When we went to order the French toast, the waitress said they didn't have it. We tried to order the parfait instead, not available. One other item we attempted to get was not available, so we asked what was. We were able to get a bowl of fruit, the shakshuka, and a standard breakfast plate. The fruit was average fruit. The shakshuka was ok; I think a larger pan would work better to spread out the egg. The plate scrambled eggs were a bit rubbery and the bacon was lack luster. Halfway through the meal, our waitress disappeared without any word to us. I waited 10 minutes after we finished to pay at the counter. They had a strange set up for a hotel restaurant. There is no host in the dining area. You order at a small counter in between the bar and grill then pay for meal and you will receive a number for your table. The drip coffee is complimentary. I had breakfast and dinner a few times while staying at the Canopy hotel and the female servers lacked service skills; neither cared to be there. Not sure what type of clientele they bring in- I'm guessing the stellar reviews are from folks who have had one too many at the bar. Also, there is no "dinner" menu- they serve tapas style. Think 3 small skewers (beef or chicken), pretzels, artichoke dip etc. ranging from $9-13. Ordering a few items could create an unfulfilling "meal" if that's your thing. Eat dinner elsewhere in the Pearl District. If you get a dining credit, an omelet or select market items will suffice. read more

We love staying at the Canopy Hotel, and one of the biggest reasons is the amazing service from Chuck Ward! He's hands down the best bartender and server--friendly, fast, creative, and always making sure we have a great experience. The fact that the hotel serves dinner every night is a huge plus, and the food is consistently excellent. We came here for drinks and appetizers before going out to dinner. The restaurant was very pretty, clean and had a lot of natural lighting! I loved the art, hanging lights, bold patterns, bright colors and exposed brick. You can tell they focused on attention to detail when decorating the space. It was very warm and inviting which makes you feel right at home. They also have a fun set of wings you can take a photo in front of that is located by the elevators. We ordered the Shrimp Cocktail, Spicy Chicken Wings, and Charcuterie Board (I don't believe this item is available on the menu anymore). All three starters came out quickly and tasted good. Service after receiving our food was a bit slow. We had to wave down our waiter 3 times to ask for more drinks, request the extra cheese we had ordered for the charcuterie board, and then again for the bill. I had the pleasure of getting invited by a friend to the grand opening party of Vaux, the gorgeous restaurant-bar in Canopy by Hilton Hotel. We got to take in the lovely space, opting to sit outside, while being handed complimentary glasses of bubbles. We also had a choice of 4 wines (Sharecropper pinot noir, Montinore pinot noir, Stoller chardonnay & William Marie syrah rose) and 4 beers (Ordinance bloops, Migration patio pale, Buoy Pilz, Breakside wanderlust or Rev nat's sour cherry), if we felt like walking to the bar. Their signature drinks were the Meadowlark (gin), El chupacabra (tequila), Bull on the run (bourbon) and Lemonade stand (vodka). For nibbles, we were served Chèvre (goat cheese) on baguette toast, roasted corn, as well as an array of meats, cheeses and veggies from the contiually refreshed massive charcuterie board. For dessert, there were trays of fresh baked cookies as well as smores marshmellow treat bars. The decor had a hint of bird theme, like the massive south wall covered in a Vaux Bird mural (popular since Vaux (swift) birds are famous for roosting in NW Portland's Chapman school chimney every September). There were 2 private rooms encased in glass. The first had guests plugged in and using the wifi. I am going to guess it was their business center. The other is where we could get a tasting of Freeland spirits gin and bourbons. I'm going to assume that is a room you can reserve for intimate dinners or special occasions. I plan to be following up on whether they have a happy hour, because the ambiance will get me back, one way or the other. read more

The standout of Vaux is the space. The beautiful loft and bar has seating areas of all sorts, from charming window cozies to a community table. The downstairs brick dining room has gorgeous traditional tables, art on the walls, and all throughout the space is glorious industrial-chic furniture. The menu is less exciting, with some good but slightly overpriced and not particularly memorable offerings like a charcuterie and some sandwiches. Vaux is a secret haven for remote workers and those wanting some quiet in the heart of the city. Kind staff, many drinks ranging from espresso to sodas to alcohol, and a wide open interior make vaux a great place to pull out a laptop and hack away on whatever passion project you have for an afternoon. read more

