We went to Verde for the first time after their fire. We had been regulars before the fire and ALWAYS had exceptional food. Last night was a disappointment. We went for my husbands birthday with friends. The ahi tuna crisps were amazing. We should have stopped there. Our aalmon was way overcooked and dried out. Our friends steak was way overcooked. Vegies were good. Drinks were ok, but you can tell that there is very little alcohol. So you are paying for the drink name, not the actual drink. It will be a while if we come back for dinner and drink. Definately come for appetizers and water. We also had feedback from our neighbor that they were disappointed with their food. read more

A hidden gem that does not get near enough recognition or attention! Verde Bistro has an outstanding service staff who is very attentive without being over bearing and they are very knowledgeable as well. Verde Bistro is perfect for a weekday happy hour or a date night on the weekend! The drink selection is top notch and the tapas are superb! The quality of everything is extremely high and you can tell there is a lot of thought and care that goes into the preparation of everything. read more

Definitely not a five star place. Owner needs to be on scene more and not leave managing the place to both Kristian and Eugene (the bar tender). drinks are sent back continuously while the kitchen staff needs to be quicker since they have such a limited menu --the reason for "reservations only" shows the food is cooked ahead of time hoping you sit and drink. employees are limited in voicing opinions with the threat of being let go while changing percentage of tips given to female servers so they can cover the bar losses. strange how their team picture on website doesn't have the same people working there now. the acoustics is very industrial and yes a lot of loud talking. Parking is a problem with a pot hole lot. read more

Some of the best cocktails in Bulverde and perfect for a date night! My husband and I decided to go to Verde Bistro for our first date night after welcoming our baby and it didn't disappoint! We were starving when we got there and the food came out quickly and piping hot. I was worried that I'd still be hungry when we were done, but everything was filling and we were both satisfied. For drinks, I got the Mexican Martini then switched to the Cucumber Mint Martini after and loved both. My husband got the Smoked Old Fashion and then got the Flaming Lips. He's the type that thinks that nothing is really spicy, but the Flaming Lips knocked him on his a$$ lol so be careful with that one! For food, we started with the Argentinian Empanadas and the spicy pesto on the side was sooo good. I regret not saving the rest of it and using it on the other dishes we ordered, so do that or ask for more on the side! Next, we got the Local Grass-Fed Beef Sliders and these were very filling and larger than I thought they'd be. After that, we got the Verde Tacos and they were so good that I fought my husband for the last one (and won). Lastly, we got the Cheese Cake w/ Chocolate Sauce and that was the perfect cherry on top. We already can't wait to go back! read more

I really love Verde Bistro and I was so excited to hear they reopened. The food is so unique and flavorful. The manager is friendly and accommodating. My favorite selections are the canapés, bacon wrapped dates, and lamb meatballs. The ambience is great but it is SO loud, especially Friday/Saturday. During the week it is much more enjoyable. read more

What do you get when you add Hill Country rustic chic with Tapas and crafted cocktails? You get Verde Bistro, a true hidden gem, in downtown Bulverde. Seating is both indoor and outdoor and it was pretty busy with it being a Friday night. Luckily my husband and I got a table right away inside near the bar. The cocktail menu had some pretty solid choices and our waitress made a few recommendations. If you like and Old Fashioned I enthusiastically recommend the Bulverde at Dusk with rye. It had a full bodied smoky finish that hit the palate just right. My husband is picky with a properly made Old Fashioned and gave two thumbs up. I chose the cucumber mint tini with gin. It was smooth and light in contrast and the perfect summer time drink. Most of the menu is tapas (small plates) and sharing is encouraged. We were told everything prepared is in-house made with many of the ingredients locally sourced. I definitely wanted to try the Perfect Pear pizza. Since it was a 30-40 min wait for the pizza to be cooked we ordered the street tacos on corn tortillas and chorizo and cheese canapés in wontons to get started. I'm a sucker for corn tortillas and these didn't disappoint. The flavorful creamy avocado sauce drizzled over the top complemented the flavors and made it stand out from other street tacos I've tried. The bite sized canapés were equally as delicious. The Perfect Pear pizza arrived piping hot and smelled divine. Upon first bite I could taste the pears but also the arugala, goat cheese, and chicken sausage. No one flavor was overwhelming and the toasted pecans added a nice texture and contrast. Crust was soft yet has that slight crunch. I'm one of the harshest pizza critics and usually don't care for thinner crust but I have to say I was impressed. If you're looking for a different type of pizza this is it. The name says it all: perfect! The wonderfully eclectic ambiance and quality of the food and drinks made Verde Bistro a 5 star experience! read more

