definitely one of my favorite bites of the night. One of their signature mezcal cocktails was a standout to me. It was so refreshing and perfectly balanced. The space is cozy, with vinyl records adorning the walls, giving it a really unique vibe. Everyone working there was so helpful when making menu decisions. It's the perfect spot to celebrate birthdays, holidays, or any special occasion and it's definitely a place I'll be coming back to!

I initially had reservations for Vinyl Steakhouse, but I saw this sister location and was intrigued. I didn't know that it was a newly opened restaurant, so our party was in for the ride. I made dinner reservations for Friday at 7:30pm. We were seated right away at the 2nd floor. The restaurant was elegant but had a lot going on with pushing the DJ vinyl vibe, which you got more of that feel downstairs. They have an eclectic collection of music, so the playlist for the evening was pleasantly random across different genres. I personally enjoyed that. What's cool is that you can request an artist/album, but unfortunately we didn't get to hear our request during our dinner (Van Halen's 1984 album). Not a make or break, but it would've been a cherry on top. Customer service was great. Food came out in a timely manner, and hats off to our server, Patrick. Personable, attentive, and wanted to make sure we were having a quality experience. I ordered the Milkshake cocktail, which was a treat! I believe the hard spirit was vodka with prosecco that I poured over a lemony sorbet. It basically reminded me of a boozy granita. Loved the bread service. Vinile has this beautiful focaccia topped with sweet grilled onions. We were offered options of Nduja butter, a burrata/olive oil dip, or white anchovies. We settled on the burrata dip, which was a solid choice, and Patrick hooked me up with a couple of fresh anchovies. We shared the brussels sprouts, ribeye, soft shell crab, and pappardelle with beef cheeks: The brussels came on a whipped ricotta spread. We ordered this as a side dish to the steak instead of a small appetizer plate. The pappardelle was the best dish. Perfectly al dente pasta, tender beef, and lovely sauce. I wasn't sold on the ribeye at first, but it got better the longer it rested. Its accompanying sauce was nice. The soft shell crab was my least of the 4 dishes, and we all agreed that it was a missed opportunity. I thought the sauce was too salty, and maybe it would've benefited from a light battered fry (probably being biased because that's how I prefer soft shell crab to be prepped).

Shocked to see how little reviews this place has. Really great spot. Went there for a work dinner, 4ish courses family style with multiple dishes. Quantity was on the low end but the quality was top notch. Wine, atmosphere, food, and service was fantastic. Highly recommend checking it out

50 Day Dry-Aged 32 ounce Bone-in Ribeye (Medium Rare)

Food was phenomenal. Tuna Belly Toast was insanely good. The 50 day dry-aged ribeye was, unsurprisingly, also amazing. The cocktails (Tinto Martini and Rye fall special) were great. Rosti potato was tremendous. Potato Mulino was good, but a bit gummy. The music was great as well, and they let use choose an album to play which was fun. We'll be coming back and would highly recommend!

Owner gifted the celebrant a vinyl to sign to make it memorable.

That's fair -- places evolve -- but instead of highlighting the improvements or new strengths, the explanation focused negatively on what the bar used to be. As someone who really enjoyed the former version, that wasn't reassuring. Unfortunately, the drinks themselves didn't make up for it. One of the two cocktails was simply not good. No one came back to check on the drinks, and when I asked for the check after about 20 minutes, there was no acknowledgment that I had barely touched mine or any inquiry about my experience. Overall, a place I once enjoyed and recommended now feels more like a standard dive bar where " Mixologist " were replaced by bartender and were fun cool looking and tasty drinks were replaced by " less complex cocktail ", lacking the warmth and attention to detail that once made it special.

The space started to fill up at around 5:30. Service was polite when you could get it, but generally very inattentive, even before it got busy. It honestly didn't feel too different from anu other very nice NYC bar, in terms of menu selection, prices, ambiance and service. Maybe that's standard for NYC speakeasies, but the places I frequented in other cities were more fun and felt more worth the price. I'll still give another NYC spot a try, but not coming back to Thyme.

We were sat at the bar once and were very well taken care of by our bartender, Nikola. It was a Sunday night, so it wasn't terribly busy. For drinks, we ordered the Smoke Show and the King Tusk. The Smoke Show was beautifully balanced. The vermouths gave it richness, while the Buddha's Hand and osmanthus flower added subtle citrus and floral notes that lingered in a really elegant way. It felt like a cocktail designed to be savored slowly. The music fit the mood perfectly, not too loud, just enough to give the room energy without killing conversation.
