Sometimes it can be a bad sign when you are the only patrons at a restaurant, but this was not the case with Verde Bistro! We were visiting some friends for the weekend and they suggested we come here for some drinks and tapas. We were the only group for most of the time since we came right at opening time on a Saturday. The nice thing about being the only patrons for most of our visit: we had excellent service! Juan was attentive and gave helpful tips when we wondered about ordering more than just the pear goat cheese pizza for four people. If you're wondering, his suggestion to order more was accurate. We also ordered the empanadas, which had 3 large empanadas. The pizza was very good. I enjoyed the pear with mozarella and chicken sausage, and although most of the table thought there was too much arugula on the pizza, I really enjoyed the brightness it added. It was also the first time any of us had pecans or any nuts on a pizza before. Creative and it worked! It was like a pear salad on pizza bread. The empanadas were fresh and had a great meat to crust ratio. For drinks, we had coconut lemonade (it is nonalcoholic) which was like a piña colada and the chocolate Manhattan. I couldn't taste the chocolate until the last 1/4 of the drink, but it was a nice flavor for the little bit I could notice it! We weren't there for happy hour, but that sounds like a snazzy deal. Tuesday through Thursday from 4 to 6. The locals I was with, also recommended the brunch. Verde has a great atmosphere. The music was a combination of chill, jazz, and latin. The playlist was on point! It even had us dancing in our seats. The sunroom area where we were seated would be a perfect small party room. It has a bar, large, open windows, and several tables. You also have a view of their outdoor patio. If I lived here, I know I would come here a lot during the summer to sit on the patio with friends with those cute patio lights. Overall, Verde Bistro is a great place for drinks and tapas. In order to get full, you might have to order quite a few plates, but we enjoyed it for a snack before a late dinner at home. read more

First visit Friday night and couldn't have been more impressed! Not much to look at from the outside (and an odd smell upon entering) so was a little nervous, but once seated my mind changed immediately! Yummy place!! You do have to get a reservation ahead of time. I was very fortunate to get a walk-in, but I think it was only because I got there around 5 and only needed a table for 2. I got the sour Paloma and it was good, but I think next time I would try something else. I would have preferred it a little more sour. Also had a strawberry lemonade with vodka which I think was better and was not too sweet. Also had the panela spicy cheese which was sooo yummy. We were recently trying to get home via a back road, and found that flooding stopped us on three different routes. As we were about to attempt a route to 281, we came across this little spot in Bulverde. Now, when you've already tried three ways to get home, a nice dinner sounds so comforting. And, it was! Right from the start, service was attentive, the decor was serene, and the food came out quickly. Even more importantly, the food was delicious. We could tell that some of the people were regulars, and I like that kind of atmosphere - honey and welcoming. But don't be deceived - this is well prepared food that you will enjoy both visually and in taste. We had a wonderful time; rested, well fed and happy, we headed home with improved attitudes. We've been here twice now. The tapas are delicious! All of them! We absolutely loved the goat cheese stuffed figs wrapped in bacon. They are addicting! We also enjoyed the lamb meatballs, the baked cheese, the empanadas and sliders. We prefer to sit in the bar area. Both times we've been there, there was a lovely vocalist that sang some great tunes. Lou, the bartender is charming and does an amazing job at mixing drinks! He remembered us from the first visit and made a point of coming to our table to greet us. The drinks! I've been to Verde a few times now and after initial review I'm not sure if they are consistent enough with their meal prep. The Valentine day dinner really turned me off and took sometime to consider if I should leave a review. But I've been in the hospitality/food service business for over 30 years and understand feedback is critical to getting better. The price of the Valentine menu was outrageous given the poor execution of the meal and menu itself. If you are going to elevate then elevate...proper place setting, proper dishes and proper chefs touch. Spaghetti noodles for the scampi was dry and not sautéed to allow the noodles to absorb the oil (could have used a linguine or angel hair) ; the salmon was not only over cooked but flavorless. The asparagus (baby I.e very thin was served with the entire stalk); I could go on and on... the waiter was nice and the drinks and dessert was good. We really loved this restaurant. I was searching for a new restaurant outside of New Braunfels/Canyon Lake and found this little gem in Bulverde. We enjoyed the empanadas (3 to an order so if there are 4 of you, ask to add a 4th), the panela cheese (ORDER THIS!), the bacon wrapped dates, and the Brie, then ordered the pear and goat cheese pizza. It was all really good as were the drinks we ordered. My sister ordered the coconut milk lemonade and then ordered a shot of coconut rum to put in it. That, right there, should be on the drink menu. Let me start by saying the wife and I love this place. So quaint yet trendy. We go there on special occasions or...when I'm hungry. We were celebrating a special day for us, just the wife and I. Reservations made at 6 for two. Arrived, greeted, and sat in the back bar room at a two top. I don't know why we look at the menu, we know what we came here for. The Perfect Pear Pizza. This time, my wife was needing a little more protein so we ordered the filet. Never before had we ordered an entrée. Most of the time, it is the Pear Pizza and the Bacon Wrapped Dates. Yum. We asked for the pizza first. It came out in about 15 minutes. We eat it a lot, so I knew something changed. It was the crust. It was a "More Perfect Pear Pizza". Fantastic!!! We crushed it like the Red Pepper. As soon as we finished the last tasty wedge, the steak arrived. We ordered medium, medium-well it was, but we really didn't care. Splitting the steak in half, it had some...well I don't know the technical term for it, but I call it "It ain't going in my mouth stuff". We dug around it and it was a little bland. The charred brussels were tasty. I think it was about $31. Half of the steak was remaining on the plate when we pushed it away. It was a little disappointing. But...we still love this place and will continue finding any excuse to go. The drinks are another favorite of ours. A Rubicon and an Old Fashioned are usually our go-tos.