Oh my! Run don't walk to Verde Bistro:) we were greeted on arrival and seated almost immediately. Our server, Stephanie, was wonderful. We had a reservation at 7. Highly recommend getting a reservation. We had the cast iron filet mignon and the cast iron shrimp and salmon. All were perfectly cooked. The cheesecake and limoncello cake were delicious. This is our first time here. We will be back! We found everything to be reasonably priced. read more

Server was excellent, and very attentive. Unfortunately, that's about all that was great. After all the hype from other locals who were patrons before the fire, and after reading their menus on line we endured the haughty "reservations only" restriction and reserved a table for tonight. We were especially looking forward to great mixed drinks and to trying the paella which is "only served on Thursdays". First disappointment came when our waitress clarified that the paella was only served on "select Thursdays" and the one or two chefs that make it weren't working tonight. She advised us to follow them on Facebook to see if they were actually serving it in any given Thursday. Then, we read the menu description and ordered whiskey sours. This brought about the second and third disappointments of the evening. Not sure what they put in front of us, but the drinks didn't remotely resemble whiskey sours. I don't think they contained whiskey, were not sour, lacked the maraschino cherry, and instead of the egg white foam indicated in the drink menu, the bartender hat floated something pink or orange on top that was bitter and spicy. This was the only time I've ever sent drinks back in about 50 years. I read through their entire cocktail menu to see what the drinks we were served might be - thinking maybe we got someone else's order. Nope. Nothing on the menu remotely resembled the swill we were served. Rather than apologize, the bartender came to our table and confronted us, annoyed we sent back the drinks and insisting we got whiskey sours. When I showed him the menu description, he indignantly told me he followed the recipe. By now, we're thinking these guys are headed for an episode of Bar Rescue. Then came the food. By now we decided we didn't want to stay for the entrees so we opted for tapas. The panels cheese was good as were the bacon wrapped dates. That said, I don't think we've ever seen bacon wrapped dates quote that tiny for the price paid. We decided to order a pizza and ordered a pepperoni with sausage added on. Crust was good, but limited pepperoni, and the "sausage" amounted to sliced smoked hot dog (probably less than one whole link). Atmosphere was terrible as there is no sound absorption at all and it was loud enough to make a conversation all bit impossible without yelling across the table. We regularly support local establishments and had high hopes for Verde as they've reopened after rebuilding from the fire. Unfortunately after tonight's experience I don't think we'll be back. read more

Sometimes it can be a bad sign when you are the only patrons at a restaurant, but this was not the case with Verde Bistro! We were visiting some friends for the weekend and they suggested we come here for some drinks and tapas. We were the only group for most of the time since we came right at opening time on a Saturday. The nice thing about being the only patrons for most of our visit: we had excellent service! Juan was attentive and gave helpful tips when we wondered about ordering more than just the pear goat cheese pizza for four people. If you're wondering, his suggestion to order more was accurate. We also ordered the empanadas, which had 3 large empanadas. The pizza was very good. I enjoyed the pear with mozarella and chicken sausage, and although most of the table thought there was too much arugula on the pizza, I really enjoyed the brightness it added. It was also the first time any of us had pecans or any nuts on a pizza before. Creative and it worked! It was like a pear salad on pizza bread. The empanadas were fresh and had a great meat to crust ratio. For drinks, we had coconut lemonade (it is nonalcoholic) which was like a piña colada and the chocolate Manhattan. I couldn't taste the chocolate until the last 1/4 of the drink, but it was a nice flavor for the little bit I could notice it! We weren't there for happy hour, but that sounds like a snazzy deal. Tuesday through Thursday from 4 to 6. The locals I was with, also recommended the brunch. Verde has a great atmosphere. The music was a combination of chill, jazz, and latin. The playlist was on point! It even had us dancing in our seats. The sunroom area where we were seated would be a perfect small party room. It has a bar, large, open windows, and several tables. You also have a view of their outdoor patio. If I lived here, I know I would come here a lot during the summer to sit on the patio with friends with those cute patio lights. Overall, Verde Bistro is a great place for drinks and tapas. In order to get full, you might have to order quite a few plates, but we enjoyed it for a snack before a late dinner at home. read more