Total surprise! New restaurant recently opened in the Canopy Hilton in the Pearl District. Needed a place for a quick dinner on Valentine's Day before the theatre and decided to try this out due to convenience. Great industrial decor and we were seated at the family table which was a big slab of marble with 10 leather back high chairs and it worked great. My daughter didn't love her salmon, great crust but a bit over cooked. My pumpkin gnocchi was delicious and everyone loved it. Nice sweet and savory dish. My husband's Caesar was phenomenal, but his beef chili was the fave of all of us. They have a late happy hour with a different menu and so keep that in mind. Oh no. So, so bad. Would not recommend at all. We only ordered a side of the roasted broccolini and an order of the carbonara. The broccolini was ice cold. My guess is it was leftover from the day before, taken out of the refrigerator and given to us. The carbonara was not like any carbonara we have had before. No flavor, thick noodles, mushy pork. It's not a restaurant, it's an abomination that is soon to close. A breakfast place that has no potatoes. None. 1 waitress, 1 customer and two "cooks". My English muffin was limp, barely warm. The cheese was still in its unmelted for. I'm the omelette and the line cooks decided it was the the right thing to do to come look for themselves and tell me "it looks OK to me". Sadly, this is nothing new here, all the managers could do,was apologize and offer a free night. Not for mad food but because the staff decided to argue with me over what cooked food looks like, as if there is more than one way. I love the Canopy hotel and have stayed here since they opened, even during the pandemic once, the restaurant was never great. Today it was awful and set the tone for my day poorly. I don't come to a hotel for a free night or breakfast, I come to be welcome and warm, like Neko exuded when I checked in and even after the boondoggle breakfast. First, breakfast is free for Hilton diamond members. If I only has espresso, I'd give 5 stars. The breakfast egg dishes were cold, literally called -- all 4 of them. No one wants cold egg dishes that are meant to be served hot, even for free. Dinner, it is a ghost town, yet with 3-4 staff water can't be refilled, a place setting was absent and I had to talk directly to the chef three times before I just got up and walked out. Staff are nice when you catch them, but service can not be an afterthought for dinner, and breakfast (when service was great) can't be cold. If a place is open, service must be available. read more

As a guest at the hotel, there by myself on Christmas Eve, I thought I would try the restaurant for dinner. Certainly glad I did. I sat at the bar, which was busy, only one seat available. The bartender is a friendly gent. I had a can of local hazy IPA. Then ordered the Short Ribs and Smashed Potatoes. The ribs did not need a knife, very tender and flavorful. I live a 10 blocks from here in the NW, which is likely how I found myself at this hotel restaurant... and oh, what a mistake it was. Don't be lured by the menu noting their "chef" and "executive chef," there is no food I ordered that my 15 year old couldn't have made. The tomato soup has an origin story from Campbell's that tried to be doctored up with a dollop of Cisco cremé fraiché (or was that Daisy sour cream?). The grilled cheese sounded promising with croissant bread, but I can't imagine how they possibly made butter, carbs, and cheese tasteless. Really, they didn't hold back I on the fat, why stop at taste? Thanks for the kettle potato chips with it though, really the only thing that was finished. Unfortunately it didn't stop there... you too reader now will privy to the Caesar salad (side of tuna salad) "experience." Think wilted bag-o'-lettuce (spring mix) drenched in gas station dressing (Heinz packet style) with croutons made from day-old sesame seed bagels and topped with more tasteless cheese. The tuna salad should have been in the form of a scoop, because it is obviously a throw back from grammar school, where the addition of carrots helped make it seem "healthy." Not edible, unless you are accustomed to grocery store (grocery outlet) salads. The Bloody Mary was equally tasteless. The only redeeming quality: Double Mountain cider on tap and Kyla hard kombucha! My husband and I went here on our honeymoon and were blown away. We were searching for a breakfast spot and stumbled across Vaux. First off, this was the first restaurant we have eaten at since Covid hit and we felt so safe. The staff were respectful and were always masked and the outdoor seating area gave plenty of room for those passing by to not be too close to us while eating. The food was incredible. We ordered the potato hash and the breakfast nachos and were obsessed. The coffee and orange juice were delicious as well. The atmosphere alone arguably makes this one of the best restaurants in the Pearl, but don't get me wrong, the food is EXCELLENT. The interior design is probably so nice because the restaurant is actually part of a hotel (the Hilton) which I later found out, but that doesn't stop any regular Joe from stopping by for a drink/appetizer to feel fancy for a minute. I was very impressed with my dinner at Vaux. For a new restaurant, they really run a tight ship. Our server Shannon was very knowledgeable and full of great recommendations. She was also very patient with my picky family members visiting from out of state! From the quality of service, to the craft cocktails, and all the food-- I was very impressed. Great use of local products from the wine to the fresh ingredients. Also had way more of a chic Pearl District restaurant feel than a hotel which was pleasant. Will be back! read more

I had been very excited for dinner at Vaux tonight - and boy did we make a mistake. I rarely complain about restaurants because I know what a tough industry it is to please people. But this was beyond bad. We made a 6:30 reservation for dinner for our family of 3. We ordered cocktails/drinks, entrees, sides, and appetizers. While at the restaurant, we saw three other parties seated near us come in later, get served dinner, and leave before we ever got our food. In addition, the wait staff never came by to do so much as fill our water glasses. We finally got our dinner a few minutes after 8:00 after sitting and waiting with our empty glasses. The restaurant made no attempt to make it right by offering us a drink while we waited, nor did they offer to comp any part of our meal when we made them aware of our situation. They did offer apologies, with our waitress stating that she felt bad for us, but she really had no explanation as to why we waited so long. The manager also apologized to my husband, but that was it. Two thumbs down - we'll never go back. read more