We were recently trying to get home via a back road, and found that flooding stopped us on three different routes. As we were about to attempt a route to 281, we came across this little spot in Bulverde. Now, when you've already tried three ways to get home, a nice dinner sounds so comforting. And, it was! Right from the start, service was attentive, the decor was serene, and the food came out quickly. Even more importantly, the food was delicious. We could tell that some of the people were regulars, and I like that kind of atmosphere - honey and welcoming. But don't be deceived - this is well prepared food that you will enjoy both visually and in taste. We had a wonderful time; rested, well fed and happy, we headed home with improved attitudes. Thank you, Bistro Verde! read more

We've been here twice now. The tapas are delicious! All of them! We absolutely loved the goat cheese stuffed figs wrapped in bacon. They are addicting! We also enjoyed the lamb meatballs, the baked cheese, the empanadas and sliders. We prefer to sit in the bar area. Both times we've been there, there was a lovely vocalist that sang some great tunes. Lou, the bartender is charming and does an amazing job at mixing drinks! He remembered us from the first visit and made a point of coming to our table to greet us. The drinks! I absolutely love their sangria! It's spiced, kind of like a mulled wine. I highly recommend it. My hubby loves the smoked bourbon. It's an experience and he loves the flavor. I'm sure we will become regulars. As long as we can find a sitter 2/10/19 We tried brunch for the first time. I loved it. I had the breakfast quesadillas. Everyone had a serving of fruit. The kids plate is very generous- pancakes, egg, bacon and fruit. My hubby had the chilaquiles - he wasn't that crazy about them. He preferred the green sauce over the red. The coffee was delicious! And the mimosa was good too! read more

First visit Friday night and couldn't have been more impressed! Not much to look at from the outside (and an odd smell upon entering) so was a little nervous, but once seated my mind changed immediately! The service was excellent, the drinks sublime, and the menu superb. You could do a whole meal with the tapas alone! Pretty pricey but I would say worth it! read more

Yummy place!! You do have to get a reservation ahead of time. I was very fortunate to get a walk-in, but I think it was only because I got there around 5 and only needed a table for 2. I got the sour Paloma and it was good, but I think next time I would try something else. I would have preferred it a little more sour. Also had a strawberry lemonade with vodka which I think was better and was not too sweet. Also had the panela spicy cheese which was sooo yummy. Def could serve 3-4 as an app but I had it as my dinner hehe . They have a great outside patio with fans and a nice inside, but it gets sort of loud. I would recommend sitting outside if the weather is nice (: read more

Relaxing and Exquisite are two words that come to mind at Verde Bistro. Honestly, we simply could not have had a better experience. If you are like me and enjoy supporting small business and good hearted people, stop at verde bistro. If you like tapas, drinks, and places where the owners take pride in their food and customer service, stop at verde bistro. My husband and I have friends that told us about verde bistro and really wanted to double date there sometime. We are so happy we finally found the chance to go. It wasn't just dinner with friends because this place made us feel completely at home. I'm not surprised with all the 5 star reviews, much deserved! First, the food was delicious! I haven't been to a tapas restaurant before and I'm excited that this gem is local to us! The menu had so many offerings and it was hard to choose! Second, the drinks were perfect and unique! I am not a big drinker while my husband can appreciate a good drink. They have a long drink menu that has something for everyone from freshly made cocktails to very rare, age old whiskeys. Lastly, the customer service is top notch. Our waitress was very friendly and attentive. Honestly, I am grateful for the experience and service received. It is not everyday you sit down to eat somewhere and the owners visit with you and the owners husband also came to visit us later on. Simply put, good people, good hearts, and I would support this establishment for as long as I am able. Mari and Oscar are an asset to our local community in different ways. Verde Bistro is worth the drive from the city too! Go in, ask for Mari, you'll fall in love with her too! read more
